My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

Steps:
- Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
- Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
- Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

- Heat approximately 1 tablespoon of olive oil in a large frying pan.
- Brown the sausage in the oil until you get a nice color on the outside and you no longer see any"pink".
- Remove the sausage and drain on a paper towel.
- Keep the heat going on the pan and add onions and peppers (do not add any additional oil).
- Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.
- During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and"fan" them out.
- Add salt and pepper over the onion/pepper mixture and turn heat down to simmer.
- Place sausage on top of onions and peppers and cover.
- Simmer for approximately 15 minutes or until sausage is cooked through.
- Serve on Italian Bread.

- Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
- Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
- In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
- Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
- Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
- Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
- Simmer about 10 minutes.

- Prep your ingredients. I like to serve this recipe with egg noodles, but you can serve it with whatever you decide. If doing egg noodles/pasta, I suggest starting to boil the water as you begin cooking the sausages.
- Add the olive oil to a skillet over medium-high heat. Sear the sausage pieces until they're browned/crispy on all sides (about 8-10 minutes), then remove them from the pan and set aside.
- Add the onion to the skillet and sauté it for 2-3 minutes (add more oil to the pan if it seems too dry), and then add in the peppers and continue cooking until they're tender-crisp. I like to get a little char on mine, so I cook them for a bit longer and ensure the pan stays HOT.
- When everything is looking to be about done, stir in the garlic and cook for about a minute or so.
- Add the sausages back and give it a good stir. Serve over drained egg noodles or whatever you're serving it with. Season with salt & pepper as needed.

- In a large saute pan, heat 2 tablespoons of the olive oil over medium-high heat. Add the sausage to the skillet and brown on all sides, 10 to 12 minutes. Transfer the sausage to a plate.
- Add the bell peppers, onions and remaining 1 tablespoon of olive oil to the saute pan used for the sausage and cook, stirring occasionally, until the vegetables are soft, about 10 minutes. Add the tomato paste and garlic. Let cook for 1 minute, and add the chicken stock. Cut the sausages on the diagonal into 2-inch pieces and add them to the saute pan. Cook until the sauce is slightly thickened, about 5 minutes. Season with salt and pepper.
- Fill the toasted rolls with the sausages, peppers and onions and serve warm.
