This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

Steps:
- 1. Over medium heat in a large skillet, brown pork, onion, celery, garlic , salt and pepper in oil until pork is no longer pink.
- 2. Stir in the soup and water, combine well. Cover and simmer for 25 minutes. Preheat oven to 375 degree F.
- 3. Stir in the cubed cheese, noodles and parsley. Stir and heat until cheese is melted. ( this could actually be eaten now, but I like to bake with the panko crumbs.) Mix your crumbs and seasonings with the melted butter.
- 4. Pour noodles mixture into a casserole dish - I use my 4 quart casserole, but could use a 9 x 13 dish. Spread the top with panko's and bake for 15 - 20 minutes or until bubbly and coating is golden. I serve with crusty bread and a tossed salad.
- 5. Enjoy❣

- Boil the noodles for half of the time recommended on the package, drain and rinse them to stop them from overcooking.
- Add the cans of soup, corn, and cheese to a large bowl and stir to combine. NOTE: Don't drain the corn, you want that extra liquid for cooking. Gently fold in the noodles and pork so you don't crush the noodles.
- Pour the noodle mixture into a casserole dish that has been prepared with cooking spray. At this stage, you can either freeze the casserole or proceed to cook.
- Preheat oven to 375 degrees. Bake covered for 20 minutes. Remove the cover and carefully stir the dish up a little to make sure the center gets piping hot. Continue to bake for another 20-25 minutes uncovered. The top should crisp up just a bit and the whole thing should be bubbling and warm.

- Place all marinade ingredients in large bowl. Whisk together well, until smooth. Once mixed, measure out 6 heaping Tablespoons and place it in a small, separate bowl (reserving it to add to noodles later). Thinly slice the pork, and add to the marinade still in large bowl. Stir to fully coat pork slices. Cover bowl; refrigerate at least 4 hours (overnight or 8 hours is recommended, for full flavor saturation).
- Heat a large, non-stick skillet on medium high. Once hot, remove pork strips from bowl with a slotted spoon (to drain off some of the marinade-discard any remaining marinade in bowl), and place pork strips into hot skillet in a single layer. Cook pork, turning once, until both sides are browned. Remove skillet from heat.
- While the pork is cooking, cook noodles in separate pan, according to package directions (do NOT discard the cooking water). Lightly steam broccoli florets, or thawed (previously frozen) broccoli. Add cooked noodles, broccoli, shredded carrots, chopped peanuts, and the 6 Tablespoons RESERVED hoisin sauce mixture to the skillet with browned pork.
- Add 1/4 cup of the hot cooking water used for noodles to skillet (the starch in the water will help the hoisin sauce stick to the noodles). Mix all ingredients together, until coated with sauce. Heat on low, stirring often, to ensure dish is heated all the way through before serving. If desired, garnish each serving with chopped cilantro, sliced green onions, or additional chopped peanuts. Serve and enjoy!
