½ cup coconut milk
1 clove garlic, minced
1 teaspoon curry powder
1 ½ teaspoons brown sugar
½ teaspoon salt
½ teaspoon ground black pepper
¾ pound skinless, boneless chicken breast halves - cut into 1 inch strips
1 cup coconut milk
1 tablespoon curry powder
½ cup creamy peanut butter
¾ cup chicken stock
¼ cup brown sugar
2 tablespoons lime or lemon juice
1 teaspoon soy sauce
Salt to taste
10 (6 inch) wooden skewers, or as needed, soaked in water for 30 minutes

Steps:

  • Stir together 1/2 cup coconut milk, garlic, 1 teaspoon curry powder, brown sugar, salt, and pepper until the sugar has dissolved. Toss marinade with the chicken, cover, and marinate for at least 2 hours.
  • Bring 1 cup coconut milk, 1 tablespoon curry powder, peanut butter, chicken stock, and 1/4 cup brown sugar to a simmer in a saucepan over medium-high heat. Simmer for 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime juice and soy sauce; season to taste with salt.
  • Preheat a grill for medium-high heat.
  • Thread marinated chicken onto skewers, then grill 4 to 5 minutes per side, or until cooked through. Serve with warm peanut sauce.

Bamboo skewers, soaked in cold water for 2 hours
1 cucumber, cut into small pieces
1 small onion, quartered
oil, for basting
3 tablespoons oil
2 stalks lemongrass, white parts only
2 cloves garlic, peeled
6 small shallots or pearl onions, peeled
2 teaspoons turmeric powder
1 teaspoon coriander powder
1 teaspoon chili powder
1/2 tablespoon salt or more to taste

Steps:

  • Cut the chicken meat into small cubes. Set aside.
  • Blend all the he Marinade ingredients in a food processor. Add a little water if needed.

A fast, old-school street food, this dish can be found all over Malaysia and Indonesia. Its origins seem to point back to Java in Indonesia, where the concept of kebabs was brought by Muslim traders from India and Arab countries. Peanuts were introduced by Spanish and Portuguese explorers and they thrived in the tropical climate, which is why you see them used in so many garnishes and sauces there today.

1 level teaspoon medium curry powder
½ level teaspoon ground cumin
1 heaped teaspoon turmeric
3-4 fresh chillies
2 cloves of garlic
5 cm piece of ginger
1 bunch of fresh coriander (30g)
6 tablespoons crunchy peanut butter
2 tablespoons low-salt soy sauce
6 spring onions
4 limes
8 free-range chicken thighs, skin off, bone out
1 handful of shelled peanuts
groundnut oil
¼ of a watermelon (1.5kg), or 1 ripe pineapple

Steps:

  • Gently heat the curry powder, cumin and turmeric for 1 minute in a dry pan on a medium heat.
  • Deseed 2 chillies and peel the garlic and ginger. Place in a blender with the toasted spices and coriander (reserving a few nice leaves in a bowl of cold water for later).
  • Add the peanut butter, soy sauce, the green parts of the spring onions, the zest of 2 limes and the juice of 3. Blitz until almost smooth, loosening with a few splashes of water, if needed, then taste and season to perfection.
  • Cut each chicken thigh into 4 pieces and toss with half the satay sauce. Divide and thread onto 4 skewers and marinate in the fridge for at least 2 hours, but preferably overnight.
  • If you're using a barbecue, get it going 1 hour before you want to cook. If you're using a griddle pan, cut your wooden skewers to fit and preheat the pan.
  • Get a garnish plate together - drain the coriander leaves, finely slice the whites of the spring onions, finely slice the remaining chillies and wedge up the remaining lime. Toast the peanuts in a dry pan until golden, then crush and add to the plate.
  • When you're ready to cook, oil and lightly season the chicken on both sides, then place on your medium-hot barbecue or griddle pan. Cook for around 15 minutes, or until beautifully gnarly and golden, turning regularly.
  • Serve on a platter with the rest of the sauce on the side. Sprinkle over the garnishes and slice up some nice ripe wedges of watermelon or pineapple to serve on the side - heavenly.

