Southwest Stuffed Shells - Classic Stuffed Shells with southwest flavors. These are great to cook with your kids because they can help by stuffing the shells.

Number Of Ingredients 12

4 tablespoons olive oil
1 large onion, chopped
1 1/2 pounds ground meat (Turkey, chicken, or beef)
1 box jumbo shells
1 tablespoon chili powder
2 teaspoon granulated garlic
2 teaspoon ground cumin
7 ounce can fire roasted green chiles
1 can olives, sliced
1 can refried beans
1 can enchilada sauce
1/2 pound shredded cheddar cheese

Steps:

  • In a saute pan or cast iron skillet, heat 2 tablespoons of the olive oil and cook the onions until translucent. Add ground meat and cook about 80% of the way done. Drain excess fat. Season the meat with the chili powder, granulated garlic, and ground cumin.
  • While the meat is cooking, bring a stockpot full of water to a boil. Add olive oil and salt to the water. Add 1 pound box of jumbo shells and cook according to the package directions, just before the al dente stage. Remove the shells from the water and drain on a plate lined with paper towel. Drizzle with olive oil and let cool enough to be handled.
  • In a casserole dish, cover the bottom with enchilada sauce. Taking a shell, stuff with refried beans, cooked meat, olives, and cheese. Fill all the shells and line them up in the casserole dish. Top each with two spoonfuls of enchilada sauce.
  • Cover and bake at 350 degrees for approximately 30 minutes until the cheese is bubbly and the pasta has finished cooking.
  • Serve and enjoy!

24 uncooked jumbo pasta shells
1 cup shredded part-skim mozzarella cheese
1 cup cubed cooked turkey
1 cup cooked stuffing
4 green onions, chopped
1 cup mashed sweet potatoes
1/4 teaspoon chili powder, optional
1/2 cup grated Parmesan cheese
1 cup turkey gravy, warmed

Steps:

  • Preheat oven to 350°. Cook shells according to package directions for al dente., Meanwhile, in a large bowl, mix mozzarella cheese, turkey, stuffing and green onions. In a small bowl, stir sweet potatoes and, if desired, mix in chili powder., Drain shells; fill each with 2 tablespoons stuffing mixture and 2 teaspoons sweet potato mixture. Arrange in a greased 11x7-in. baking dish; sprinkle with Parmesan cheese. Bake, covered, 15-20 minutes or until heated through. Serve with gravy.

8 ounces shell macaroni, cooked according to package instructions
1 lb hot Italian sausage, chopped finely
1 (15 ounce) ricotta cheese
1 small onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil
1/4 teaspoon nutmeg
2 tablespoons flat-leaf Italian parsley, chopped
1 egg
1 cup parmesan cheese, grated and divided
1 1/2 cups mozzarella cheese, shredded and divided
1 (26 ounce) jar marinara sauce, any flavor you like
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package instructions.
  • While pasta is cooking, cook chopped sausage until browned and cooked thoroughly inside.
  • In a large mixing bowl, combine all remaining ingredients except marinara sauce(reserve 1/2 cup mozzarella cheese and 1/2 cup parmesan cheese). Add salt and pepper to taste. Add cooked sausage to mixture.
  • Drain pasta when it is al dente.
  • Pour about 1/2 cup of the marinara sauce in the bottom of a 9x12 baking pan.
  • Pick up one shell at a time and carefully stuff 1-2 tablspoons of the mixture into the shell. Place the stuffed shells next to one another inside the baking dish.
  • Pour the remaining marinara sauce all over the tops of the stuffed shells.
  • Cover dish with foil and bake approximately 40 minutes or until the sauce is bubbling.
  • In the remaining 5 minutes, sprinkle remaining 1/2 cup mozzarella cheese and 1/2 parmesan cheese on top.
  • Serve hot!
