Sour cherry cake with cherry sauce. If desired, 1/2 cup sour cherries may be added to the sauce before cooking.

⅓ cup shortening
⅔ cup white sugar
1 egg
1 teaspoon vanilla extract
½ cup milk
1 ¼ cups all-purpose flour
1 ¼ teaspoons baking powder
½ teaspoon salt
1 ½ cups sour cherries - drained, juice reserved
½ cup chopped walnuts
½ cup white sugar
2 tablespoons cornstarch
1 pinch salt
1 cup water
¼ teaspoon almond extract
2 drops red food coloring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the shortening and 2/3 cup sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Beat in the flour mixture alternately with the milk. Stir in cherries and chopped nuts. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Serve with cherry sauce.
  • To make cherry sauce: In a saucepan, combine 1/2 cup sugar, cornstarch and salt. Blend in 3/4 cup reserved cherry juice and 1 cup water. Stir in almond flavoring and red food coloring. Cook over medium heat, stirring frequently, until mixture thickens.

½ cup chopped walnuts
1 (16 ounce) can pitted sour red pie cherries
⅓ cup white sugar
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom only of one 9x9 inch square baking pan. Drain the sour cherries, reserving the liquid.
  • Combine the flour,1 cup of the sugar, baking powder and salt. Beat in the shortening and eggs at medium speed until well blended. Fold in the nuts and 1 cup of the drained cherries. Spread the batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Serve cake warm or cooled with Cherry Sauce spooned over the top.
  • To Make Cherry Sauce: In a small saucepan combine 1/3 cup sugar, corn starch, remaining cherries and the reserved juice. Cook over medium heat, stirring occasionally mixture is thick and clear.

16 ounces cherries (frozen or fresh)
1/2 cup granulated sugar
1/2 cup water
1 tablespoon cornstarch
1 tablespoon lemon juice (fresh)

Steps:

  • Gather the ingredients.
  • If working with fresh cherries, wash them thoroughly and carefully remove all the stems and pits.
  • In a medium saucepan, place the cherries (fresh or frozen), sugar, and water. If using frozen cherries, add just half the amount of water to begin with. Bring to a boil over medium-high heat, stirring often.
  • In a small bowl, stir the lemon juice and cornstarch together until smooth.
  • Whisk the cornstarch mixture into the boiling cherry mixture.
  • If working with frozen cherries, check on the texture of the mixture and add one tablespoon of water at a time if too thick.
  • Return the sauce to a boil, stirring constantly. Don't let the sauce scorch on the bottom.
  • Cook until the liquid has properly thickened, about one more minute.
  • Remove the pot from the heat and taste. Add a little extra sugar or lemon juice if needed at this point, depending on your personal preference. Allow the sauce to cool to room temperature before using it.

1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon butter

Few drops red food coloring, optional
Sponge cake, pound cake or ice cream

Steps:

  • Drain cherries, reserving juice. Set cherries aside. Add enough water to juice to equal 1-1/4 cups. In a saucepan, combine sugar and cornstarch. Stir in juice. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat. Stir in the butter, vanilla, cherries and food coloring if desired. Serve warm over cake or ice cream.

A childhood favorite that my mother used to make. If you don't want to use the sauce on the cake-although it's sure good-it would be nice on ice cream as well.

1/3 cup shortening
1 1/4 cups sugar
2 eggs, well beaten
2 1/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1 can sour pitted cherries, well drained (retain juice)
1/2 cup chopped nuts (optional)

Steps:

  • Cream shortening; add sugar gradually and cream until fluffy.
  • Blend in eggs.
  • Combine dry ingredients and stir into creamed mixture alternately with milk.
  • Stir in cherries (and nuts, if using).
  • Pour into a 9x13 pan that has been sprayed with nonstick spray.
  • Bake at 350° for about 50 minutes.
  • Serve warm with: HOT CHERRY SAUCE: Mix together in a saucepan 1/2 cup sugar, 2 Tbsp cornstarch and a dash of salt.
  • Blend in the juice from the can of cherries and 1 cup water.
  • Bring to a boil, stirring constantly.
  • Boil, stirring occasionally, until the mixture thickens and the starchy taste disappears, probably about 10 minutes.
  • Remove from heat and blend in 1/4 tsp almond extract.
  • Note: Sauce thickens unacceptably as it cools, so it really needs to be served hot.

1 cup packed brown sugar
1 cup heavy whipping cream

Combine the flour, salt and baking powder; add to butter mixture alternately with milk, beating well after each addition. Fold in cranberries. , Pour into a greased 9-in. square baking dish. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. , In a small saucepan, melt butter; stir in brown sugar and cream. Bring to a boil, stirring constantly. 1 1/2 cups canned cherries plus 1/2 cup of the light syrup from the can (or fresh or frozen cherries plus 1/2 cup water)
3 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon butter (vegans: use an oil-based spread)
1 tablespoon cornstarch dissolved in 1/4 cup water
1/2 teaspoon quality pure almond extract

Steps:

  • Place the cherries and the syrup or water in a small saucepan along with the sugar, butter and lemon juice. Bring to a boil. If using fresh or frozen cherries, reduce the heat and simmer for another 3 minutes. Stir in the cornstarch mixture, stirring continually until the sauce is thickened, about 1 minute. Remove from heat and stir in the almond extract.
  • Cover and store in the fridge where it will keep for up to a week.
  • Serve warm or at room temperature.
