Stir Fried Noodles with Peanut Sauce image

Noodles tossed in a peanut sauce with vegetables and your choice of protein! With the hint of curry flavour, the peanut sauce tastes like satay peanut stir fries you get at Chinese restaurants here in Australia. The flavour of this sauce belies the short list of simple ingredients - good Asian peanut sauces typically have a much lengthier list of ingredients. 1/4 cup / 60g crunchy peanut butter ((Note 1))
1 1/2 tbsp fish sauce ((Note 2))
1 1/2 tbsp dark soy sauce ((Note 3))
2 tsp sugar
2 tsp cornflour / cornstarch
2 garlic clove (, minced)
2 tsp grated ginger
1 1/2 tsp curry powder ((any type))
1/4 cup / 65 ml water
180 g/ 6 oz thinly sliced chicken breast
1 tsp bicarb / baking soda ((optional, Note 4))
100 g/3.5 oz dried rice noodles ((Note 5))
2 tbsp oil
1 garlic (, finely chopped)
1/2 onion (, sliced)
1 cup shredded carrot
1 1/2 cups shredded cabbage
1 cup beansprouts
Finely chopped coriander/cilantro
Crushed peanuts

Steps:

  • Tenderise Chicken (optional, Note 4): Place chicken and bicarb in a bowl and mix with your fingers. Set aside for 20 minutes. Rinse well in a colander then shake off excess water. Roughly pat dry with a paper towel.
  • Sauce: Place all ingredients except water in a bowl and mix (microwave if needed to melt the peanut butter). Add water and mix.
  • Prepare noodles per packet directions (usually soak in boiled water). Drain, set aside.
  • Heat oil in a large skillet or wok over high heat. Add garlic and onion, stir for 30 seconds.
  • Add chicken and cook until the outside changes from pink to white. Add carrot and cabbage, cook until it starts to wilt.
  • Add noodles, bean sprouts and Sauce. Toss for 1 1/2 - 2 minutes or until the Sauce thickens and coats the noodles.
  • Serve immediately, garnished with coriander and peanuts.

12 ounces uncooked whole wheat spaghetti
1/3 cup peanut butter
1/4 cup water
1/4 cup reduced-sodium soy sauce
2 tablespoons lime juice
2 tablespoons honey
2 teaspoons hot pepper sauce
1 garlic clove, minced
3 tablespoons peanut oil
5 cups fresh baby spinach, thinly sliced
2 cups shredded rotisserie chicken
1/2 cup shredded carrots
4 green onions, thinly sliced
1/4 cup chopped unsalted peanuts
2 tablespoons minced fresh cilantro

Steps:

  • Cook spaghetti according to package directions. , Meanwhile, in a small microwave-safe bowl, microwave peanut butter on high for 30 seconds or until melted. Whisk, in the water, honey, soy sauce, lime juice, pepper sauce and garlic. Add the oil in a steady stream, whisking constantly., Drain spaghetti and rinse in cold water. Transfer to a large bowl. Pour dressing over pasta; toss to coat. Add the spinach, chicken, carrots, onions and peanuts. Toss to coat. Sprinkle with cilantro.

1 garlic clove (, minced)
1 tbsp sesame oil
2 tbsp soy sauce
2 tsp brown sugar
1 1/2 tbsp sriracha (, or 2 tsp chili paste/sauce + 2 tsp vinegar)
2 tbsp lime juice
6 tbsp coconut milk ((I used low fat))
2 tbsp water
1/4 tsp salt
10 oz/300g fresh egg noodles ((Note 1))
2 cups red cabbage (, shredded)
2 cups green cabbage (, shredded)
2 carrots (, finely chopped)
1/4 tsp salt
2 scallion/shallot stems (, finely sliced on the diagonal)
1 large red chilli ((not very spicy), deseeded and finely sliced (Note 2))
12 oz / 350g chicken breast (, cut in half vertically and thinly sliced)
Salt and pepper
1 1/2 tsp curry powder
2 tsp sweet soy sauce/ kecap manis ((Note 3))
1 tbsp cooking oil
3 tbsp peanuts (, roughly chopped)

Steps:

  • Mix dressing ingredients in a bowl until smooth.
  • Prepare noodles according to packet instructions.
  • Place both cabbages and carrots in a bowl, add 1/4 tsp salt, toss to combine and set aside for 5-10 minutes to wilt lightly.
  • Place the Satay Chicken ingredients EXCEPT the oil in a bowl and toss to coat.
  • Heat oil in a non stick fry pan over high heat. Add the chicken and cook for 3 minutes until golden, then transfer to a plate.
  • Toss noodles and remaining salad ingredients with chicken and Dressing, then serve. Serve at room temperature or warm.

