SAUERKRAUT APPLE CAKE

- In a large bowl, beat eggs and sugars; set aside. Squeeze sauerkraut until dry; finely chop and add to egg mixture. Peel and finely grate apple; squeeze dry. Stir into egg mixture. Add oil and walnuts. Combine flour, baking powder, cinnamon, baking soda, salt and nutmeg; stir into egg mixture. , Line two 8-in. round baking pans with waxed paper; grease and flour paper and sides of pan. Pour batter into pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, beat cream cheese and 2 tablespoons cream in a small bowl. Add sugar; beat until fluffy. Add orange zest, cinnamon and vanilla; mix well. Add remaining cream if needed. Spread between layers and over entire cake. Garnish with chopped walnuts if desired. Store in the refrigerator.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 inch cake pan.
- In a large mixing bowl, cream 1/2 cup butter or margarine and sugar until light. Beat in eggs, one at a time; add 1 teaspoon vanilla.
- Sift together flour, baking powder, baking soda, 1/4 teaspoon salt and cocoa powder. Add to creamed mixture alternately with water, beating after each addition. Stir in sauerkraut. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Let cake cool in pan. Frost with Sour Cream Chocolate Frosting. Cut into squares to serve.
- To Make Sour Cream Chocolate Frosting: Melt the semi-sweet chocolate pieces and 4 T butter or margarine over low heat. Remove from heat. Blend in the sour cream, 1 teaspoon vanilla, and 1/4 teaspoon salt. Gradually add sifted confectioners' sugar to make spreading consistency. Beat well. Spread over cooled cake.

I can't believe I cut this recipe out of Better Homes & Garden 30 yrs.ago & just found it & made it! It is very light (I didn't make the frosting) & very easy. I can't wait to tell my men they've eaten sauerkraut for dessert, (you'd never know it). The recipe calls for a 13x9x2 pan but I used a Bundt pan adding approx. 15 min.Also prep time does not include frosting.

My mother-in-law had put this recipe in her 1950 Indiana Church Cookbook.I I have had the recipe since then, and have baked it many times. It is always liked by my family and friends. - 2. In a second bowl add the flour, baking powder, baking soda, salt, and cocoa. Mix well. Add this to the above creamed mixture. Stir in cut up sauerkraut. Add the water and mix all together.
