KRAPT AND SAUSAGE (SAUERKRAUT AND SMOKED SAUSAGE)
My son was about a year and a half old, my dad was eating leftovers and he barely had enough to satisfy his hunger, and my son indicated that he wanted to eat some of what his granddaddy was eating. Being a good grandfather, he relented and gave into my son's wishes. Being older and FAR more treacherous than my toddler, Dad offered up a bite of the sauerkraut to my son, fully expecting my son to dislike the taste, and thereby saving more of the leftovers to satisfy my father's hunger. Boy, was he wrong! My son was still working on his language skills, and his new favorite food, kraut, was now called "KRAPT!" This is the recipe to the dish my father was eating that night.

Steps:
- Slice Sausage lengthwise and then cut the pieces into half moons as thick or as thin as you would like. Thinner slices create a meatier presentation and thicker slices create a meatier bite.
- In a large skillet or a medium pot heat oil and sauté onion and garlic until onion is translucent.
- Add sausage and almost sear it.
- Add drained kraut, stir and heat throughout.
SAUSAGE AND SAUERKRAUT
This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

SAUERKRAUT N' SMOKIES
Our family likes sweet and sour dishes. This simple recipe satisfies this. My eighty four year old father in love, who is quite the picky eater, declares whenever I serve this, (with a rub of his tummy,) "Very tasty!"

Steps:
- 1. Pre heat oven to 350 degrees. Drain and rinse sauerkraut, pressing out liquid; set aside. In a medium saucepan over medium heat, sauté apples and onion in margarine 3 to 4 minutes until apples are just tender.
- 2. When apple mixture is tender, add Kraut, and mix thoroughly. Add brown sugar and caraway seed. Stir until sugar is melted. Put sauerkraut into a 13x9 baking dish.
- 3. Bake for 20 minutes until hot and bubbly. Remove from oven, allow to cool 5 minutes before serving. Note: Sometimes I add 8 oz. Swiss cheese slices on top, depending on whether I have it on hand or not. Also, on occasion, I use 1 cup of pear preserves instead of apples for variety.

PIGS-IN-A-BLANKET WITH SAUERKRAUT AND MUSTARD
Classic German flavors bring a fresh twist to this beloved hors d'oeuvre. We love the combination of buttery puff pastry with tangy sauerkraut and the subtle heat of mustard.

Steps:
- Preheat the oven to 400°F. Set racks in the upper and lower thirds of the oven. Line two 13x18-inch baking sheets with parchment paper. In a small bowl, beat the egg with 1 tablespoon water. Prep the ingredients for the filling and set aside.
- If using a 17-ounce puff pastry package, roll each sheet to a 9x12-inch rectangle. Cut each piece lengthwise into eight 1 1/2-inch wide strips. Cut each strip crosswise into two pieces, about 4 1/2 inches long. You should have 32 pieces of pastry.
- Spread the center of each piece of pastry with 1/2 teaspoon mustard and top with 1/2 teaspoon sauerkraut. Brush one narrow end of the pastry with egg wash, add one piece of sausage, and roll to enclose. Return to parchment-lined baking sheets. Brush the top of each pastry with egg wash and sprinkle with caraway seeds, seam-side down. Chill in refrigerator for 15 minutes. Bake until golden brown and puffed, 23 to 27 minutes.
