- Preheat the oven to 425°F and line a large baking sheet with parchment paper. Break the cauliflower into bite-sized florets. Toss with olive oil, salt, and pepper and spread evenly onto the baking sheet. Roast for 25 to 30 minutes or until browned around the edges.
- Season to taste with more salt and pepper and toss with lemon zest and parsley. Or keep it plain and use it in any recipe that calls for roasted cauliflower.

- Preheat oven to 400ºF. Line a baking sheet with baking paper.
- Cut the cauliflower in half lengthwise.
- Toss cauliflower, olive oil, and Cajun seasoning in a bowl until fully coated.
- Tip onto the prepared baking sheet and roast for 20 minutes.
- Stir cauliflower and place back in the oven for another 5 to 10 minutes until tender and crispy around the edges.
- Serve hot with remoulade sauce.
- Mix together in a bowl and store in an airtight container.

CAULIFLOWER IN CHEESE SAUCE
Posted for ZWT-6, this recipe comes from the Usborne Children's World Cookbook that gramma gave my son when he was first learning to cook. Any strong-flavored cheese will work in this recipe, such as cheddar, but if you are looking for an authentic Dutch flavor, choose either Edam or Gouda. The servings, cook & prep time are estimates.

- Remove the leaves from the cauliflower, rinse it well and then cut out the core. Cut the rest into four pieces.
- Bring a large pot of salted water to a boil and then add the cauliflower. Cook for 5-6 minutes, or until tender. Drain and put it into an ovenproof casserole dish.
- Meanwhile, melt the butter in a saucepan, over low heat.
- Add the flour and stir with a wooden spoon to make a smooth paste.
- Cook the mixture gently for a minute, then take the pan off the heat.
- Stir in the milk, a little at a time.
- Return the pan to the heat and let it cook on low for 5-10 minutes, stirring occasionally.
- Stir most of the grated cheese into the saucepan to melt. Season it with pinches of the salt, pepper and nutmeg.
- When the sauce has melted, pour over the cauliflower and sprinkle the reserved cheese on top.
- Place under the broiler for a few minutes and until the top starts to bubble and brown.

- Place cauliflower florets in a large glass bowl or casserole dish, and cover with plastic wrap. Poke a few holes in the plastic with a knife. Cook in the microwave for 5 to 7 minutes, or until tender.

CAULIFLOWER ALFREDO SAUCE

- Bring a large pot of salted water to a boil. Add the cauliflower and cook at a low boil until very tender, about 20 minutes. Remove the cauliflower with a slotted spoon and set aside to drain in a colander, reserving the boiling water for the pasta.
- Add the fettuccine to the boiling water and cook according to the package instructions (usually about 10 minutes).
- Make the sauce while the pasta cooks. In a blender, combine the cauliflower with the milk and puree until smooth.
- In a large skillet over medium-low heat, heat the butter and garlic until the butter melts. Add the cauliflower puree and cook for 2 minutes. Remove the garlic. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Turn off the heat and stir in the Parmesan.
- Heat a separate skillet over medium-high heat and add some olive oil. Sear the shrimp briefly on both sides until just cooked through.
- Use tongs to remove the pasta from the water and transfer to the skillet with the sauce. Add 1/3 cup pasta water. Turn the heat back to medium and toss to combine until the pasta is evenly coated with the sauce. Add the shrimp and garnish with the parsley.

- Sticky Sesame Sauce: Heat a skillet over medium heat. Add sesame oil, garlic and ginger. Cook the garlic ginger for a minute. Add the soy sauce, rice vinegar, maple and bring to boil. Mix cornstarch in the water and add this cornstarch slurry and bring to a boil to thicken, Take off heat.
- Cauliflower: Preheat the oven to 425 deg F ( 220 C). Line a baking sheet or dish with parchment. In a large bowl add the dry ingredients for the batter and whisk well. Add the wet ingredients and min until smooth.
- Add the cauliflower and mix to coat. This batter keeps thickening as it sits, so mix and toss quickly.
- Transfer to the the lined baking sheet. and bake for 30 mins. Make the sticky sauce in the meanwhile if you havent yet.
- Once baked, you can do one of the following: 1. Brush the sauce over the cauliflower florets and bake for additional 10 to 15 mins (time depends on how crisp and sticky you want the sauce)2. Wait for a few mins then transfer the florets to the sauce. Mix gently to coat. Serve immediately or transfer to the baking sheet to bake for 10 to 15 mins.
- Sprinkle black and white sesame seeds and chopped scallions and serve as is, or over rice or in lettuce wraps!

ROASTED CAULIFLOWER IN MY ASIAN SAUCE

- Gather all ingredients before starting recipe.
- Pre heat oven to 450°
- Line a flat sheet with aluminum foil and place cauliflower florets on the sheet. Drizzle with olive oil, season with kosher salt and roast in the oven for 25-30 minutes, or until the cauliflower is soft and begins to char.
- While the cauliflower is roasting, combine all sauce ingredients in a small bowl and stir combine.

CAULIFLOWER WITH CHEESE SAUCE
This is an easy recipe for cauliflower cheese but it's pretty versatile. You can use the cheese sauce with any vegetables you have handy. I often put a layer of cooked kale or broccoli on the bottom, then arrange the cooked cauliflower florets on top. You can change the flavor of the sauce by adding different cheeses you might have in your fridge. It takes a bit of elbow work to make the sauce but it's worth it. This is delicious served with roast beef or lamb.

- Preheat oven to 425 degrees F (220 degrees C).
- Place cauliflower in a large pot and pour in enough water to cover; bring to a boil and cook until tender yet firm to the bite, 8 to 10 minutes. Drain and transfer to a baking dish.

- In a stockpot or large saucepan, combine the cauliflower florets and water over high heat. When it reaches boiling, put a lid on the pan and drop the heat to medium low. Simmer for 5 minutes or until the cauliflower is very tender.
- While the cauliflower is simmering, melt the butter and olive oil over medium low heat in a small saucepan and stir in the garlic and the pinch of salt.
