SOFT SUGAR COOKIES
These soft cookies are always a hit, so I often stir up a big batch. I usually add food coloring to the frosting to coordinate with the current holiday. -Coleen Walter, Bancroft, Michigan

Steps:
- Preheat oven to 350°. Cream butter and sugar until light and fluffy; beat in extracts and eggs, one at a time. In another bowl, whisk together flour, cream of tartar, baking soda, salt and nutmeg; gradually beat into creamed mixture. , Drop dough by rounded tablespoonfuls 3 in. apart onto parchment-lined baking sheets; flatten slightly with bottom of a glass dipped in sugar. Bake until edges begin to brown, 8-10 minutes. Remove from pan to wire racks; cool completely., For frosting, beat butter, confectioners' sugar, extract and enough water to reach desired consistency. If desired, tint with food coloring. Spread over cookies.

SARAH'S RAISIN COOKIES
A hint of almond flavor makes these special. They don't last long in our cookie jar!

Steps:
- In a small bowl, combine the eggs, vanilla extract, almond extract and raisins. Cover and refrigerate for at least one hour. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Combine the flour, baking soda, salt and cinnamon; stir into the sugar mixture. Mix in the raisin mixture until well blended. Stir in oats. Roll into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

EASY- SARAH'S CHOCOLATE CHIP COOKIES
These cookies are so easy, I've been making them since I was 6 years old. My aunt is a professional baker, and gave me the recipe as a child. I still use, and now my kids do too. One bowl, one fork, one pan and a set of measure cups and spoons. - Note- Yes, these dooo flatten quite a bit, but I've also noticed that if there's even a teaspoon too much butter, or a bit less baking soda that happens, so when I mix the sugars into the butter, if the mix has any extra butter in it, I try to either drain it off, or spoon it out.... or I add more B.soda.... Seems to help a bit.

Steps:
- Melt butter in a large, microwave safe bowl.
- Add both sugars, stir until smooth and sugars are dissolved.
- Add egg and vanilla. Mix well.
- Add flour, salt, baking soda and chocolate chips.
- Freeze for 1/2 an hour, or refrigerate for 1 hour.
- Bake at 325 F for approximately 8-10 minutes on an UN-greased cookie sheet. If you overcook, they aren't as good. These cookies disappear fast, so eat them faster. If you can't eat them right away, put them in the freezer, and they stay nice and chewy longer.

SARAH'S MOANABLE SOFT SUGAR COOKIES
These cookies make me moan ... they are so good. We have been making them for years. They are so soft.

Steps:
- Mix all the wet ingredients together
- Then add the dry ingredients.
- Chill dough for several hours preferably overnight.
- Roll out onto a flour covered surface and cut with cookie cutters. (Keep dough not being used in the fridge as this dough softens quickly.).
- Bake at 350 for 8-10, let cool then frost.
- (We make both large and small cookies and we usually end up around 80-100 cookies).
