CRISPY BACON & SAUSAGE CARBONARA
Eggs, bacon and sausage - not a breakfast plate, but a delicious budget pasta dish with creamy sauce and parsley

Steps:
- Cook the pasta following pack instructions. Meanwhile, squeeze the meat out of the sausage casings and, with damp or lightly oiled hands, roll into small-ish balls.
- Heat a frying pan and cook the bacon or pancetta until really crispy. Remove and keep warm. Fry the sausageballs until golden and cooked through, remove and keep warm (a low oven is good for this). Cook the onion in the fat from the bacon and sausageballs (tip some out if you need to) until soft.
- In a small bowl, mix the egg yolks, cream, most of the Parmesan and most of the parsley with lots of black pepper and a pinch of salt. Drain the pasta, reserving a ladle of water. Tip the pasta back into the pan, off the heat, and add the egg mix, onions and sausageballs. Mix well, adding some pasta water until you have a sauce that coats the pasta. Tip into bowls, scatter over the remaining parsley and Parmesan, and top with the bacon.

BUBBLE UP SAUSAGE BREAKFAST CASSEROLE

Steps:
- Preheat the oven to 350 degrees
- Spray a 9x13 3 Quart dish well with cooking spray
- Cut each biscuit into 8 pieces
- Lay the biscuits out in the bottom of the glass baking dish
- Sprinkle cooked sausage over biscuits
- Sprinkle cheese over biscuits and sausage
- Combine eggs and milk, beat well (I remove all of the slimy chalazae out of the eggs - personal preference)
- Pur egg mixture over casserole
- Combine gravy packet and water well
- Pour over entire casserole
- Cover casserole entirely with foil
- Bake in preheated oven for 50 minutes
- Remove foil and broil to get the browned look for three to five minutes
- ** Be sure to stay close to the oven o make sure it doesn't get burnt
- Let the casserole sit for five minutes or so
- Serve and enjoy!

- In a large skillet, cook sausage over medium heat for 6-8 minutes or until no longer pink, breaking into crumbles. Remove with a slotted spoon; drain on paper towels. Discard drippings., Add bacon to pan; cook over medium heat until crisp. Remove to paper towels to drain. Discard drippings. Wipe out pan. In same pan, heat butter over medium-high heat. - Heat the oven (375F/190C/Gas Mark 5-6). Grease an ovenproof dish.
- Slice the cooked potatoes. Peel and chop the onion. De-rind the bacon. Prick the sausages.
- Heat the oil in a frying pan, and fry the sausages, bacon and onion gently for 5 minutes, turning frequently.

SAUSAGE AND BACON KABOBS
Steps:
- Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
- Cook bacon pieces in a microwave oven for about 1 minute, or pan fry until the edges begin to curl but the bacon is still flexible. Drain well.
- Cut each sausage into 5 pieces.
- Thread an end piece of sausage onto skewer followed by a piece of bacon, onion, bell pepper, and another piece of bacon. Repeat using center sausage pieces and finishing with end piece (center sausage pieces will be "sandwiched" between bacon). Repeat with remaining skewers and sausages.
- Place skewers on hot oiled grill and cook 4 to 5 minutes per side (16 to 20 minutes total).
- Meanwhile, squeeze the orange juice into the BBQ sauce and stir to combine. Brush kabobs with BBQ sauce with each turn. Serve hot with orange slices or wedges.
- INDOOR: Prepare kebabs as directed. Preheat broiler. Place kebabs on wire rack over foil lined baking sheet or broiler pan. Place under broiler 4 to 6 inches from heat source and cook 3 to 5 minutes per side. Brush with BBQ sauce with each turn.
BACON WRAPPED SAUSAGES
Steps:
- Gather the ingredients.
- Heat oven to 400 F. Line a 13 x 9-inch baking pan with foil or parchment and put a wire rack on top.
- Fry the bacon in a large pan over medium heat until some of the fat is rendered but the bacon is still pliable. Do not let the bacon get crispy, or you won't be able to wrap it around the sausages.
- Place the bacon on paper towels and cool it down for 5 minutes.
- Wrap each sausage with a piece of the precooked bacon and secure with a toothpick.
- Place the brown sugar in a bowl and roll each sausage and bacon bundle in it. Place the sausages on a wire rack over the foil-lined pan. Always use the wire rack. The drippings that come from the bacon and sugar burn easily; keeping the sausages away from the drippings prevents them from burning, too.
- Drizzle or brush the maple syrup over the sausages and sprinkle with the pepper.
- Bake the bacon-wrapped sausages for 25 to 35 minutes, or until the sausages are hot and the bacon is crispy.
- Remove the rack from the baking pan and cool the wrapped sausage bundles for 4 to 5 minutes before serving.
