2 tablespoons butter
2 medium onions, halved and sliced
3 large apples - peeled, cored, and cut into thin wedges
2 tablespoons apple cider or red wine vinegar
2 tablespoons brown sugar, packed
salt and pepper to taste

Steps:

  • Prepare grill for high heat.
  • With a fork, poke sausages several times. Place in a pot, cover with water, and simmer over medium-high heat until cooked through, about 7 minutes. Remove from heat, and set aside.
  • Warm butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in apples, vinegar, and brown sugar; cook, stirring gently, until caramelized, about 10 to 15 minutes. Season with salt and pepper.
  • Meanwhile, place sausages on grill (or under broiler), and cook until well browned. Serve on a mound of caramelized apples and onions.

1 1/2 pound fingerling potatoes
1/2 pound baby carrots
1 large red onion (cut into wedges)
2 tablespoon fresh sage (chopped)
2 tablespoon fresh rosemary (chopped)
2 tablespoon honey
3 tablespoon olive oil
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
4 links pork sausages

Steps:

  • Preheat the oven to 400 F degrees.
  • In a large bowl combine the apple cubes, fingerling potatoes, baby carrots, onion, sage and rosemary. Drizzle the honey and olive oil over, season generously with salt and pepper then toss really well so that everything.
  • Arrange the veggies and apples in a large shallow roasting pan. Arrange the sausages in and around the vegetables.

Pork, cider, apples and sage is a classic flavour combination for a reason, with both sweet and salty notes. It's a real winner. This recipe uses eating apples, and you can freeze it in batches, too. 1 tbsp sunflower oil
8 British outdoor-reared pork sausages (at least 70 per cent meat content)
200g smoked bacon lardons
50g butter
2 medium onions, chopped
2 garlic cloves, crushed
2 small parsnips (about 350g), chopped
3 large celery sticks, chopped
1 tbsp tomato purée
2 tbsp plain flour
300ml medium or dry cider
300ml fresh chicken stock
8-10 fresh sage leaves, chopped, plus a few leaves fried in a little oil until crisp (optional)
1 tbsp wholegrain mustard
2 small eating apples, such as cox
A squeeze of lemon to serve (optional)

Steps:

  • Heat the oven to 180°C/160°C fan/gas 4. Heat the oil in a large flameproof casserole (with a lid). Add the sausages and brown them all over, then transfer to a plate.
  • Add the bacon lardons to the casserole and fry for 5 minutes until the fat is crisp and brown. Transfer to the plate with the sausages.
  • Drain off all but 1 tbsp of the oil from the casserole, add half the butter and, when melted, add the onions and garlic. Cover and cook for 10 minutes, stirring now and then, until soft and lightly browned.
  • Take off the lid, stir in the parsnips and celery and cook for 2 minutes more. Stir in the tomato purée and flour, then gradually stir in the cider and stock and bring to the boil.
  • Return the sausages and bacon to the casserole, then stir in the sage and mustard. Cover, put in the oven and cook for 40 minutes.
  • When the casserole is ready, melt the remaining butter in a non-stick frying pan. Quarter, core and slice the apples into wedges. Add them to the pan and fry gently for 2-3 minutes until golden all over and just tender. Season with a little salt and pepper.
  • Remove the casserole from the oven, stir in the apples and season to taste (add a squeeze of lemon if you think it needs it). Sprinkle with the fried sage leaves, if using. Serve with baked potatoes or mash and greens.

But let's face it: Nearly any kind of sausage will taste great paired with caramelized onions and apples fried in butter.

