ITALIAN SAUSAGE, PEPPERS, AND ONIONS
My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

- Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
- Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
- Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

- In a large skillet, brown sausages in oil; drain. Stir in the water, tomato paste, tomato sauce, garlic, sugar and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until meat is no longer pink., Serve sausages on buns with sauce; sprinkle with cheese.

ITALIAN SAUSAGE AND PEPPER GRINDER
Steps:
- Cut sausage into 2 inch slices. Add vegetable oil to frying pan over medium-high heat. Add sausage to frying pan once oil is sizzling. Cover and cook sausage for 20 minutes, rolling sausage around frequently.
- After 20 min, cut sausage slices in halves, add peppers and onions, cover and cook for approx. 30 minutes stirring occasionally until peppers and onions are no longer hard and sausage is cooked through. Add Ragu Marinara, stir around. Add garlic, stir. Let simmer for 2 minutes.
- Put portions in hoagie rolls, serve and enjoy!

- Bring a large pot of water to a boil; add sausages and cook until no longer pink inside, 10 to 12 minutes. Drain and set aside.
- Place marinara sauce in a small saucepan over medium-low heat; cook until warmed through, about 5 minutes. Reduce heat to low and keep warm until sandwiches are ready.
- Heat olive oil in a large skillet over medium-high heat; cook and stir onion, red bell pepper, jalapeno pepper, and goat horn pepper in the hot oil until onion softens and begins to turn golden, 7 to 8 minutes. Remove onion mixture to a plate and set aside.

- Cook sausages in a medium size skillet over medium-high heat until browned and cooked through, about 10 to 12 minutes.
- In a separate saute pan, heat oil over medium-high heat. Add onion and peppers stir-fry mix and salt and pepper. Cook until softened, about 4 to 5 minutes.
- In a small bowl whisk together mustard, brown sugar, vinegar, and hot sauce.

- Preheat a grill to medium heat.
- Toss the sausage, peppers, onion and broccoli rabe with about 2 tablespoons olive oil. Grill until the sausage is cooked through and the vegetables are slightly tender and a little charred, 10 to 15 minutes. Slice the sausage, peppers and onions. Cut the broccoli rabe into 1/2-inch pieces.
- In a small pot, heat 2 tablespoons oil over medium-low heat. Add the sliced garlic and saute until fragrant but not browned, 1 to 2 minutes. Add the tomato sauce and bring to a simmer. Turn the heat to low and cook for about 5 minutes to allow the garlic to infuse into the tomato sauce.
- Remove some of the bread from the inside of each grinder roll. Dress the grinder rolls with about 2 tablespoons olive oil and some salt and pepper. Grill until toasted, 1 to 2 minutes, then rub with a clove of garlic.
- In a large bowl, combine the sausage, peppers, onion, broccoli rabe, tomato sauce, pickling liquid from the cherry peppers, oregano and red pepper flakes and season with salt and pepper. Toss until coated.
- In a separate bowl, combine the cherry peppers, basil, parsley and red wine vinegar and season with salt and pepper. Add about 2 tablespoons olive oil to bind it all. Mix until well combined.
- Place enough of the sausage mixture into each bun to fill. Cover with 2 slices of provolone cheese in each grinder. Place back on the grill on the top rack with the cover down. Cook until the cheese is melted, about 5 minutes. Top with the cherry pepper mixture.

- Add oil to a large saucepan and heat over medium-high heat. Saute the onions and peppers for a couple of minutes until they are barely softening on the edges. Add in a couple of tablespoons of water and put on a lid. Cook for several minutes, checking now and then and turning, adding a touch more water if needed to prevent burning. Once they’re softening and just starting to color, sprinkle them with the garlic powder, then push them to the edges of the pan.
- Add two tablespoons water and place the sausages in the center of the pan. Lid and let them steam for a couple of minutes until the bottom of the sausages has browned. Remove the lid, scrape up any fond (dark bits on the bottom of the pan) turn the sausages over and continue to cook for several minutes with the lid off, tossing the vegetables as needed until the sausage is done all the way through. Add just a touch more water if the pan is in danger of burning. (A little trick is to rub the sausages across the bottom of the pan to pick up just a bit more color.).
- When sausages are finished, remove from pan, turn up the heat and cook until peppers and onions are nearly dry and a bit darkened in places. Taste peppers and adjust seasonings on the peppers and onions. Serve on buns, sausage first or peppers first, your preference.
