Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a skillet over medium heat. Add sausage and cook until browned, 5 to 10 minutes. Place spinach and red peppers in a large bowl and pour cooked sausage and drippings on top. Add feta cheese and mix together.
- Separate and unroll the crescent rolls. Place 1 on a work surface and add a small amount of the spinach mixture. Bring in the top 2 corners and bring the longer end up and around the filling, forming a loose ball. Repeat with remaining rolls and spinach mixture. Arrange balls in a triangular tree shape on a baking sheet, making sure to use some for the trunk of the tree. Make the tree as large as your cookie sheet allows, and use additional baking sheets to create more trees.
- Bake in the preheated oven until golden brown, about 14 minutes.

Steps:
- Gently fry the diced onion in 1 tablespoon of olive oil for 5 minutes or until soft and just starting to go brown.
- Place the cooked onion, turkey mince, salt, pepper, sage, feta and cranberry sauce in a bowl and mix thoroughly with your hands.
- Cut the pastry in half lengthways. Divide the filling in half and arrange in a long thin sausage all the way down each half of the pastry.
- Roll up so you have two long thin sausage rolls. Divide each long thin sausage roll into 8, discarding the ends, (each sausage roll will be roughly 3cm / 1inch). Place on an oiled baking tray and chill for half an hour.
- Preheat your oven to 220C / 200C fan / gas mark 7 / 425F.
- Liberally coat the top of each sausage roll with the beaten egg, then cook for 15-20 mins in your preheated oven until golden and cooked through.
- These sausage rolls taste best warm but can be eaten cold too. If you want to eat them cold, let them cool down to room temperature and then refrigerate until needed.

- In a medium-sized bowl, combine sausage, green onions, and cheese; mix well. Unroll each tube of crescent sheets and lay out on a clean, flat surface. If you couldn't find the sheets and are using crescent rolls, press seams together to form a large rectangle for each tube.
- Spread half of sausage mixture evenly over each rectangle. Starting with the shorter side, roll up, like a jelly-roll. Repeat with the other one.
- Cut each one into 8 equal slices. Arrange them on the prepared baking sheet like a Christmas tree. Place 1 in the top row, 2 in the second row, 3 in the third row, 4 in the fourth row, 5 in the 5th row, and one on the bottom row.
