You don't have to live in Santa Fe to treat your family to this Southwest-style chicken and rice dish. You will, however, need some black beans and salsa!

1 can (15.5 oz.) black beans, rinsed
1 can (15 oz.) corn, drained
1/2 cup TACO BELL® Thick & Chunky Salsa
2 cups hot cooked long-grain white rice
1 cup KRAFT Shredded Cheddar Cheese
1 green onion, sliced

Steps:

  • Cook chicken, beans, corn and salsa in saucepan on medium heat 5 min. or until heated through, stirring occasionally.
  • Spoon over rice.
  • Top with cheese and onions.

One of my favorite frozen weight watchers dinners is Santa Fe Beans and Rice. This is my knock off version that comes pretty close.

2 cups cooked white rice
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen corn
1 (10 ounce) can of diced Mexican-style tomatoes (like Rotel)
1 cup salsa
1 cup low-fat sour cream
2 cups shredded reduced-fat Mexican cheese blend, divided
1 small red onion, chopped
1 (2 1/4 ounce) can sliced ripe olives, drained

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine beans, corn, tomatoes, salsa, sour cream, 1 cup cheese and cooked rice. Season with salt and pepper.
  • Transfer to a greased 2 quart baking dish and top with onions and olives.
  • Bake uncovered for 30 minutes. Sprinkle with remaining 1 cup cheese and bake 5-10 minutes longer until cheese is melted.

1 medium sweet red pepper, julienned
1 small onion, thinly sliced
2 teaspoons canola oil
2 cups cooked rice
1 can (16 ounces) kidney beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained
1 jar (8 ounces) picante sauce
6 cups shredded lettuce
3/4 cup shredded reduced-fat cheddar cheese
6 tablespoons reduced-fat sour cream
Tortilla chips

Steps:

  • In a nonstick skillet, saute peppers and onion in oil for 6-7 minutes or until tender. Stir in the rice, beans, corn and picante sauce until heated through. Place 1 cup of lettuce on each of six salad plates. Top with 1 cup rice mixture, 2 tablespoons cheese and 1 tablespoon sour cream. Serve with tortilla chips.

1/2 cup chopped onion
2/3 cup chicken broth
1/2 cup salsa
1/8 teaspoon garlic powder
1/2 cup uncooked long grain rice
2 boneless skinless chicken breast halves (5 ounces each)
1/3 cup shredded cheddar cheese
Chopped fresh cilantro, optional

Steps:

  • In a small skillet, heat butter over medium-high heat. Add onion; cook and stir until tender., Add broth, salsa and garlic powder; bring to a boil. Stir in rice; return to a boil. Place chicken over rice. Reduce heat; simmer, covered, 20-25 minutes or until rice is tender and a thermometer inserted in chicken reads 165°, turning chicken halfway., Remove from heat. Sprinkle with cheese; cover and let stand until cheese is melted. If desired, sprinkle with cilantro.

2 cups Mexican rice
1 (15 ounce) can black beans, drained & rinsed
1 (11 ounce) can Mexican-style corn, drained
1/2 cup chopped onion
2 cups of shredded mexican cheese
1 teaspoon oil
1 (5 ounce) can of chopped green chilies
1/2 cup chopped onion
1 -2 tablespoon chopped jalapeno
1 cup sour cream

Steps:

  • Preheat oven to 350. Grease an 8 x 8 baking pan.
  • In a bowl, combine cooked mexican rice, black beans (rinsed and drained), corn (drained)and onion.
  • Put into baking dish. Bake for about 15 to 20 minutes.
  • While dish is baking, make sauce.
  • In a sauce pan, saute onion and jalapenos in oil until onions are soft. Add green chiles and sour cream. Cook until smooth.
  • Remove baking dish from oven and pour sauce over casserole and top with cheese.
  • Bake about 5 to 10 minutes longer until cheese is melted.

1 cup Pace® Picante Sauce
1 teaspoon ground cumin
1 (15 ounce) can low-sodium black beans, rinsed and drained
1 cup frozen whole kernel corn
½ cup shredded reduced-fat Cheddar cheese

Steps:

  • Heat 1 tablespoon oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.
  • Reduce the heat to medium. Heat the remaining oil in the skillet. Add the rice and cook and stir until it's golden. Stir in the broth, picante sauce and cumin and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes.
  • Stir in the beans and corn. Return the chicken to the skillet. Top the chicken with the cheese. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.

⅔ cup uncooked white rice
1 ⅓ cups water
¾ cup black beans, drained and rinsed
1 large tomato, seeded and diced
¾ cup shredded Cheddar cheese
⅓ cup sliced green onions
⅓ cup vegetable oil
¼ cup vinegar
1 tablespoon diced jalapeno peppers
½ teaspoon white sugar
salt to taste
1 avocado - peeled, pitted and diced

Steps:

  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove from heat and chill.
  • In a large bowl, mix together the rice, beans, tomato, cheese and green onion.
  • In a small bowl, whisk together the oil, vinegar, peppers, sugar and salt. Pour over the rice mixture and toss to coat. Cover and refrigerate salad for 30 minutes. Top with avocado just before serving.

4 c cooked brown or white rice
2 can(s) petite diced tomatoes, unseasoned
1 can(s) black beans, canned
1 jalapeno peppers, diced and seeded (keep the seeds if you like it hot!)
1/2 large white onion, diced
1 clove garlic, diced
1 bell pepper, diced
1 tsp cumin
salt and pepper
fresh lime juice, optional
1/2 c mexican blend shredded cheese
1/2 c fat free or light sour cream
1 Tbsp olive oil
cilantro, fresh

Steps:

  • 1. Four cups cooked rice, keep warm, set aside.
  • 2. Add oil to fry pan set to medium. Sauté garlic and onion until translucent. Rinse black beans and set aside. Add bell peppers and jalapeños to pan and cook just until tender.
  • 3. Add tomatoes to pan along with salt & pepper and cumin. Add black beans and warm through.
  • 4. While fry pan mixture is warming through, spray a small microwave safe bowl with cooking spray and melt cheese on 50% power, for approximately 30 seconds, add sour cream and stir. Add a bit of water as needed to make the mixture more sauce-like.
  • 5. Place rice on plate and top with bean & tomato mixture. Top with sour cream cheddar sauce. Garnish with cilantro and add a squirt of fresh lime juice if desired.