6 skinless chicken drumsticks and 6 skinless chicken thighs
zest and juice 1 lime
2 lemongrass , very roughly chopped
2 thumb-size chunks ginger , very roughly chopped
3 garlic cloves
2 tbsp peanut butter , crunchy or smooth
½ tsp each turmeric and ground cumin
160ml can coconut cream
20g pack coriander , plus extra to serve, if you like
a little oil , for greasing
sweet chilli sauce or mango chutney , to serve

Steps:

  • Slash several deep cuts into each drumstick and thigh, then put into a large, non-metallic container. Put the lime zest and juice, lemongrass, ginger, garlic, peanut butter, spices, coconut cream and 1 tsp salt into a food processor, then whizz until it's as smooth as you can get it. Roughly chop the coriander leaves and finely chop the stalks, then add to the mix. Pour the marinade over the chicken, massage it into the meat with your hands, then leave to chill for at least 2 hrs, or up to 24 hrs if you have time.
  • Heat oven to 190C/170C fan/gas 5. Line 1-2 large baking trays with foil and grease with a little oil. Spread out the chicken over the trays, skin-side up, and roast for 1 hr, or until the chicken is cooked through and the coating golden and slightly charred in places. Cool, then chill well and pack in a container, ready to transport. Scatter with a few more coriander leaves to serve, if you like.

small piece ginger
2 garlic cloves
zest and juice 1 lime
1 tsp clear honey
1 tbsp soy sauce
1 tbsp mild curry powder
3 tbsp smooth peanut butter
500g pack skinless chicken breast fillets
165ml can coconut milk
1 tsp vegetable oil
cooked rice and lime wedges, to serve
1 cucumber
2 tbsp white wine vinegar
1 tbsp golden caster sugar
sweet chilli sauce (optional)
bunch coriander leaves picked (optional)

Steps:

  • KIDS the writing in bold is for you. GROWN-UPS the rest is for you. Make a yummy marinade. Peel the ginger and help them to finely grate it and tip it into a bowl. Repeat with the garlic and lime zest. Halve the lime and get your child to juice it, then mix it in a bowl with the honey, soy, curry powder and peanut butter. Get them to give it a good mix, adding a small splash of water if it's too stiff, then help them spoon two-thirds of the mix into a small pan. Set aside for Step 4.
  • Now for some chicken bashing! Put the chicken in the sandwich bag, one breast at a time, getting your child to flatten each one with a rolling pin or a meat mallet - this isn't essential, but they like doing it.
  • Mix the chicken with the marinade you made. Cut the chicken into strips, tip it into the remaining third of the peanut-butter mix, then get your child to stir well. Cover with cling film and chill until required. This can be done up to 3 hrs ahead.
  • Cook your tasty sauce. While the chicken is marinating, pour the coconut milk into the pan and get your child to stir together with the peanut butter mix. The sauce needs to be heated gently and stirred - suitable for confident seven- or eight-year olds, under strict adult supervision.
  • 'Sew' the chicken onto the skewers. The chicken needs to be threaded into 'S' shapes onto the skewers. Get your child to thread the skewers away from themselves, being careful of the sharp points. Younger ones might find this a little fiddly, so they could just push on small chunks.
  • Paint the tray with oil and cook the chicken. Heat the grill to high and get your child to brush a baking tray with oil. They can then line up the skewers on the tray. Grill the skewers for about 10 mins, turning occasionally, until lightly charred.
  • Make cucumber ribbons with a peeler. Using a swivel-blade peeler, get your child to peel the cucumber into a bowl, then carry on peeling the cucumber flesh into ribbons until they get to the seeds. Repeat with each side of the cucumber.
  • Mix a dressing for the cucumber. Get your child to mix the vinegar and sugar until the sugar dissolves - explain what dissolves means. Add the sweet chilli, if using, then pour over the cucumber. Add coriander if your child likes it, or serve on the side for the grown-ups. To serve, put the skewers on a platter, the sauce and salad in bowls, and serve with rice and lime wedges on the side.

1kg chicken meat
2 teaspoons turmeric powder
80g sugar
1 teaspoon ground white pepper
2 teaspoons coriander powder
2 teaspoons fennel powder
2 teaspoons cumin powder
1 tablespoon sweet soy sauce
2 teaspoons salt
1/2 cup (about 125ml) vegetable oil
1 medium size onion (about 120g)
10 cloves garlic
120 g galangal
10g belacan
70g lemongrass

Steps:

  • Cut the chicken meat into bite-size pieces of 1.5 cm cubes.
  • Cut some chicken skin into small pieces for later use.
  • Add Marinade (A) with the chicken
  • Cut the ingredients in Marinade (B)into small pieces and blend with the vegetable oil until it becomes a paste. Combine with the chicken.
  • Marinate it for at least three hours before grilling, or better for at least 24 hours if time is permitted.
  • Soak the wood skewers in water for half a before using them.
  • Pierce the skewer through the chicken meat, alternate with a piece of chicken skin that you reserved earlier. Leave a small gap between each piece of meat.
  • Grill over a small flame until the satay turns golden brown with some char marks.

This delicious easy-to-make grilled chicken satay recipe is jam-packed with flavor is the perfect appetizer to serve up to your guests.

