GRANDMA'S CLASSIC POTATO SALAD



Grandma's Classic Potato Salad image

When I asked my grandmother how old this classic potato salad recipe is, she told me that her mom used to make it when she was a little girl. It has definitely stood the test of time. -Kimberly Wallace, Dennison, Ohio

6 medium potatoes, peeled and cubed
1/4 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons salt
1 teaspoon ground mustard
1 teaspoon pepper
3/4 cup water
2 large eggs, beaten
1/4 cup white vinegar
4 hard-boiled large eggs
2 celery ribs, chopped
1 medium onion, chopped
Sliced green onions, optional

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain and cool to room temperature., Meanwhile, in a small heavy saucepan, combine flour, sugar, salt, mustard and pepper. Gradually stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat and cool completely. Gently stir in vinegar., Chop and set aside 1 hard-boiled egg; chop the remaining hard-boiled eggs. In a large bowl, combine the potatoes, celery, onion and eggs; add dressing and stir until blended. Refrigerate until chilled. Garnish with reserved chopped egg and, if desired, sliced green onions.

This is a tangy potato salad that reminds me of German Potato Salad. Serve well chilled. Makes a big bowl so it's great for potlucks and cookouts.

5 lbs potatoes
1 medium onion, chopped
8 slices bacon, cooked &,crumbled
2 hard-boiled eggs, chopped
1/4 cup chopped fresh parsley
1/4 teaspoon pepper
1/4 cup lemon juice
1/4 cup grated parmesan cheese
1 tablespoon salt
1 tablespoon Worcestershire sauce
1/2 cup vegetable oil

Steps:

  • Cook potatoes in boiling water to cover 20 to 30 minutes or until tender; drain.
  • Peel& cube potatoes.
  • Combine potato, onion, bacon, eggs, and parsley; toss gently.
  • Combine oil& remaining ingredients, beating with wire whisk until blended.
  • Pour dressing over potato mixture, and toss gently to combine.

When it comes to potato salad, you like what you like. This recipe is mayonnaise-based, but if you like a mustard-based potato salad, just experiment a little. Add some yellow mustard and leave out a little bit of the mayonnaise. Make these recipes your own by finding out what works for you. Our traditional potato salad uses peeled potatoes, but unpeeled work too, and the skins add some color to your dish.

Number Of Ingredients 6

5 pounds red potatoes, peeled and cut in 1/2-inch cubes
2 teaspoons salt, plus more to taste
4 hard-boiled eggs, peeled, and diced
3/4 cup mayonnaise
1/2 cup sweet pickle relish
Black pepper

Steps:

  • Place the potatoes in a medium saucepan or pressure cooker (see Note). Add 2 teaspoons salt and enough water to cover the potatoes. Boil the potatoes for 30 minutes, or until they are tender when pierced with the point of a knife but hold their shape. Drain the potatoes, transfer them to a large mixing bowl, and allow them to cool completely. Add the chopped eggs, mayonnaise, and sweet relish, and fold gently to combine. Add salt and pepper to taste. Refrigerate until ready to serve.
  • Don't overcook the potatoes. They should hold their shape during mixing.
  • The potatoes may be cooked in a pressure cooker. Sprinkle salt over the potatoes. Follow the manufacturer's instructions and pressure-cook for 5 minutes. Release the pressure immediately and drain and cool the potatoes.
