This bubbling baked ziti is perfect for feeding a crowd, and it freezes well too.

1 lb ziti noodles
1.5 lbs ground spicy or sweet Italian sausage (or removed from casings)
4 cloves garlic, minced
1 (28-oz) can crushed tomatoes
1 teaspoon salt
1½ teaspoons sugar
¼ teaspoon crushed red pepper flakes
1 cup heavy cream
⅓ cup plus 3 tablespoons grated pecorino Romano (or Parmigiano Reggiano) cheese, divided
⅓ cup chopped fresh basil, plus more for serving
8 oz whole milk mozzarella cheese, shredded (about 2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Cook the ziti according to the package directions for very al dente, about 7 minutes. (It will continue to cook in the oven so you want to undercook it just a bit.) Drain and add the pasta back to the pot. Set aside.
  • Preheat the oven to 425°F and set the oven rack in the middle position.
  • Heat a large sauté pan (preferably nonstick) over medium-high heat. Crumble the sausage into the pan and cook, breaking apart with a wooden spoon, until lightly browned and just cooked through, 5 to 6 minutes. Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tablespoon of the fat from the pan and set over low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the garlic and cook, stirring constantly with a wooden spoon, until soft but not browned, about 1 minute. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer, uncovered, for 10 minutes.
  • Add the cream, ⅓ cup of the pecorino Romano, cooked sausage, and basil to the pan; stir until evenly combined. Carefully pour the contents of the sauté pan into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 9 x 13-inch baking dish. Sprinkle with half of the shredded mozzarella and half the remaining pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and pecorino Romano. Transfer to the oven and bake, uncovered, until the cheese has melted and browned, 15 to 20 minutes. Sprinkle with more basil and serve.
  • Make-Ahead/Freezer-Friendly Instructions: The dish can be assembled, covered, and refrigerated for up to 2 days in advance, or frozen for up to 3 months. (If frozen, defrost in the refrigerator overnight.) Whether refrigerated or frozen and defrosted, bake, covered tightly with aluminum foil, in a 425°F oven for 25 minutes. Then uncover and bake for another 10 to 15 minutes, until the cheese is lightly browned and the pasta is hot throughout.

1 (16 ounce) package dry ziti pasta
1 pound mild Italian sausage
1 (15 ounce) container ricotta cheese
1 egg
1 large yellow onion, minced
2 teaspoons minced garlic
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ (26 ounce) jars spaghetti sauce, divided
1 (8 ounce) package shredded Italian cheese blend
1 teaspoon dried basil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ziti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • While pasta is cooking, heat a large skillet over medium heat. Add the sausage, and cook and stir until brown, about 10 minutes. Drain sausage and set aside.
  • Stir together the ricotta, egg, onion, garlic, and oregano in a large bowl until well combined. Stir in the drained pasta, the drained sausage, salt, pepper, and 1/2 jar of the spaghetti sauce; mix well.
  • In the prepared baking dish, cover the bottom with 1/3 jar of spaghetti sauce. Layer 1/2 of the pasta mixture, 1/3 jar of spaghetti sauce, and 1/2 of the shredded cheese. Then layer the remaining 1/2 of the pasta, 1/3 of the sauce, and 1/2 of the cheese. Sprinkle with basil. Cover the dish tightly with aluminum foil.
  • Bake in the preheated oven until heated through, about 20 minutes. Uncover; return to the oven and bake until cheese is melted, 5 to 10 more minutes.

FOR SAUCE
2 cans each of hunts suaces (four cheese, traditional,sausage, garlic and herb, basil and garlic, garlic and onion
20 sausage links (i used half hot and half mild)
4 very large green peppers
2 very large onions
1 8oz bag of shredded mozzerella cheese
salt pepper garlic powder onion powder to taste
1 1/2 c parmesan cheese
FOR PASTA
4 1lb boxes ziti
oil
TOPPING
1 12 0z bag shredded mozzerella

Steps:

  • 1. Bake sausage in oven on 350 until completely cooked thru. Then slice each link on the diagonal into bite size pieces
  • 2. In large pot on stove top add all sauces and bring to a boil. Once at a boil lower heat to a simmer.
  • 3. Add mozzerella cheese and parmesan cheese and seasonings
  • 4. Cut peppers into 1/2 inch strips and add to sauce
  • 5. Cut onions into medium sized chunks and add to sauce
  • 6. Add sausage to sauce. Continue to simmer sauce several hours until all flavors blend together well
  • 7. In a seperate large pot boil enough water for the pasta. add oil to boil water and then add pasta. stir well and cook to al dente only
  • 8. Drain pasta and ladle out some of the sauce into the bottom of a large baking pan Dont put sausage in ). Add some pasta and toss in sauce, continue this till all pasta has been added using additinal sauce when needed.
  • 9. Sprinkle parmesan cheese over entire top of pasta and then sprinkle mozzerella on top to completely cover. Cover pan with tin foil making tent in center.
  • 10. Bake in preheated 350 degree oven till heated thru and cheese is melted.
  • 11. Serve pasta topped with additional sauce, sausge and peppers and onions.
  • 12. Add a salad and some homemade garlic parmesan rolls for a perfect meal

2 cloves garlic, sliced
2 pounds ground beef
2 (28 ounce) cans crushed tomatoes
1 (28 ounce) can tomato puree

2 green bell peppers, cut into 1/2-inch strips
1 large onion, sliced
2 (16 ounce) packages rigatoni
2 (16 ounce) packages mozzarella cheese
1 (24 ounce) carton ricotta cheese

Steps:

  • Heat olive oil in a stockpot over medium-low heat; cook and stir garlic in the hot oil until lightly browned, 1 to 2 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir ground beef into garlic. Add crushed tomatoes and tomato puree to ground beef mixture; season with salt and pepper. Cover stockpot and simmer mixture, stirring occasionally, until flavors have blended, about 2 hours.
  • Heat a large skillet over medium-high heat. Cook sausage links in the hot skillet until browned and not longer pink in the center, 10 to 15 minutes; drain and discard grease. Slice sausages into 1/4-inch rounds. Stir sausage, green bell pepper, and onion into the simmering tomato sauce; cook, stirring occasionally until bell pepper and onion are softened, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until cooked through but firm to the bite, 10 to 11 minutes. Drain and return rigatoni to pot.
  • Dice about 3/4 the mozzarella into 1/8-inch cubes. Mix cubed mozzarella with ricotta cheese in a bowl. Stir cheese mixture into cooked rigatoni until mozzarella cheese begins to melt. Pour rigatoni-cheese mixture into 2 large casserole dishes; add tomato-meat sauce. Toss well.
  • Slice the remaining mozzarella cheese and arrange on top of rigatoni mixtures.
  • Bake in the preheated oven until mozzarella cheese is melted and browned, about 45 minutes.

Both kids and adults will dive into this new twist on baked ziti. If you like, assemble it up to one day ahead, refrigerate and bake just before serving. If you make it the day before you will have to adjust the baking time. I have taken this to our church potluck dinners. The recipe is always requested. Enjoy!

1 (28 ounce) can whole tomatoes
1 (15 ounce) can tomato sauce

  • Reduce heat to medium.
  • Discard all but two tablespoons sausage fat.
  • To sausage in skillet add garlic, peppers and onion
  • Cook until vegetables are tender, stirring occasionally.
  • Stir in whole tomatoes,tomato sauce, salt,oregano and basil.
  • Heat to boiling over medium heat breaking up tomatoes with side of spoon.
  • Reduce heat to low, cover and simmer 10 minutes.
