Rich with a decadent chocolate-y crumb-once you make these, you'll never go back to boxed mix again.

Number Of Ingredients 13

Nonstick cooking spray
6 tablespoons butter
3/4 stick
4 ounces dark chocolate chips
or chopped dark chocolate
3/4 cup sugar
2 large eggs
1 cup all-purpose flour
1/4 cup dark cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon instant espresso powder
1/2 teaspoon salt

Steps:

  • Preheat an oven to 350˚F
  • Line an 8-inch-square glass baking dish with parchment paper and coat with cooking spray
  • Fill a medium saucepan halfway with water
  • Place a medium heatproof glass bowl on top of a saucepan to make a double boiler
  • Place over medium heat
  • Add the butter, chocolate chips and sugar to the glass bowl and melt, stirring occasionally, until smooth
  • Remove from heat and let cool
  • Once the chocolate mixture is cool to the touch, but still a bit warm, add in the eggs and beat vigorously until mixture comes together and starts to pull away from the sides of the pan
  • Whisk together the flour, cocoa powder, baking powder and baking soda, then mix into the chocolate mixture
  • Add in the instant espresso powder and salt
  • Once smooth, pour into the prepared baking dish
  • Bake for 30 minutes
  • Remove from the oven and let cool completely before removing the brownies from the pan
  • Cut the brownies into 16 squares

1-1/2 cups sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
3/4 cup sauerkraut, drained, squeezed dry and chopped
SILK CHOCOLATE FROSTING:
1-1/3 cups butter, softened
4 ounces unsweetened chocolate, melted
1-1/2 teaspoons vanilla extract
4 cups confectioners' sugar
1/4 cup whole milk

Steps:

  • Preheat oven to 350°. In a bowl, cream the butter and sugar. Add 1 egg at a time, beating well after each. Add vanilla. Combine flour, cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with water. Stir in sauerkraut. Pour into 2 greased and floured 8-in. round baking pans. , Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely. , For frosting, beat butter, chocolate and vanilla in a bowl; add sugar and beat well. Add milk; beat until smooth and fluffy. Spread between layers and over top and sides of cake.

FOR THE CAKE
2/3 cup butter; softened
1 1/2 cups white sugar
3 eggs
1 tsp vanilla extract
2 1/4 cups all purpose flour
1/2 cup cocoa
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup water
1 cup sauerkraut; drained and very finely chopped
FOR THE ERMINE FROSTING
5 tbsp flour
1 cup milk
1 cup white sugar
pinch of salt
1 tsp vanilla extract
1 cup butter; room temperature
1/2 cup cocoa
1/2 cup icing sugar (optional)
30 cocktail cherries
3/4 cup jelly (cherry, raspberry, etc)

Steps:

  • Pre-heat oven to 350 F. Prepare two 8 inch cake pans by greasing with butter and lightly dusting with flour. Line pan bottoms with parchment paper.
  • With a mixer, cream butter and sugar together until they become light and fluffy.
  • Add eggs one at a time and mix in completely between each addition. Add vanilla.
  • Sift dry ingredients over the wet ingredient bowl and mix to incorporate well, drizzling in the extra water.
  • When the batter is smooth and well mixed, add in chopped sauerkraut and mix in. Divide the batter evenly between the two pans and smooth the tops with a spatula, if needed.
  • Bake at 350 F for 25 minutes and test with a cake tester. If it comes out clean, then the cake is done. If not, bake for another 5 minutes.
  • Whisk flour, milk and granulated sugar in a small pot.
  • Heat and whisk over med-high heat until the mixture begins to bubble, then stir until it becomes thick and like a thick pudding.
  • Remove from heat and cover the surface of the mixture with plastic wrap. Let cool completely.
  • With a mixer, beat the butter until soft and whipped. Add salt and vanilla.
  • Gradually drop in the milk/flour mixture and incorporate into the butter well.
  • When all the milk/flour is incorporated, add the cocoa and combine.
  • Add 1/2 cup of icing sugar if you like the frosting a bit sweeter.

½ cup butter
1 ½ cups white sugar

1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup unsweetened cocoa powder
1 cup water
8 ounces sauerkraut - drained, rinsed and finely chopped
1 cup semisweet chocolate chips
4 tablespoons butter
½ cup sour cream
1 teaspoon vanilla extract
2 ¾ cups sifted confectioners' sugar
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch baking pan.
  • In a large mixing bowl, cream 1/2 cup of the butter and all of the white sugar until light. Beat in eggs one at a time, mixing well after each one. Stir in 1 teaspoon of the vanilla.
  • Sift together flour, baking powder, baking soda,1/4 teaspoon of the salt, and cocoa. Add to creamed mixture alternately with the water beating after each addition. Stir in the sauerkraut. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Let cake cool in pan and then frost with Sour Cream Chocolate Frosting.
  • To Make Frosting: Melt semi-sweet chocolate chips and the 4 tablespoons of butter. Blend in the sour cream, 1 teaspoon vanilla, 1/4 teaspoon salt. Gradually add confectioner's sugar until frosting is of spreading consistency. Beat well. Spread onto cooled cake.

16 ounces semisweet chocolate chips

½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 inch cake pan.
  • In a large mixing bowl, cream 1/2 cup butter or margarine and sugar until light. Beat in eggs, one at a time; add 1 teaspoon vanilla.
  • Sift together flour, baking powder, baking soda, 1/4 teaspoon salt and cocoa powder. Add to creamed mixture alternately with water, beating after each addition. Stir in sauerkraut. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Let cake cool in pan. Frost with Sour Cream Chocolate Frosting. Cut into squares to serve.
  • To Make Sour Cream Chocolate Frosting: Melt the semi-sweet chocolate pieces and 4 T butter or margarine over low heat. Remove from heat. Steps:

  • In a small saucepan, melt butter and chocolate over low heat, stirring until smooth. Remove from the heat; place it in a large bowl along with sugar, vanilla and eggs. Beat well. , Combine dry ingredients; stir in to batter until well blended. Stir in sauerkraut and nuts. Spread into a greased 9-in. square baking pan. , Bake at 350° for 30 minutes or until cake tests done. Cool before frosting. , For glaze, bring first four ingredients to boil in a heavy saucepan.