8 ounces stir-fry rice noodles
1/3 cup crunchy peanut butter
2 tablespoons soy sauce
2 teaspoons grated peeled ginger
Kosher salt and freshly ground pepper
1 pound ground beef sirloin
2 tablespoons roasted peanut oil (or 1 tablespoon each sesame oil and vegetable oil)
3 large shallots, thinly sliced
1 9-ounce package broccoli slaw
1 teaspoon Sriracha, plus more for serving
1/2 cup chopped fresh cilantro
Lime wedges, for serving

Steps:

  • Put the noodles in a bowl; cover with warm water and soak at least 20 minutes. Meanwhile, whisk the peanut butter, soy sauce, ginger, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Add the beef and mix with a spoon to combine.
  • Heat 1 tablespoon peanut oil in a large skillet over high heat. Add the shallots and cook, stirring, until softened, about 4 minutes. Add the broccoli slaw and cook, stirring, until it starts wilting, about 3 minutes. Transfer the vegetables to a medium bowl. Heat the remaining 1 tablespoon peanut oil in the skillet, then add the beef mixture. Cook, stirring occasionally, until browned, about 7 minutes.
  • Meanwhile, gently stir the noodles to separate. Reserve 1/2 cup soaking water, then drain the noodles. Return the vegetables to the skillet with the beef and stir to combine. Add the noodles, the reserved soaking water and the Sriracha. Cook, gently tossing, until warmed through, about 4 minutes. Top each serving with the cilantro; serve with lime wedges and more Sriracha.

1/2 tbsp sesame oil
1 packet (approx 320g) mixed stir fry vegetables
2 packets of straight-to-wok noodles
1 tbsp soy sauce
3 tbsp smooth peanut butter
6 tbsp coconut milk
juice of 1/2 lime
To garnish: peanuts, coriander and sesame seeds

Steps:

  • Heat the oil in a wok or large frying pan. Add in the vegetables and stir fry for 2 minutes.
  • Meanwhile make the sauce by putting the soy sauce, peanut butter, coconut milk and lime juice into a jar. Put the lid on and shake until all the ingredients have combined.
  • Add the sauce and the noodles to the wok and cook for a further 2-3 minutes until the noodles have warmed through.
  • Garnish with peanuts, coriander and sesame seeds and serve immediately.

For the sauce
4 tbsp smooth peanut butter
2 tsp dark soy sauce
1 tsp chilli flakes
Juice 1 lime
For the noodles
1 tbsp sunflower oil
Small handful sugar snap peas, halved
1 small carrot, finely sliced
2 spring onions, sliced on the diagonal
2 x 150g packs soft egg-free ready-to-wok noodles
2 tsp sesame seeds, small handful fresh coriander, 1 red chilli, deseeded and finely sliced, and roughly chopped peanuts to garnish

Steps:

  • To make the sauce, whisk together the peanut butter, soy sauce and chilli flakes along with 200ml cold water in a bowl. Whisk in the lime juice to form a smooth paste, adding an extra splash of water to loosen the mixture if needed.
  • For the noodles, heat the oil in a wok over a high heat. When the oil is hot, throw in the vegetables and stir-fry for 1-2 minutes. Separate the soft noodles and add them to the wok. Pour in the peanut sauce and stir-fry for another minute. Serve sprinkled with sesame seeds, coriander, chilli and peanuts. This is a recipe that I've tweeked and adjusted to yield a warm noodle side-dish. It can also stand alone as a main dish. It's quick and easy and full of flavor! I serve it with Chicken Satay. Leftovers are yummy hot or cold.

12 ounces linguine
4 tablespoons sesame oil
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions.
  • Drain and return to pot.
  • Add 2 TBSP sesame oil and toss to coat.
  • Set aside.
  • Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat.
  • Add green onions, carrots, stir-fry veggies, garlic and ginger.
  • Saute until vegetables soften, about 4 minutes.
  • Add honey, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well.
  • Simmer sauce 2 minutes.
  • Pour sauce over pasta and toss well.
  • Transfer to platter and serve warm.
  • Garnish with additional green onions, if desired.
  • Yields 8 side dish servings or 4 main dish servings.
  • **Chili-Garlicsauce can be increased or decreased depending on how spicy you like your dish.
  • As written, this recipe has some heat, but is still edible for my toddler son.

3 tablespoons sweet chili sauce
100 ml thick coconut milk
100 ml vegetable stock

300 g pre cooked noodles
2 tablespoons sesame oil
5 cm fresh ginger, grated
150 g broccoli florets
1 red pepper, deseeded and sliced
75 g baby corn, halved lengthways
50 g mange-touts peas, trimmed
3 garlic cloves, crushed
1/4 cup fresh basil
25 g roasted peanuts, chopped

Steps:

  • In a bowl mix the peanut butter, chilli sauce, coconut milk, vegetable stock and soy sauce to make a smooth sauce. (this can be kept in a container for up to 3 days)
  • Heat the oil in a wok and stir fry the broccoli, red pepper, baby corn and ginger for 3 minutes Add the mange tout and garlic and cook for a further 2 minutes Pour over the satay sauce and bring to the boil.
  • Drain the noodles or remove from pack and add to the wok. Stir fry over a high heat for a couple of minutes.
  • Serve with the basil leaves and peanuts sprinkled over.