1 peeled shallot
4 garlic cloves
2 teaspoons ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
2 tablespoons palm or brown sugar
1 seeded red finger (Fresno, or jalapeño pepper)
1 " piece peeled fresh ginger
juice of 1 lime
2 tablespoons peanut oil
2 tablespoons soy sauce
¼ cup sweet soy sauce (kecap manis)
3 pounds dark and/or white chicken meat cut into ½" pieces
1/2 recipe for peanut sauce

Steps:

  • Add everything except for the chicken to a food processor or a blender and process or blend until smooth. Set aside.
  • Prepare the chicken removing and skin or bones and cut into small ½" pieces and add to a large bowl.
  • Add the marinade onto the chicken and optionally season with salt and pepper. Mix everything together completely. Cover and keep in the refrigerator for at least 4 hours or up to 24 hours.
  • When you are ready to cook, preheat the oven to high heat (450° to 550°) and soak some wooden skewers in water for 20 minutes so they do not catch on fire while grilling.
  • Next, skewer the chicken leaving about 3" at the bottom of the skewer to make it easy to hold and eat. I got 12 8" skewers.
  • Place the chicken on the grill and cook for 3-4 minutes per side or until browned and cooked throughout.
  • Optionally garnish with chopped fresh cilantro and serve with peanut sauce.

450g/1lb boneless, skinless chicken breasts, cut into 2.5cm/1in cubes
1½ tbsp groundnut (peanut) oil
3 tbsp light soy sauce
1 tbsp Shaoxing rice wine or dry sherry
salt
freshly ground black pepper
2 tsp cornflour
3 tbsp sesame paste or smooth peanut butter
1 tbsp chilli bean sauce (available from Asian grocers)
1 tbsp coarsely chopped garlic
2 tsp chilli oil
2 tbsp Chinese white rice vinegar or cider vinegar
2 tbsp light soy sauce
salt
freshly ground pepper
2 tsp sugar
2 tbsp hot water
50g/2oz thinly sliced onions
100g/4oz thinly sliced cucumbers

Steps:

  • In a medium-sized bowl, combine the marinade ingredients, stirring to combine. Add the chicken, mix well and leave to marinate, covered, for at least 20 minutes at room temperature. Drain, discarding the marinade.
  • For the sauce, put all the sauce ingredients in a blender or food processor and process until smooth.
  • Heat a wok over high heat until it is very hot, then add the groundnut oil. When the oil is very hot and slightly smoking, add the chicken pieces and stir-fry for another five minutes until the chicken is browned.
  • Turn the heat down to low, add the sauce and continue to stir-fry for another five minutes.
  • Turn onto a warm platter, garnish with the onion and cucumber and serve at once.

1/4 Cup coconut milk (soya sauce )
1 Handful sesame seeds
3 Tsps curry powder
2 Tsps turmeric
5 Cloves crushed garlic
2 Tbsps grated fresh ginger
2 Tsps brown sugar
1 Tbsp fish sauce
6 skinned & bonnless chicken thighs, cut in to 1inch strips
Sprinkle of salt & pepper
3 Tbsps smooth peanut butter
1 juice of a lime
1 Tbsp soya sauce
2 Tbsps chilli & garlic sauce
1 Tsp brown sugar
1 Tbsp grated fresh ginger
2 Tbsps water

Steps:

  • blend the first section of ingredients (except the chicken and sesame seeds) in a food processor. Then stir in the sesame seeds using a spoon. Add the chicken strips to a zip freezer bag and spoon in the mixture. For best marinating results leave over night.
  • for the sauce, mix the second set of ingredients together in a small bowl using a fork. Add a little water at a time until you get the sauce to the consistency you prefer,
  • Add a little sesame oil or olive oil to the wok and cook the chicken for 10 minutes or until the chicken is cooked through. Drizzle over the sauce and enjoy with rice.

  • To Prep Combine chicken, curry powder, 1 tsp sugar, 1 tsp salt, 2 tsp red Thai curry paste and ¼ cup of the TCC Premium Coconut Milk (save remaining for the satay sauce) mix well and set aside to marinate for at least 20 mins, or overnight. Thread 6-7 pieces of chicken on to each skewer. Place remaining TCC Premium Coconut Milk, 1 tsp salt, ¼ cup white sugar, 2 tbsp Thai red curry paste, peanut butter, apple cider vinegar, soy sauce and water in a saucepan over medium-low heat. Stir to combine then simmer, stirring every now and then, for 5 mins. Cover with lid and keep warm while cooking skewers.
  • To Cook Heat olive oil over BBQ on medium-high heat. Cook skewers, turning until cooked through and chicken has some golden colour to it.
  • To Serve Serve salad in bowls and top with 2 chicken skewers. Drizzle with satay sauce or serve the sauce on the side in a dipping bowl. Enjoy!
