Sardine Fish Pie image

Scrumptious fish pie that is easy to make. I have also made this dish with tuna mixed with ½ cup tomato sauce. Adapted from Theresa Verslanking

2 cups potatoes, grated
1 tablespoon sour cream
2 teaspoons baking powder
1 (410 g) can sardines in tomato sauce
3/4 cup mayonnaise
2 onions, chopped
2 teaspoons parsley
2 eggs
2 tablespoons vinegar
1 teaspoon salt
1 pinch cayenne pepper

Steps:

  • Preheat oven to 180ºC and grease pie dish.
  • Mix potatoes with sour cream and baking powder and press into pie dish to form crust.
  • Mix all filling ingredients and pour into crust. Bake for 1 hour.

  • Put the potatoes in a pan of salted cold water. Bring to the boil, then turn the heat down and simmer for 6-8 minutes or until tender. Drain well, leave to steam dry in the pan, then mash coarsely using a potato masher or the back of a fork.
  • Put the sardines in a bowl, mash lightly with a fork, then add the spring onions, egg, dijon mustard, dill, lemon zest, cayenne pepper and 50g plain flour. Mix until combined, add the mashed potato, season generously with salt and black pepper, then mix again.
  • With lightly floured hands, shape the mixture into 8 even patties. Put each one on a plate as you work, then loosely cover and chill for 10 minutes.
  • Heat 1 tbsp of the vegetable oil in a large non-stick frying pan then fry half the fishcakes for 3-4 minutes on each side until golden and piping hot. Put on a plate and keep warm. Repeat with the remaining oil and fishcakes. Serve with salad and lemon wedges for squeezing over.

  • To make the filling, pour half of the oil from one can of sardines into a skillet. Let it heat up on medium heat then saute the onions until fragrant. Add in garlic and stir then add in the green onions and carrots. Mix until well combined then you push the vegetables to one side of the pan. Put in all the sardines without the oil into the pan. Then mash them, being careful not to make it too mushy. Mix the mashed fish together with the sauteed veggies and turn off the heat.
  • To make the dough, combine flour, butter, salt and baking powder in a bowl. Mix using your fingers until the mixture looks like breadcrumbs. Add the cold water and mix to form a dough.
  • To make the pie, roll out about 1/8th of the dough and place on an open large hand pie maker. Put in two tablespoons of the filling. Then press the hand pie maker together to seal the edges. Repeat process wth the rest of the dough. If you do not have a hand pie-maker, simply roll out the dough into a large rectangle then use something with a round edge like the lid of a small pot to form circles on the dough. Place your filling in the middle of each circle then cover to form a half moon. Press the edges with a fork so they seal.
  • Place pies on a baking tray lined with parchment paper. Beat an egg then use a pastry brush (or your hands) to rub the egg all over the pies.
