1 lb round steak, cut into strips
1/4 cup flour
2 tablespoons oil
1 large onion, chopped
3 tablespoons chopped green peppers
1 (16 ounce) can whole potatoes, drained (reserve liquid)
1/4 cup catsup
1 tablespoon Worcestershire sauce
2 teaspoons beef bouillon
1/3 teaspoon marjoram
1/4 teaspoon pepper
1 (10 ounce) package frozen Italian cut green beans

Steps:

  • Coat steak with flour; brown in hot oil.
  • Remove steak from skillet.
  • To skillet, add onion and chopped green pepper; cook and stir 1 minute.
  • Return steak to skillet.
  • Add enough water to reserved potato liquid to measure 1 cup.
  • Add catsup, worcestershire sauce, boullion, marjoram and pepper.
  • Pour onto steak; heat to boiling.
  • Cover and simmer for 1 hour.
  • Add the potatoes and beans.
  • Simmer another 15 minutes.

3 teaspoons kosher salt, divided
1 beef New York strip or ribeye steak (1 pound), 1 inch thick

Steps:

  • Remove steak from refrigerator and sprinkle with 2 teaspoons salt; let stand 45-60 minutes. , Preheat a cast-iron skillet over high heat until extremely hot, 4-5 minutes. Sprinkle remaining 1 teaspoon salt in bottom of skillet; pat beef dry with paper towels. Place steak in skillet and cook until easily moved, 1-2 minutes; flip, placing steak in a different section of the skillet. Cook 30 seconds and then begin moving steak, occasionally pressing slightly to ensure even contact with skillet., Continue turning and flipping until cooked to desired degree of doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 1-2 minutes.

8 bacon strips
2 pounds beef top round steak (3/4 inch thick)
2 cups sliced fresh mushrooms
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup chopped onion
1 to 2 teaspoons dried tarragon
2 tablespoons cornstarch
2 tablespoons water
1 cup heavy whipping cream
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; stir in cream. Simmer, uncovered, until heated through, 3-4 minutes. Return meat to skillet and turn to coat with sauce. If desired, sprinkle with parsley.

2 (6 ounce) beef top sirloin steaks
2 cups orange juice
1 cup apple cider vinegar
½ cup Worcestershire sauce
2 teaspoons olive oil
1 ½ tablespoons steak seasoning (such as Fiesta Brand® Uncle Chris'), or to taste
freshly ground black pepper to taste
sea salt to taste

Steps:

  • Place steaks side by side in large casserole dish. Add orange juice, cider vinegar, and Worcestershire sauce. Refrigerate, uncovered, for 45 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove casserole dish from refrigerator. Cover steaks with plastic wrap and let reach room temperature, at least 15 minutes.
  • Heat olive oil in a cast-iron skillet over high heat.
  • Place steaks on a clean work surface and generously rub with steak seasoning and black pepper.
  • Cook steaks in the hot skillet until lightly browned on the bottom, 2 1/2 minutes. Flip and cook until browned on the other side and red in the center, about 2 minutes more. Place skillet, with steaks, into the oven.
  • Bake in the preheated oven until steaks are firm and reddish-pink to lightly pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read from 130 degrees F (54 degrees C) to 140 degrees F (60 degrees C).
  • Remove steaks from oven; season with salt. Let sit for 5 minutes before serving.

1 pound beef boneless round steak, cut into searning pieces.
1/4 cup all-purpose flour
1 T vegetable oil
1 large onion chopped, about 1 cup
1 can, 16 oz, whole potatoes, drained, save liquid.
1/4 cup ketchup
1 T worcestershire sauce
2 tsp bell pepper flakes
1 tsp instant beef bouillon
1 tsp, salt
1/2 tsp dried marjoram leaves
1/4 tsp pepper
1 pck, 10 oz, frozen Italian green beans
2 ounces sliced pimiento, drained

Steps:

  • Coat beef steak pieces with flour; pound into beef. Brown beef in oil in 10 " skillet; push beef to side. Cool and stir onion in oil until tender; drain. Add enough water to reserved potato liquid to measure 1 cup. Mix potato liquid, catsup, worcestershire sauce, pepper flakes, instant bouillon, salt, marjoram, and pepper. Pour on beef and oinion mix. Heat to boiling: reduce heat. Cover and simmer until beef is tender. 1 1/4 to 1 1/2 hours. Rinse frozen beans under running cold water to separate. Add potatoes and beans to skillet. Heat to boiling; reduce heat. Cover and simmer until beans are tender; 10 to 15 minutes.

  • Use a cast iron skillet. If you don’t have one, I beg you to reconsider this important life decision. Inexpensive, virtually indestructible, and super versatile, my cast iron skillet is my all-time favorite cooking tool.
  • Choose the right cut. I usually buy New York Strip- in my opinion, it’s the best for the price.   • Let the meat come to room temperature. Set the meat on a plate and allow it to warm up a bit before cooking. This will do two things: a) ensure even cooking, and b) allow some of the liquid to be released from the steak.
  • Salt and pepper the heck out of it. First, blot the steak dry with a paper towel. Then, add freshly ground pepper and LOTS of Kosher salt to both sides.
  • Get the pan searing hot. This is why you want to use cast iron: it gets wicked hot and distributes heat evenly, making it perfect for searing things to perfection.
