A quick and easy microwave recipe for mashed potatoes. This is a great way to make mashed potatoes without heating up the kitchen when it is hot outside.

Number Of Ingredients 4

6 medium potatoes, peeled and quartered (about 2 pounds)
1/2-3/4 cup milk
1/4 cup butter
salt and pepper

Steps:

  • Rinse peeled and quartered potatoes.
  • Arrange potatoes in medium glass bowl.
  • Cover with plastic wrap.
  • Cook at HIGH for 9 to 10-1/2 minutes; stir once. You can set your kitchen timer for a reminder to stir. Potatoes should be tender.
  • Let stand, covered, for 5 minutes.
  • During this 5 minute standing time, combine milk, butter, salt and pepper in a large glass bowl or 8-cup glass pyrex measuring cup.
  • Cook milk mixture at MEDIUM for 2 to 3 minutes or until hot.
  • Drain potatoes.
  • Add potatoes to the hot milk mixture; mash until smooth.

I have been doing this for years and I love it. Five minutes in the micro, then add your favorite toppings or ingredients and you have mashed spuds. I like to add some butter, maybe a little chicken broth, you can do sour cream, chives, herbs, cheese, bacon, cream or milk. Pretty much anything you want. I am listing my basic recipe, but use your imagination. You can add anything you want to these. Nothing like mashed potatoes in 5-8 minutes without the boiling water, peeling or the time involved.

8 red potatoes, cut into bite size pieces (you can use yukon gold too which work great, and if you want peel the potatoes, I just like skins on)
2 tablespoons water
1/2 cup liquid (you can use cream, milk, broth, or a mix of both)
1 tablespoon butter
salt
ground black pepper
you can throw some sour cream in. health conscious use all broth. you can also add bacon, grated onion or cheese, etc

Steps:

  • Potatoes -- prepare your spuds. Just wash good and cut in bite size pieces. Place in a microwavable bowl, one that you will be serving in and add the water and cover with plastic wrap.
  • Cook -- Cook on high for 3-5 minutes, remove plastic wrap and stir. Put the saran wrap back on and cook another 2-3 minutes until the spuds are soft.
  • Dress -- Now, the spuds are done. What do you with them is up to you. Butter to me is a must to me and you can go lighter if you want. Add some liquid the 1/2 cup -- either broth, cream, milk, and of course salt and pepper. Then use a fork or potato masher to smash them up.
  • Now they are done -- NOW WHAT? -- Sour Cream? Bacon? Cheese? Scallions? Herbs? Onion? Anything you want.
  • Finish -- After adding all your flavors, you can return return to the microwave covered in the plastic wrap for just 1 minute until heated and serve. But many times the potatoes are hot enough and any extras will heat up with any additional cooking time.
  • 1 pot clean up, easy and quick.

1 medium red potatoes
1 -1 1/2 tablespoon extra virgin olive oil
1/2 tablespoon chopped garlic
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon grated cheese (whatever you like)

pepper

Steps:

  • Wash and cube the potato.
  • Put the extra virgin olive oil, garlic, salt and pepper on top and mix together well, so that each peace gets an even amount.
  • Microwave for 1 minute and 15 seconds.
  • Add butter and cheese; microwave for another 15 seconds.

As a meat and potatoes kind of guy, mashed potatoes is my favorite side dish. I've been making this for years, and it's the main thing I'm asked to make for family gatherings. These mashed potatoes are better than any I've ever found anywhere

8 -10 medium idaho russet potatoes
1/4 cup milk
2 tablespoons sour cream
1/2 cup blue bonnet margarine
salt
pepper
parsley flakes, to top

Steps:

  • Peel, cut up and boil potatoes until tender.
  • Drain water and put potatoes in a mixing bowl.
  • Add margarine, sour cream and milk.
  • Use an electric mixer and mix until desired consistency.
  • The KEY here is to add salt and pepper to taste.
  • You might add anywhere from a teaspoon to several tablespoons of salt, just depending on how much you like salt.
  • Pepper is the same way, although use it more sparingly.
  • Just remember to add a little at a time, until you get it where you like it.
  • Once that is done, I usually put a couple of pats of margarine on top of the finished potatoes to let it melt.
  • Then sprinkle parsley over it.
  • This will make the best mashed potatoes I've ever found anywhere.
