Our secret to making this classic finger food extra irresistible? Brush the puff pastry with honey mustard before baking these pigs in blankets.

All-purpose flour, for surface
2 sheets puff pastry (about 1 pound), preferably all-butter
Honey Dijon mustard
18 fully cooked sausages (each about 5 inches long), such as frankfurters, Andouille, or chicken sausages
1 large egg, beaten
Poppy seeds, for sprinkling (optional)
Flaky sea salt, such as Maldon, for sprinkling (optional)
Mustards, such as brown or whole-grain, for serving (optional)

Steps:

  • On a lightly floured work surface, roll each pastry sheet out into a 12-inch square, then cut into 4-inch squares. Lightly brush lower half of each square with mustard, center a sausage on mustard-coated edge, and brush top inch with egg. Roll sausages in pastry, pressing seams to tightly seal. Brush tops with egg, then sprinkle with poppy seeds or flaky salt. Cut each at an angle into thirds. Freeze pigs in blankets, uncovered, on a parchment-lined baking sheet until firm.
  • Preheat oven to 400 degrees. Place frozen pigs in blankets 1 inch apart on parchment-lined baking sheets. Bake until pastry is puffed and golden brown, about 25 minutes. Serve warm with mustards.

Hollanders like plain, substantial food and lots of it. This recipe differs from many of the other pig-in-the-blanket recipes as it does not use sausage. From the Michigan Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons butter
2/3 cup milk
1 1/2 lbs ground pork (lean)
1 1/2 cups rusks, crumbs
1 egg
1/2 cup milk
salt and pepper, to taste

Steps:

  • For the blankets: Sift dry ingredients together in a bowl.
  • Cut butter in with a pastry blender.
  • Mix to a soft dough with milk.
  • Roll out a little thicker than a piecrust and cut into squares.
  • For the filling: Season meat; add crumbs, eggs and milk.
  • Fill squares with meat mixture, pinch ends together, place in a pan and bake in a preheated, moderate oven (350F) 1/2 hour until brown.

Posted for ZWT6. I grew up in a very Dutch community in Iowa and had these all the time growing up....yummy! Prep time is an estimate. Note: These can be made ahead of time; refrigerate or freeze and reheat before serving.

Number Of Ingredients 11

2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup vegetable shortening
1 egg, beaten
1/2 cup milk
1 lb lean pork sausage
1/2 lb ground beef
1/4 cup breadcrumbs
2 tablespoons cream
salt and pepper, to taste

Steps:

  • For Dough:
  • Sift dry ingredients together.
  • Cut shortening into dry mixture.
  • Mix beaten egg and milk and add to the flour mixture.
  • On floured surface, knead dough 8 to 10 times.
  • Divide dough into 2 parts and roll each half to 1/4 inch thickness. Use a medium-sized cookie cutter to cut 15 rounds of dough from each half.
  • For Filling:
  • Blend all ingredients together.
  • Shape 30 small rolls of meat (like link sausages).
  • Assembly:
  • Place 1 roll of filling in each pastry round; fold pastry over the filling and seal edges. Place on baking sheets with raised edges.
  • Bake at 350 degrees for 40 minutes.
  • Serve hot.

8 slices American processed cheese
1 (10 ounce) package refrigerated biscuit dough

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.
  • Bake in preheated oven until biscuits are brown, about 10 to 15 minutes.

  • Using a paring knife, make a few small cuts into the casing of each cocktail sausage to prevent them from splitting in the oven.
  • Dust a clean work surface with flour and place one of the sheets of puff pastry on top. Sprinkle the pastry with flour as well. Using a rolling pin, roll the dough into a 12-inch square, flattening the seams with the rolling pin as you go. Using a pizza cutter or sharp knife, trim the edges so that they are straight. Cut the pastry into a grid, with strips about 1-1/4 inches wide and 2-1/4 inches long. You’ll be making about 8 vertical cuts and 4 horizontal cuts in the pastry (see the picture above for a visual reference; you'll need at least 40 strips and you may have extra).
