1 pound sausage (I used pork)
1 small onion (diced)
3 stalks celery (diced)
2 garlic cloves (minced)
1 can chicken broth (14.5 ounce)
1 can cream of celery soup*
1 cup uncooked rice
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.
  • Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. Top with slivered almonds. Cover tightly with aluminum foil and bake for 60 minutes. Let rest for 10 minutes before serving.

1 clove garlic, finely chopped
1/2 cup chopped green bell pepper
1/2 lb fully cooked kielbasa sausage, cut lengthwise into fourths, sliced
3 large tomatoes, chopped (2 1/2 cups)
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon salt
1/2 teaspoon Cajun seasoning
1 1/2 cups uncooked instant rice
Red pepper sauce, if desired

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.
  • Stir in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling; stir in rice. Heat to boiling; reduce heat to low. Cook 8 to 10 minutes or until rice is tender. Fluff with fork before serving. Serve with pepper sauce.

1 (10 1/2 ounce) can cream of chicken soup

Steps:

  • Preheat oven at 350°.
  • Brown sausage in frying pan and pour off grease.
  • Add chopped onion, garlic, celery, and green pepper to sausage and simmer until tender.
  • In bowl combine rice and soups and then add cooked ingredients.
  • Pour into greased Pyrex pan.

1 cup uncooked long-grain rice
1 slice onion, diced

12 ounces cooked Italian chicken sausage links (not breakfast sausage, cut into 1/4-inch slices*)
1 red bell pepper (cored and 1/2-inch diced (about 1 cup))
1 orange or yellow bell pepper (cored and 1/2-inch diced (about 1 cup))
1 small or 1/2 large yellow onion (1/4-inch diced (about 1 cup))
1 teaspoon dried basil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup instant brown rice*
2 cloves garlic (minced)
Pinch red pepper flakes (optional)
1 cup low-sodium chicken broth
1 15-ounce can fire-roasted tomatoes in their juices

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet with a tight-fitting lid over medium-high heat. Add the sausage slices and cook for a few minutes on each side, until brown, about 5 to 8 minutes total. Remove to a plate, blot with paper towels to remove any excess oil, and set aside. (Tip: To finish this meal in 30 minutes, prep the peppers and onions while the sausage browns.)
  • With a paper towel, carefully wipe the skillet until it is mostly clean. Heat the remaining tablespoon olive oil over medium high. While visiting my Grandsons on vacation, the family ask for me to make sausage and rice. While they didn't have the ingredients for my original recipe, I decided to just play with what they had on hand and this is what I came up with. It was delicious and a huge hit with everyone.

1 1/2 lb hot breakfast sausage
1 small onion, chopped
1 stalk(s) celery, chopped
1 half, red bell pepper, chopped
1 1/4 c uncooked jasmine rice or reg. long grain rice
10 1/2 oz can cream of mushroom soup
2 c chicken stock
3/4 c shredded colby jack cheese

Steps:

  • 1. Brown the sausage in a large skillet over med. high heat. Break up the sausage as it cooks with a wooden spoon. Drain off ay excess grease. Add in the onion, celery and bell pepper. Cook for 5 minutes. Add in the uncooked rice and stir to combine. Whisk together the soup and broth and pour into the pan. Stir to combine well. Stir in the cheese and pour into a lightly greased 2.5 quart baking dish. Cover tightly with tinfoil and bake in a 350 degree oven for 1 hour.

  • Preheat oven to 350ºF.
  • Place the sausage in a large skillet and brown over medium high heat, crumbling up the sausage as it cooks.
  • Once the sausage is cooked, remove the sausage from the skillet and place it on a plate or in a bowl lined with paper towels to absorb the excess grease.
  • Reduce the heat to medium.
  • In the remaining sausage drippings, sauté the onion, bell pepper, and celery until it begins to soften.

  • Cook sausage: Heat 2 tbsp oil in a large heavy based pot over medium high heat. Add sausages and cook until golden. Remove with a slotted spoon.
  • Cook onion and garlic: Add remaining 1 tbsp oil. Add garlic and onion, cook for 2 minutes. Add capsicum and cook for 2 minutes until onion is translucent.
  • Add rice and liquid: Add rice, chicken stock, paprika, salt, pepper and the sausage. Stir, bring to boil, then reduce heat to low so it's simmering very gently.
  • Cover and cook: Cover with lid, cook 20 minutes.
  • Add peas and rest: Remove pot from stove. Working quickly, remove lid, add peas, then quickly put the lid back on. Rest 10 minutes - the residual heat with cook the peas.
  • Fluff and serve: Add parsley. Use a fork to fluff the rice. Serve immediately!

Before you begin, refer to your rice package for the amount of liquid (we'll use chicken broth) and cooking time. If preferred, cook the rice separately and skip the broth ingredient. You'll need 2 cups of cooked rice to combine with the other casserole ingredients. I use white long grain rice and the cooking times below work perfectly.
  • Place the rice in a strainer and run it under cool water for 1 minute. This rids it of excess starch which will help to prevent it from sticking to the bottom of the pot when cooked.
  • Add 2 tablespoons olive oil to a large pot over medium heat. Slice the sausage and sear it on each side for color and texture. Remove from the pan and set aside.
