Sausage, bean & bacon bake image

Feed a crowd with this all-in-one brunch dish with homemade baked beans, chipolatas, bacon and fried eggs

12 chipolatas
200g pack smoked dry-cured bacon lardons
4 tbsp sunflower oil
680g bottle passata
1 tbsp sweet smoked paprika
3 tbsp tomato purée
1 tbsp brown sugar
100g brown sauce
3 x 400g cans cannellini beans , drained and rinsed
6 eggs
piles of hot buttered toast , to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the chipolatas, bacon lardons and 1 tbsp of the oil together in a large roasting tin. Roast for 20-30 mins until everything is turning brown and crisp - you may want to tip off any liquid and stir it halfway. Use a fish slice to scrape up any stuck bits.
  • Whisk together the passata, paprika, tomato purée, sugar, brown sauce, 250ml water, a little salt and lots of pepper. Stir into the tin with the beans. Can be made 1 day ahead - cool first, tip into a plastic container, then chill.
  • Put the tin back in the oven and bake for another 20 mins until thickened and bubbling (add another 10 mins if cooking from chilled).
  • Turn off the oven but leave the tin in to keep warm while you fry the eggs. Heat the remaining oil in a large frying pan, crack in the eggs and fry them to your liking. Serve the fried eggs with the sausage bake and plenty of hot buttered toast.

1 Teaspoon Worcestershire sauce
4 Tablespoon brown sugar

  • Add all ingredients into slow cooker and cook on low for 6-8 hours. Season to taste. You can add vegetables if you wish.

2 slices bacon, (chopped into 1/2-inch pieces)
1 sweet onion, (chopped)
2 cloves garlic, (finely chopped)
1/2 pound smoked sausage, (sliced, I use kielbasa)
3 (16-ounces) cans pork and beans
1/2 cup ketchup
1/3 cup packed light brown sugar
1/4 cup molasses
2 tablespoons apple cider vinegar
2 tablespoons yellow mustard
1/4 to 1/2 teaspoon hot sauce, (I use TABASCO)

Steps:

  • Preheat oven to 350 degrees.
  • In a Dutch oven, cook bacon until crispy. Remove with a slotted spoon and place on a paper towel-lined plate.
  • Add onion to bacon drippings and cook until soft.
  • Add garlic and smoked sausage and cook until sausage is browned.
  • Stir in remaining ingredients. Bring to a simmer. Place Dutch oven, uncovered, in oven and cook for 45 to 55 minutes, until thick.

This easy sausage, pork belly and bacon casserole brings three cuts of pork meat together to make one mouth-watering casserole

2tbsp sunflower oil
6 herby/garlic chorizo-style sausages
6 chunky pieces pork belly, approximately 1kg (2¼lb)
200g (7oz) smoked streaky bacon, chopped
1 large onion, peeled and cut into thin wedges
4 sticks celery, sliced
1 level tsp paprika
400g can chopped tomatoes
410g can cannellini beans, drained and rinsed
200ml (7fl oz) hot ham or pork stock
Salt and freshly ground black pepper

Steps:

  • Set the oven to gas mark 4 or 180°C.
  • Heat the oil in a frying pan and add the sausages. Cook them over a medium heat for about 5-7 mins, turning them regularly until they have browned. Transfer the sausages to a casserole dish.
  • In a frying pan, cook the pork belly for about 5-7 mins, turning it occasionally until it's browned on all surfaces and then add it to the casserole dish.
  • Add the bacon, onion and celery to the frying pan and cook for about 5 mins, turning mixture occasionally until the bacon starts to brown and the onion and celery have softened. Sprinkle the paprika over and cook for a further minute, then transfer mixture to the casserole dish.
  • Add the tomatoes, beans and stock to dish and season. Stir the contents of casserole gently to mix them, then cover the dish.
  • Place the casserole dish in the centre of the oven and cook for 1½-2 hrs, or until the pork is tender. Remove from the oven and serve immediately, with mashed potato to soak up all the juices, if you like.

6 sausages (we used pork, but you can use beef or lamb), sliced
3 streaky bacon rashers, sliced
1 onion, roughly chopped
4 garlic cloves, peeled, roughly sliced
1 capsicum, seeded, roughly chopped
1 zucchini, roughly chopped
1 carrot, peeled, roughly chopped
700ml tomato passata
3 cans of beans or peas (we used black-eyed peas, kidney beans and white beans, but you can use whatever you have in the pantry)
1/2 bunch basil, roughly chopped
1/2 bunch flat-leaf parsley, roughly chopped
4 rosemary sprigs, roughly chopped
whole piece of parmesan or mozzarella, to serve

Steps:

  • Preheat oven to 200°C.
  • On stove, heat a large pot with olive oil. Cook the sausages and bacon until golden brown. Add the onion, garlic, capsicum, zucchini and carrot and cook for 5 minutes. Add the passata and bring to the boil. Add beans or peas, basil, parsley and rosemary.
  • Bring to the boil. Pour into a baking dish. Grate a generous amount of parmesan or mozzarella over the sausage mixture in the dish.
  • Bake for 40 minutes until the cheese is crisp and golden. Serve with salad.

  • Add a splash of olive oil to a large pot or dutch oven over medium-high heat. Add 12 pork sausages, fry until they begin to brown, then add in 8 mini chorizo. Keep frying until fully browned, then remove. They don't need to be fully cooked through at this point, just nicely browned.
  • Add 1 large onion, 2 red peppers and 2 cloves of garlic to the leftover fat and fry until they soften and caramelize. Reduce heat down to medium, stir in 2 heaped tbsp tomato puree, then deglaze with 1/2cup/125ml red wine. Allow to reduce for a few mins, then stir in 1cup/250ml beef stock (+cornstarch/cornflour).

Give a stir then add your sausages back in. Give it one big final stir, reduce heat to low and pop on the lid. Allow the casserole to simmer with the lid on for 1 hour 30mins. This is important for the flavours to develop.
  • After 90mins, take the lid off and stir in 2 cans of beans. Allow to simmer with the lid off for another 10mins or until it's nicely thickened, stirring occasionally. Pluck out the bay leaves/rosemary stalk and serve with mash or chunky buttered bread!
