2 sweet potatoes, peeled and diced, or to taste
1 (12 ounce) package precooked apple chicken sausage, sliced into rounds
2 tart green apples, cored and diced, or to taste
⅓ cup honey mustard
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Spray a large casserole dish with cooking spray.
  • Combine sweet potatoes, sausage, and apples in the prepared dish. Season with salt and pepper and stir in honey mustard.
  • Bake in the preheated oven until sweet potatoes are tender and sausage is browned, 45 to 55 minutes.

6 Granny Smith or Jonathan apples, peeled, cored and thinly sliced
2 pounds pre-cooked bratwurst or kielbasa
2 teaspoons butter, or to taste
1 small onion, diced
2 medium potatoes, peeled, sliced thin
1 green bell pepper, seeded, diced
2 zucchini, sliced thin
1 1/2 cups shredded mozzarella or Jack cheese (optional)

Steps:

  • Peel, core and slice apples. Layer apples and sausage on the bottom of a 9 by 13 by 2-inch casserole dish and dot with butter. Then layer the onions, potatoes, bell peppers and zucchini. Bake in a preheated 300 degree oven for 1 hour. Once casserole is cooked, cover the top with cheese and bake until melted.

6 slices wheat bread
1 lb mild sausage
1 onion, chopped
1 Granny Smith apples, peeled and chopped
8 eggs
1/2 cup milk
salt, to taste
pepper, to taste
fresh fruit, for serving on the side

Steps:

  • Spray a 9x13-inch baking dish with non-stick cooking spray. Tear 6 slices of bread and place into the baking dish.
  • Add 1 pound of cooked sausage.
  • Add 1 chopped onion and 1 chopped Granny Smith Apple.
  • Toss together in the baking dish.
  • In a bowl, whisk together eggs, milk and salt and pepper. Pour over the bread, sausage and apple mixture in the baking dish.

1 package (14 ounces) smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1 small onion, chopped
1 cup chicken broth
1 cup apple cider or juice
1/4 teaspoon salt
1 package (16 ounces) frozen cut kale or frozen chopped spinach
1 cup quinoa, rinsed
1 medium apple, chopped
1/4 cup chopped pecans
1/4 cup dried cranberries
1 teaspoon dried sage leaves

Steps:

  • Select sauté setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, cook and stir sausage, adding onion after 5 minutes, until sausage is browned and onion crisp-tender, about 5 more minutes. Remove and keep warm. This is a good fall dinner recipe that is sort of a pie--I originally finished my concoction before everyone got home! If you want, you can skip a few steps and this can be served as two dishes. Also, I do make this with chicken apple sausage, but I think it would be just as good with smoked turkey sausage. I hope that you like it!

butter-flavored cooking spray (optional)
1 tablespoon olive oil
2 garlic cloves, minced fine
1 medium onion, coarsely diced
2 medium firm cooking apples, coarsely diced (like Granny Smith or Braeburn)
1 lb chicken-apple sausages, sliced into 1 inch pieces
1/2 teaspoon celery salt (to taste)
1/4 teaspoon ground thyme (to taste)
1/4 teaspoon white pepper (to taste)
1/2 teaspoon salt (to taste)
2 tablespoons white wine or 2 tablespoons cider
3 medium russet potatoes, coarsely diced
2 teaspoons butter
1/4 cup milk
1/4 cup sour cream
1 teaspoon salt (to taste)
2 teaspoons parsley flakes

Steps:

  • Preheat the oven to 350 degrees F.
  • Boil the potatoes in salted water until fork tender.
  • Heat the oil in a skillet and saute the garlic, onion, and apple until slightly carmelized and the apple is starting to soften.
  • Keep the potatoes warm if they are cooked.
  • Put the onion mixture in a medium bowl and keep warm. Add additional oil to the pan if needed and slightly brown the sausage.
  • Mix the sausage with the onion mixture and the celery salt, thyme, pepper, salt, and wine/cider.
  • Put the sausage mixture into a pie plate.
  • Mash the potatoes with the butter, milk, sour cream, salt, and parsley.
  • Top the pie with the mashed potatoes and seal the edges with the potatoes. Spray lightly with the cooking spray, if you want.
  • Bake for 45 minutes or until the potatoes are starting to brown.
  • Let cool for 5-10 minutes before serving.
