TACO SALAD DIP

I made this up with ingredients I had when I needed something to take to a Cinco de Mayo luncheon. It has the ingredients of a layered taco dip, but the addition of lettuce makes it like a salad. The best of both worlds!

1 (15 ounce) can ranch-style beans, drained
1 (14 ounce) can refried beans
½ (1 ounce) package taco seasoning mix
1 (8 ounce) container sour cream
1 (1 ounce) package dry onion soup mix
1 (8 ounce) jar salsa
¼ head iceberg lettuce, torn into bite-sized pieces
½ cup crushed tortilla chips
¼ cup shredded Cheddar cheese

Steps:

  • Mix ranch-style beans and refried beans together in the bottom of a shallow casserole dish; season with taco seasoning mix and stir. Spread the bean mixture into an even layer.
  • Mix sour cream and onion soup mix together in a small bowl; spread over the bean mixture. Top the sour cream layer with salsa.
  • Refrigerate dish until the bean layer firms, about 30 minutes.
  • Layer lettuce atop the salsa. Sprinkle tortilla chips in a layer over the lettuce. Finish with a layer of Cheddar cheese.

This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

1 (8 ounce) package cream cheese, softened
1 (16 ounce) container nonfat sour cream
1 (1.25 ounce) package taco seasoning mix
¼ head iceberg lettuce - rinsed, dried, and shredded
1 cup shredded Cheddar cheese
3 chopped tomatoes
1 green bell pepper, chopped
1 (2.25 ounce) can black olives, drained

Steps:

  • In a medium-sized mixing bowl, combine cream cheese, sour cream and taco seasoning. Spread this mixture in a 9-inch (or a little larger) round serving dish. Top the mixture with lettuce, Cheddar cheese, tomatoes, bell pepper and black olives.

My friend, Sara Lou, recently brought this to a party. It is delicious and she was willing to share the recipe with me. Neither she or I like green peppers so we do not add them. Serve warm with corn tortilla chips.

2 cups sour cream
2 (8 ounce) packages cream cheese, softened
2 cups shredded four-cheese Mexican blend cheese
1 (1 1/4 ounce) package taco seasoning mix
1 (4 1/2 ounce) can sliced black olives, drained
1 (4 ounce) can diced green chilies, drained
1/2 cup green pepper, chopped (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Beat sour cream, cream cheese and mexican cheese blend in a medium bowl with an electric mixer until well combined.
  • Stir in remaining ingredients.
  • Pour into baking dish that has been sprayed with cooking spray. (she used a deep dish pie dish).
  • Bake 50 minutes or until hot and bubbly.
  • Serve with corn tortilla chips.

This is such a hit that my family has me make it for every party. I use low fat but regular or fat free can be used.

1 (15 ounce) can refried beans
2 (8 ounce) packages reduced-fat cream cheese
8 ounces light sour cream
1 (1 1/4 ounce) package taco seasoning
3/4 cup taco sauce
1 (10 ounce) jar salsa
jalapeno
2 cups shredded mexican cheese

Steps:

  • In a glass casserole dish put refried beans on bottom.
  • Mix together cream cheese, sour cream, and taco seasoning. (I added about a tablespoon of jarred jalepeno juice).
  • Layer the cream cheese mixture on top of refried beans.
  • Put taco sauce on next.
  • Next layer the salsa.
  • Put jalepenos on top of salsa.
  • Last put the cheese.
  • Bake at 350 until cheese is hot and melted.
  • Enjoy with your favorite chips or veggies.
