Lovely saucy prawns - quick and easy to make Serve with Spicy Rice or Fat Fried/Baked Potato Chips Requires 1 KG Headless Prawns

1/4 cup lemon juice
1 teaspoon whole coriander seed
1 teaspoon ground cumin
3/4 teaspoon ground coriander
1/2 teaspoon salt
1/2 teaspoon fine red chile
1/4 lb butter (half of this if you like less butter)
2 -3 tablespoons mayonnaise
1/2 teaspoon red chile
2 teaspoons sugar
2 teaspoons lemon juice (can take from the 1/4 cup above)
2 tablespoons tomato puree
1 dash of black and white pepper
1/2 teaspoon salt
1/2-1 teaspoon crushed garlic (depending on individual taste)
1/4 cup cilantro leaf, chopped

Steps:

  • Marinate the prawns in the ingredients listed under Prawns.
  • Heat in a pot/pan ±1 Tblsp of olive oil and 1 Tblsp butter on medium heat and melt butter into blend in oil.
  • Add prawns and simmer.
  • Separately make Sauce by combining all the ingredients for the sauce in a heavy based pan/pot.
  • when sauce is heated through and thick - sprinkle on chopped Cilantro leaves and remove from stove.
  • Serve prawns either with sauce separately on the side or toss in prawns into sauce and serve up family style with rice / chips.

This recipe is "to die for". Prawns sautéed in fresh garlic and coriander cream sauce. Simple to make. Remember to use lite cream and only half the salt content for a healthier alternative. You can also add extra cream if you like lots of sauce!

500 g green prawns
1 tablespoon butter
1 tablespoon lemon juice
1/2 cup cream
4 garlic cloves
1 tablespoon fresh coriander
1/2 teaspoon salt
1 teaspoon black pepper
2 teaspoons olive oil

Steps:

  • Peel and devein prawns leaving tails on.
  • In a small bowl combine lemon juice, crushed garlic, salt and pepper.
  • In a heavy based skillet, melt butter and olive oil on a medium heat.
  • Once butter has melted add prawns and garlic mixture and increase heat to ensure prawns are cooked quickly.
  • Toss prawns and mixture for 1-2 minutes or until prawns turn pink.
  • Add coriander and toss for a further 30 seconds.
  • Reduce heat. Add cream and stir through.
  • Serve with jasmine rice.
