I get raves from my husband and even our three fussy children when I serve these satisfying meatballs with mashed potatoes. The savory cream sauce gives a tasty new twist to meatballs and always makes a memorable meal.

1 egg, lightly beaten
1/4 cup 2% milk
2 tablespoons ketchup
1 teaspoon Worcestershire sauce
3/4 cup quick-cooking oats
1/4 cup finely chopped onion
1/4 cup minced fresh parsley
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
3 tablespoons all-purpose flour
CREAM SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon dried thyme
Salt and pepper to taste
1 can (14 ounces) chicken broth
2/3 cup heavy whipping cream
2 tablespoons minced fresh parsley

Steps:

  • In a large bowl, combine the egg, milk, ketchup, Worcestershire sauce, oats, onion, parsley, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Roll in flour, shaking off excess. , Place meatballs on greased racks in shallow baking pans. Bake, uncovered, at 400° for 10 minutes. Turn meatballs; bake 12-15 minutes longer or until meat is no longer pink. , Meanwhile, for sauce, melt butter in a saucepan over medium heat. Stir in the flour, thyme, salt and pepper until smooth. Gradually add broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain meatballs on paper towels; transfer to a serving dish. Serve with sauce; sprinkle with parsley.

2 pound ground pork
1 large onion (chopped)
3 tablespoon fresh dill (chopped)
2 eggs
¾ cup bread crumbs
¼ cup buttermilk
1 tablespoon hot sauce (I used Sriracha sauce)
salt and pepper to taste
vegetable oil ( for frying)
½ pound cremini mushrooms (sliced)
4 tablespoon unsalted butter
¼ cup all-purpose flour
¼ cup white wine
½ cup heavy cream
1 cups chicken broth
salt and pepper to taste

Steps:

  • Combine the meatballs: Add all the meatball ingredients (excluding the vegetable oil) to a large bowl and mix well using your hands. Shape into 1 inch meatballs. You should get about 40 to 50 meatballs.
  • Prep for cooking: Line a baking sheet with paper towels. Add some vegetable oil to a large skillet, about 1/4 cup and heat it over medium-high heat.
  • Cook the meatballs: Add meatballs to the skillet and cook. If not all meatballs fit in the skillet you will have to do this in a couple batches. Cook the meatballs on all sides, adding more oil if needed in between batches. Remove meatballs from skillet to prepared baking sheet, to soak up the oil.
  • Saute the mushrooms: Discard any leftover oil from the skillet and add the butter and melt. Add the mushrooms to the skillet and saute for about 5 minutes until they start to brown.
  • Create the sauce: Sprinkle the flour over the mushrooms and stir, cook for about 1 minute to remove the raw taste of flour. Add the white wine, heavy cream and chicken broth. Cook for 10 minutes, stirring occasionally. The sauce should thicken and reduce a bit. If the sauce is too thick add a bit more heavy cream or chicken broth.
  • Finish the dish: Add the meatballs to the mushroom sauce and toss them around making sure they're covered in the sauce. Cook for 2 more minutes until they heat through, then garnish with fresh parsley or dill. Serve over mashed potatoes, noodles or rice.

1 pkt. SHAKE 'N BAKE BBQ Glaze Seasoned Coating Mix, divided
1/2 cup MIRACLE WHIP Dressing
2 Tbsp. KRAFT Original Barbecue Sauce

Steps:

  • Heat oven to 350°F.
  • Mix meat with 3 Tbsp. coating mix; shape into 20 meatballs, each about 1 inch in diameter. Place remaining coating mix in shaker bag. Add meatballs in batches; shake gently until evenly coated. Place in single layer on foil-lined 15x10x1-inch baking pan. Sprinkle with any coating mix remaining in bag.
  • Bake 15 min. or until meatballs are no longer pink in centers.
  • Mix dressing and barbecue sauce. Serve as a dipping sauce for the meatballs.

There are many versions of Swedish meatballs, and this is the way we like ours. They're juicy, tender, and flavorful in a creamy and rich sauce. We enjoy them over mashed potatoes or buttered noodles and served with lingonberry sauce or cranberry sauce.

1 cup fresh bread crumbs
¾ cup milk
1 pound lean ground beef
½ pound lean ground pork
½ cup finely chopped onion
½ cup finely chopped fresh parsley

1 large egg, lightly beaten
1 teaspoon minced garlic
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 cup reduced-fat sour cream
3 tablespoons chopped fresh dill

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and place a baking rack on top. Spray the baking rack with cooking spray.
  • Combine bread crumbs and milk in a large bowl. Allow bread crumbs to soak up the milk for about 10 minutes. Mix in ground beef, ground pork, onion, parsley, celery, egg, garlic, sugar, salt, and pepper until combined; mixture will be fairly wet. Shape into 36 meatballs with a 1-tablespoon cookie scoop. 1/4 cup chopped fresh cilantro
1/4 cup dry bread crumbs
1 fresh jalapeño pepper, minced
1 egg
3 cloves garlic, minced, divided
1 cup KRAFT Real Mayo
1 canned chipotle pepper in adobo sauce

Steps:

  • Heat oven to 375°F.
  • Mix meat, cilantro, bread crumbs, jalapeño peppers, egg and 2/3 of the garlic; shape into 20 meatballs, each about 1 inch in diameter.
  • Place on rimmed baking sheet sprayed with cooking spray.
  • Bake 20 min. or until done (160ºF). Meanwhile, process mayo, chipotle pepper and remaining garlic in blender until smooth.
  • Serve meatballs with sauce.

1.5 lbs hamburger meat
2 eggs
1 tbs paprika
1 tbs chopped onion (dried or fresh)
1 tbs garlic powder
2 tsp pepper
2 tsp salt
1 tsp red pepper flakes
1 tsp cumin
½ tsp thyme
½ tsp nutmeg
½ tsp cayenne
2 tbs liquid smoke
1 tbs Worcestershire sauce
¼ cup olive oil
½ c honey
¼ c mustard*

Steps:

  • In a small bowl, combine all the dry seasonings.
  • In a medium bowl, add the raw hamburger, eggs, dry seasoning mix, liquid smoke, and Worcestershire sauce and mix thoroughly. Roll into ~2" balls.
  • In a large skillet or fry pan, heat oil over medium high heat.
  • Once oil is hot, place each meatball in the skillet. Turn each meatball every minute or so to brown all sides. After the meatballs look done, cut one open and make sure it is cooked through. If not, go ahead and turn down the heat on the stove top and cover pan with a lid. Let the meatballs cook for several more minutes, checking for doneness.
  • Once done, dip in sauce of choice (I recommend the honey mustard sauce!) and enjoy!
  • In a small bowl stir together honey and mustard.
