NESTLE' OATMEAL SCOTCHIES
One of our families favorite cookies. I often bake these to take to different events and am always asked for the recipe since they are such a different cookie from the standard cookie.

Steps:
- Preheat oven to 375 degrees F.
- Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
- Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
- Gradually beat in flour mixture.
- Stir in oats and morsels.
- Drop by rounded Tablespoonfuls onto an ungreased baking sheet.
- Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies.
- Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
- Pan Cookie Variation: Grease 15x10-inch jelly-roll pan.
- Prepare dough as above.
- Spread in prepared pan.
- Bake for 18 to 22 minutes or until lightly browned.
- Cool completely in pan on wire rack.
OATMEAL SCOTCHIES IN A PAN
Traditional and delicious oatmeal scotchies baked in a convenient 9x13 pan. Perfect every time!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, mash the butter, white sugar, and brown sugar together until smooth and creamy, and beat in the eggs to make a creamy mixture. Gradually beat in the flour mixture, rolled oats, and 1 1/2 cup of butterscotch chips.
- Press the dough into the prepared baking dish, and sprinkle the top with remaining 1/2 cup of butterscotch chips.
- Bake in the preheated oven until the top is golden brown, 30 to 35 minutes. Allow to cool in the pan before cutting into bars and serving.

SAUCEPAN SCOTCHIE BARS RECIPE:
Steps:
- Preheat oven to 350 degrees F. Grease the bottom of a 9x13-inch baking pan.
- In a large saucepan over medium-low heat, melt the butter; remove from heat.
- Add the brown sugar and blend to combine. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, flour, and baking powder. Stir in the chopped nuts.
- Press the cookie mixture into the prepared baking pan and bake approximately 30 minutes (do not overbake). Remove from oven and let cool on a wire cooling rack before cutting.
- Makes 24 squares.

Steps:
- Generously butter a 9x13 inch baking pan. Set aside.
- In a large pot, mix together corn syrup, sugar, and peanut butter. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from heat, and stir in crisp rice cereal.
- Transfer mixture into a well buttered 9x13 inch pan. With your hands well buttered, pat it down into pan.
- In a medium saucepan, over medium low heat, melt chocolate chips and butterscotch chips until smooth. Spread over top of bars and let bars cool. Cut into squares.

I got this recipe from my Mom, who has made these bars for years. She uses pecans for the nuts and sometimes will put them on top, of only half, for those people who don't like nuts.

- Butter the bottom of a 9X13-inch baking pan.
- Melt 1 stick butter in a saucepan.
- Remove from heat and add sugar and blend.
- Add eggs, one at a time, beating well.
- Stir in vanilla, flour and baking powder.
- Mix thoroughly.
- Add nuts and stir lightly.
- Pour into pan.
- Bake at 350F for about 30 minutes.
- Do not overbake.
- Cool in pan and cut into bars.

Batter will be wet. For thicker cookies, chill cookie dough in the fridge for about 30-60 minutes.
- Drop by rounded tablespoon onto parchment lined baking sheets. A cookie scoop works great here because the batter is on the wet side. Bake for 7 to 8 minutes for chewy cookies or 9 to 11 minutes for crisp cookies.
- It's best to not store cookies in an airtight container. Pumpkin recipes tend to get "wet" as they sit and it's better to let them breathe.
