CHOCOLATE CHIP-APRICOT COOKIES

Dried apricots add an alluring surprise to the traditional chocolate chip cookie.

Number Of Ingredients 10

1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
1 1/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking soda
1/2 teaspoon fine salt
3/4 cup semisweet chocolate chips
1/4 cup roughly chopped dried apricots

Steps:

  • Beat the butter, brown sugar and granulated sugar with an electric mixer on medium speed in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the chocolate chips and dried apricots.
  • Line 2 baking sheets with parchment paper. Scoop slightly mounded tablespoons of the dough and roll into balls. Arrange the balls about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes.
  • Position oven racks in the top and bottom thirds of the oven and preheat the oven to 350 degrees F.
  • Bake the cookies until they are set and golden on the bottom, 12 to 15 minutes. Let cool on the baking sheets for 10 minutes, then transfer to racks to cool completely.

1 ⅛ cups all-purpose flour
½ teaspoon baking soda
½ cup butter, softened
½ cup turbinado sugar
½ cup packed brown sugar
1 egg, lightly beaten
1 ½ teaspoons vanilla extract
¼ teaspoon salt
1 cup chocolate chips
1 cup chopped dried apricots

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
  • Mix the flour and baking soda in a bowl. In a separate bowl, beat together the butter, turbinado sugar, and brown sugar until fluffy, then beat in the egg, vanilla, and salt. Stir the flour and baking soda into the butter mixture. Fold in the chocolate chips and apricots. Drop by rounded teaspoonfuls onto the cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

3/4 cup flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup unsalted butter melted but cooled
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg room temp
2 tsp vanilla extract
1 1/2 cups old fashioned oats
1 cup rough chopped dried apricots (plus more for garnish)
1/2 cup salted/roasted pistachios (plus more for garnish)
2 cups white chocolate melted for dipping.

Steps:

  • Preheat oven to 350 degrees F
  • Line two baking sheets with parchment, set aside.
  • Place the flour, baking soda and spices in a bowl, stir to combine, set aside.
  • Place melted butter in bowl of mixer.
  • Add in the sugars and mix until well combined.
  • With mixer on medium speed add in the egg and vanilla. Miix well to combine.
  • Slowly add in the flour mixture a spoonful at a time.
  • Next add in the oatmeal, mix well to combine.
  • By hand fold in the apricots and pistachios.
  • Refrigerate dough 1/2 hour.
  • When ready, scoop dough onto cookie sheet in rounded 1 1/2 Tbsp size scoops.
  • Bake 10-11 min, edges will be a darker golden brown and tops will still be light and soft.
  • Let cool completely.
  • When ready to dip prepare melted chocolate, dip one side of each cookie in white chocolate.
  • Lay on a parchment line cookie sheet and sprinkle with chopped pistachios and apricots.
  • Repeat until all cookies are done.
  • Let set completely.

A fellow church members brought these delightfully different cookies last Sunday for coffee hour after service. She advised it came from the Feb 1997 issue of Gourmet magazine. 1/2 cup unsalted butter, softened well
3/4 cup sugar
1 large egg
3/4 cup all-purpose flour, plus
2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/4 cup chopped dried apricot
2 tablespoons finely chopped fresh sage leaves
1/2 cup cornmeal
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees and lightly grease 2 baking sheets.
  • In a bowl whisk together butter, sugar and egg until smooth.
  • Sift in flour and baking soda.
  • Add apricots, sage, cornmeal, and salt, stirring until combined.
  • Drop tablespoons of dough about 1 inch apart onto baking sheets and bake in batches in middle of oven 10 minutes, or until pale golden.
  • Cool cookies on sheets 2 minutes and transfer to a rack to cool.
  • Makes about 18 cookies.

I recently attended a "Garden Dessert" class at our local library and the instructor demonstrated how to use various herbs in desserts. This was one of the desserts she made and these cookies were delish!

1 stick butter (do not substitute)
3/4 c sugar
1 large egg
3/4 c + 2 tablespoons ap flour
1/2 tsp baking soda
1/4 c chopped dried apricots
2 Tbsp finely chopped fresh sage leaves
1/2 c cornmeal
1/2 tsp salt

Steps:

  • 1. Preheat oven to 350 degrees and lightly grease two baking sheets. In a bowl, whisk together butter, sugar, and egg until smooth. Sift in flour and baking soda and add apricots, sage, cornmeal, and salt; stirring until combined.
  • 2. Drop tablespoons of dough about 1 inch apart onto baking sheets and bake in batches in middle of oven 10 minutes or until pale golden. Cool cookies on sheets two minutes and transfer to rack. ENJOY!
  • 3. These cookies have a good presence of butter flavor in them and are delightful! You could possibly use even more dried apricots.

1 cup (2 sticks) unsalted butter, room temperature
3/4 cup sifted confectioners' sugar
1 teaspoon pure vanilla extract
2 cups sifted all-purpose flour, plus more for parchment
1/2 teaspoon salt
1/2 cup finely chopped dried apricots

Steps:

  • Preheat oven to 325 degrees, with rack in center. Line a baking sheet with parchment paper. Place butter, confectioners' sugar, vanilla, flour, and salt in large mixing bowl. Stir well with a wooden spoon until mixture is combined but not too creamy. Stir in dried apricots. Turn out dough onto a piece of plastic wrap, and pat to flatten into a disk. Place in refrigerator 1 hour.
  • Transfer dough to a lightly floured sheet of parchment paper, and roll out to 1/4 inch thick. If dough starts to get too soft, place in the freezer or refrigerator a few minutes. Cut out shapes, as desired, and place on prepared baking sheet about 1 inch apart. Bake until golden, 12 to 15 minutes, rotating baking sheet halfway through. Remove from oven, and transfer cookies to a wire rack to cool. Cookies will keep up to 5 days at room temperature in an airtight container.

1 ¼ cups all-purpose flour
6 tablespoons sugar
⅛ teaspoon salt
4 ounces cream cheese
½ cup cold butter
1 tablespoon sour cream
1 ¼ cups chopped dried apricots or cherries
½ cup sugar
5 tablespoons orange juice
1 cup confectioners' sugar
4 teaspoons water

Steps:

  • In a large mixing bowl, combine the flour, sugar and salt. Cut in cream cheese and butter until mixture resembles coarse crumbs. Add sour cream, tossing with a fork until dough forms a ball. Cover and refrigerate for at least 1 hour.
  • Meanwhile, combine filling ingredients in a saucepan; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover; simmer 7-9 minutes longer or until most of the liquid is absorbed, stirring occasionally. Set the filling aside to cool.
  • Divide dough in half. On a well-floured surface, roll out each portion into a 10-in. square; cut each into 2-in. squares. Place about 1/2 teaspoon of filling in the center of each square. Bring two opposite corners of square to the center; pinch firmly to seal. Place on greased baking sheets. Bake at 325 degrees F for 18-20 minutes or until edges are lightly browned. Remove to wire racks to cool. Combine the glaze ingredients; drizzle over cooled cookies.
