1 pound dry great Northern beans
8 cups water
4 ounces diced salt pork
1 cup chopped onion
½ cup molasses
⅓ cup packed brown sugar
1 teaspoon dry mustard
⅛ teaspoon ground black pepper

Steps:

  • The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
  • In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

1 lb dry navy beans (or pinto beans)
6 cups water
2 tablespoons salt
1 tablespoon vegetable oil
1/2 lb uncooked bacon (diced)
2 cloves garlic (minced)
1 medium onion (diced)
1/4 cup tomato paste
1/4 cup dark molasses
1/4 cup coconut sugar (or brown sugar)
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
Salt and pepper to taste

Steps:

  • Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
  • The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
  • Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
  • Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
  • Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

¾ cup BBQ sauce ((any brand))
¼ cup brown sugar
1 fresh Jalapeño chopped ((remove seeds if you want less heat))
¼ onion diced ((use a chopper))
10 slices Bacon

Steps:

  • Spray the inside of your crock pot casserole dish with non-stick cooking spray.
  • In a mixing bowl, combine the pork and beans, the bbq sauce, brown sugar, jalapeños and diced onions. Mix well.
  • Chop half the bacon into pieces. I like to fry the bacon slightly before adding it in. Fold in the chopped bacon.
  • Pour the mixture into the crock pot casserole dish.
  • Place the whole slices of bacon on the top of the pork and beans.
  • Place lid on top and cook on high for 2 hours or low for 4 hours.
  • Allow to sit for 15 minutes slightly uncovered and serve. (the longer it sits the thicker the beans get)

1/4 cup water
1 medium onion, diced
2 teaspoons smoked paprika
1 teaspoon EACH garlic + onion powder
1 1b. dried small white beans (navy or great northern) (2 cups), rinsed and odd beans removed (not soaked)
4 cups low-sodium vegetable broth (or half water + broth)
1/3 cup pure maple syrup
1/4 cup tomato paste (use a 6oz. can for extra tomato flavor)
1/4 cup apple cider vinegar
2 tablespoons mustard (regular, dijon or whole grain)
1/2 teaspoon fresh ground pepper
2 bay leaves
1/2 - 1 teaspoon mineral salt, or to taste
Small jalapeno, seeds removed and diced (add a few seeds for extra heat)
Small green bell pepper, cored and diced
2 - 4 tablespoons unsulfured blackstrap molasses

Steps:

  • Press the SAUTE setting on your Instant Pot and add 1/4 cup water. When hot, add onion and saute for 4 minutes. Add the smoked paprika and garlic powder, cook for 1 minute, or until fragrant, stirring frequently.
  • Next add the beans, broth, tomato paste, maple syrup, apple cider vinegar, mustard, bay leaves, ground pepper and salt, gently stir until the tomato paste is dissolved completely and everything is well combined.
  • Attach the lid, and make sure the vent is in the SEALED position. Push the PRESSURE COOKER button, and manually set at HIGH for 75 minutes. When done, let the steam vent for 20 minutes. Move the vent to open, careful not to burn yourself as there may still be a little steam left. Remove lid and let cool a bit, add salt to taste. Remove bay leaves and taste for seasoning. Transfer beans to a serving dish.
  • Beans will thicken once cooled. If too thick, add 2 tablespoons of water at a time, mix well, and repeat until desired consistency.
  • In bottom of slow cooker, add the onion, beans, maple syrup, vinegar, 4 cups water/broth, tomato paste, smoked paprika, garlic powder, mustard, pepper, and bay leaves. Gently stir, until the tomato paste has broken up and dissolved.
  • Cook on HIGH for 8 - 10 hours. Check periodically, adding up to 1/2 cup more water as needed (I've used up to 1 + 1/2 cups for 8 hours). You will also want to check for doneness towards the end so the beans don't overcook. Add salt to taste.

If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.
