SLOW-COOKER PORK ROAST AND SAUERKRAUT DINNER



Slow-Cooker Pork Roast and Sauerkraut Dinner image

Sauerkraut, apples and caraway impart great German flavor to slow-cooked pork roast.

1 package (32 oz) refrigerated sauerkraut, drained
2 medium apples, peeled, sliced
1 teaspoon caraway seed
1/4 cup apple juice or water
1 boneless pork roast (2 1/2 to 3 lb), string removed, trimmed of fat
6 small red potatoes (about 18 oz), cut in half
1 tablespoon Dijon mustard
3 tablespoons Dijon mustard
2 tablespoons packed brown sugar

Steps:

  • In 5- to 6-quart slow cooker, lightly mix sauerkraut, apples, caraway seed and apple juice. With spoon, make indention in center of mixture; place pork roast in center.
  • Arrange potato halves around roast on sauerkraut mixture. Spread 1 tablespoon mustard over roast.
  • Cover; cook on Low setting 7 to 8 hours.
  • In small bowl, mix sauce ingredients. Remove roast from slow cooker; place on serving platter. Cut roast into slices. Arrange potatoes around slices. With slotted spoon, remove sauerkraut mixture from slow cooker; place in serving bowl. Serve roast slices and potatoes with sauerkraut mixture and mustard sauce.

This recipe couldn't be easier-layer pork roast, vegetables and seasonings in a roasting pan, put it in the oven and forget it.

2 cans (one 27 ounces, one 14 ounces), sauerkraut, undrained
1 boneless rolled pork loin roast (4 to 5 pounds)
1 can (14-1/2 ounces) diced tomatoes, undrained
3 celery ribs, cut into 1-inch pieces
2 medium carrots, cut in half widthwise and quartered
1 medium onion, quartered
3 tablespoons brown sugar
1/4 cup minced fresh parsley
4 bay leaves
1/2 teaspoon dried oregano
1/4 teaspoon pepper

Steps:

  • Place half of the sauerkraut in a large roasting pan. Place pork roast over sauerkraut; top with remaining sauerkraut. Spoon tomatoes over top. Arrange the celery, carrots and onion around roast. Sprinkle brown sugar over tomatoes and sauerkraut. Add the parsley, bay leaves, oregano and pepper., Cover and bake at 325° for 3 to 3-1/2 hours or until a thermometer reads 160°, basting occasionally with pan juices. Discard bay leaves. Let stand for 15 minutes before slicing.

Easy Pork and Sauerkraut image

This is a recipe that is similar to my Pennsylvania Dutch grandmother's but was modified by me. She used a pressure cooker but I prefer the crock pot. I always serve this with a side of mashed potatoes and applesauce to accompany it.

1 pound pork roast, cut into 1 inch cubes
1 (32 ounce) jar sauerkraut with juice
½ (12 fluid ounce) can or bottle beer
½ apple, peeled and cored
1 tablespoon minced garlic
½ tablespoon fresh dill weed
1 teaspoon onion salt
1 teaspoon dry mustard

Steps:

  • Combine all ingredients in a slow cooker and stir well. Submerse the apple under the other ingredients.
  • Cook on High for one hour, reduce heat to Low and continue cooking for 5 hours or until pork is cooked through. Discard apple and serve.

Eating sauerkraut on New Year's is an old Pennsylvania Dutch tradition, said to bring good luck. The traditional meal consists of pork and sauerkraut served together, with sauerkraut representing luck and the pig representing rooting into the New Year. It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

1 (3 pound) pork roast
salt and ground black pepper to taste
2 (14.5 ounce) cans sauerkraut, or to taste
3 cups water, or more as needed
1 onion, chopped
1 apple - peeled, cored, and finely chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
  • Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). Continue to cook roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), adding water if sauerkraut mixture looks dry, about 2 hours more.
  • Remove roast from oven and allow to rest in a warm area before slicing, about 10 minutes.

  • Preheat the oven to 350*F. You will need a 9 by 13-inch baking dish. If your chops have a rind on them, remove that with a sharp knife and then using kitchen scissors, cut slashes into the sides of the chops at ½ inch intervals. This helps to keep the chops from curling up while cooking.
  • Heat the oil in a large skillet over medium high heat. Add the chops and brown them evenly on both sides. Remove to a plate and set aside. Add the chopped onion to the pan and cook, stirring it frequently until golden and softened.
  • Put the drained kraut in a bowl. Add the sliced apple and browned onions. Stir in the brown sugar and caraway seed. Mix well together. Spread out in the baking dish. Pour the apple juice over everything. Top with the browned chops and sprinkle with salt, pepper and paprika. Cover tightly with aluminum foil.
  • Bake in the preheated oven for 1 ½ hours until the chops are tender, and all is nicely bubbling. Uncover for the last 15 minutes of cook time.