4 tablespoons unsalted butter
3 large yellow onions, cut in 1/4-inch half-moons (about 4 cups)
Salt and pepper
1 bay leaf
2 cloves
3 allspice berries
1/2 teaspoon caraway seeds
1 thyme sprig
4 large tart apples, peeled and cut into 1/2-inch slices (about 4 cups)
8 bratwurst or other sausages, about 3 to 4 ounces each
Parsley sprigs, for garnish (optional)

Steps:

  • Put 2 tablespoons butter in a large cast-iron skillet or wide, heavy-bottomed pot over medium-high heat. Add onions, season generously with salt and pepper and stir to coat with butter. Add bay leaf, cloves, allspice, caraway and thyme. Cook, stirring frequently, until soft and nicely browned, about 10 minutes. Reduce heat as necessary to keep onions from browning too quickly.
  • Remove onions from pan and arrange on a platter. Put 2 more tablespoons butter in pan, and add apples. Raise heat to medium-high and brown apples on both sides, using a spatula to turn them, 2 to 3 minutes per side. Remove apples and arrange them on top of onions. Keep platter warm in a low oven.
  • Keep stovetop heat at medium and place sausages in pan in one layer. Prick each sausage in several places with the tip of a sharp paring knife or toothpick.
  • Let sausages brown slowly on one side (check their progress by turning them over with a fork or tongs) for 6 to 8 minutes. Lower the temperature if they're browning too quickly.
  • Turn sausages over, and add 1/2 cup water to the pan. Let water evaporate completely, then continue to let sausages brown slowly for about 5 more minutes. (Cooking sausages at too high a temperature will cause them to burst; err on the cooler side.)
  • To serve, place cooked sausages in the center of the onion-apple mixture on platter. Garnish with parsley, if desired.

1 (16 ounce) package smoked sausage (I use turkey sausage)
3 -4 cups granny smith apples (sliced)
1 cup onion (roughly chopped)
1/4 cup brown sugar
1/4 cup water

Steps:

  • Slice smoked sausage into 1 inch coins, and place in a microwavable bowl with a lid.
  • Add apples and onions.
  • Sprinkle brown sugar over all. Add water. Cover.
  • Microwave on high for about 5 mins or till apples are tender. (I use my fresh vegetable button for hard veggies).
  • May season with salt and pepper if care to. We normally don't.
  • Note: If you do not have a bowl with lid that will go into microwave, you may use plastic wrap, just be sure to vent it, by folding in one corner of wrap to make a little hole.

1 ½ pounds sweet Italian sausage, sliced
¾ cup white sugar
1 teaspoon ground cinnamon

4 apples - peeled, cored, and thinly sliced
2 tablespoons butter, cut into pieces

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place a large skillet over medium-high heat; cook the sausages until completely cooked, 5 to 7 minutes.
  • Stir together the sugar and cinnamon in a small bowl.
  • Pour the melted butter into the bottom of a 9x13 inch baking dish; layer half of the cooked egg noodles into the bottom of the dish; top with half of the sausage slices and half of the apple slices; sprinkle about half of the cinnamon-sugar mix over the dish. Repeat layers with remaining noodles, sausage, apples, and cinnamon-sugar. Dot with the butter pieces.
  • Bake in the preheated oven until the apples are soft, 30 to 45 minutes.

Calvados is the famous apple brandy from Normandy. A well-stocked liquor store will generally have it on hand, but you can substitute applejack brandy (or even a good fresh apple cider.) "I can buy boudin blanc in many places in New York," Joseph says, "but depending on where you live, it may not be so easy for you. If I had to substitute, I suppose I would use bockwurst, which is a similarly, delicately flavored German veal sausage. Potatoes mashed with butter and cream is what we always eat with this."

3 or 4 links (about 1 pound) fresh French white sausage (boudin blanc) or bockwurst, cut into 3/4-inch slices

1/4 cup Calvados, applejack or good apple cider
1/4 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large cold skillet, arrange the sausage slices in 1 layer. Set over medium-high heat, and cook, turning the slices once or twice until they are crisp and nicely browned on both sides, about 10 minutes. Remove from the heat and set aside.
  • In a 2-quart casserole, arrange a layer of about 1/4 of the sausage slices. Cover the sausage with a layer of about 1/4 of the apple slices. Sprinkle lightly with cinnamon. Continue in this manner to make 4 layers, ending with the apple slices.
  • Stir the Calvados into the skillet in which the sausage was browned, scraping up any crusty, brown bits that cling to the bottom of the pan. Stir in the cream until well blended, Pour this mixture evenly over the casserole.
  • Cover, and bake for 1 hour until the apples have cooked down and the mixture is bubbling. Sprinkle with parsley before serving.
