6 ounces Hatch chile peppers, halved and seeded
3 tablespoons corn oil
1 cup chopped onion
2 teaspoons minced garlic
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon salt

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil in the preheated oven until skin is heavily blistered and turning black, about 4 minutes per side.
  • Transfer chile peppers to a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 15 minutes. Peel and chop the chile peppers.
  • Heat oil in a saucepan over medium heat. Add onion; cook and stir until browned, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Stir in flour until mixture thickens. Stir in chopped chile peppers, beef broth, and salt. Bring to a boil; reduce heat and simmer until flavors combine, about 10 minutes.

4 medium chicken breasts (boneless, skinless) ((the thinner, the better!))
1 cup teriyaki sauce (or marinade)
¼ cup mayonnaise (regular or light)
¼ teaspoon cayenne pepper
¼ teaspoon paprika
¼ teaspoon curry powder
1 pinch salt
4 hamburger buns
4 lettuce leaves
4 ounce canned whole green chiles ((1 can should have 4 chiles))
4 slices American cheese

Steps:

  • MARINATE CHICKEN: Place boneless, skinless chicken breasts into resealable plastic bag or a container (with lid). Add teriyaki sauce; turn to fully cover chicken with sauce. Let chicken marinate in refrigerator for 30 minutes.
  • PREP #1-MAKE SAUCE: Measure mayonnaise, cayenne pepper, paprika, and curry powder into a small bowl. Stir well, then set bowl aside. PREP #2-PREPARE CHILES: Open can; drain green chiles. Carefully slice chiles open. Remove seeds. Pat chiles dry with a paper towel. Set aside.
  • COOK CHICKEN: After marinating 30 minutes, remove chicken breasts from bag (or container); let excess sauce drip off the chicken. Discard sauce. Cook chicken on an outdoor grill, or in a lightly oiled pan or on indoor grill pan on medium-high heat. Cook for approximately 6-7 minutes. Turn chicken over; continue grilling other side for an additional 6-7 minutes. The time it takes to cook depends on the thickness of chicken you use, of course. When done, chicken should be cooked all the way through (internal temp of 145-150°F), and be nicely browned on all sides. Remove from pan or grill. Keep chicken warm.
  • TOAST THE BUNS: Lightly toast the hamburger buns. Easiest way is to split and lay them open on a lightly buttered skillet. Let them "toast" for 1-2 minutes on low heat, until golden brown.
  • TO BUILD EACH SANDWICH: Spread sauce onto both sides of each toasted bun. Place lettuce leaf on bottom bun; top it with a green chile, followed by a chicken breast. Add a slice of American cheese to the top bun, and place it on the chicken. Repeat with other sandwiches, serve warm, and enjoy!

1 (8 ounce) can tomato sauce
taco seasoning mix
1 (1 1/4 ounce) packet dry ranch dressing mix
2 cups tap water
sour cream
10 diced green onions, put on chili after served in bowl

Steps:

  • Brown the beef, then mix all the ingredients together, adding water last, with a large spoon.
  • Put pot on stove, cover.
  • Bring to roiling boil.
  • Bring temp down to simmer.
  • Cook for 2 hours giving occasional stir.

2 pounds ground beef
1 medium onion, chopped
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (15 ounces each) pinto beans, rinsed and drained
3 cans (7 ounces each) white or shoepeg corn, drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chiles
1 can (11-1/2 ounces) V8 juice
2 envelopes ranch salad dressing mix
2 envelopes taco seasoning
Optional: Sour cream, shredded cheddar cheese and corn chips

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5- or 6-qt. slow cooker. Stir in the beans, corn, tomatoes, juice, salad dressing mix and taco seasoning. , Cover and cook on high for 4-6 hours or until heated through. Serve with sour cream, cheese and corn chips if desired., Freeze Option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

3 tablespoons vegetable oil
1 large onion, chopped small
2 teaspoons chopped garlic
1 pound Italian sausage, casing removed
1 pound ground beef
2 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoons salt
2 teaspoons black pepper
2 (16-ounce) cans kidney beans
2 (16-ounce) cans diced tomatoes

Steps:

  • Heat oil in a skillet and saute onions until translucent. Add garlic and saute until it begins to turn golden brown, being careful not to burn it. Add sausage and ground beef and cook until the meats are brown. Drain off any fat. Season with cumin, chili powder, salt, and pepper. Add beans and tomatoes and simmer 30 minutes.

1 lb. pork tenderloin
1 tbsp. olive oil
1 1/2 lb. chiles (anaheim and poblano are best)
1 medium yellow onion, chopped
1/4 tsp. cayenne
1/4 tsp. paprika
1 tsp ground celery seed
1/2 tsp kosher salt
8 cups chicken broth (try broth from cooking a corned beef in a slow cooker)

Steps:

  • Wash the peppers and cut off both ends. Cut in half lengthwise, remove seeds and ribs. Place peppers skin side up and flatten and cut crosswise into 2" pieces. Place skin side up underneath broiler in a rimmed baking sheet lined with aluminum foil and broil until skin is charred. Remove and immediately place in a bowl and cover tightly for 15 minutes. Remove from bowl, peel off skin, cut peppers into bite size pieces and set aside. Chop onion into bite size pieces. Meanwhile, cut pork into 3" long pieces and salt and pepper. Heat olive oil in a 6 qt. casserole or heavy saucepan until hot but not smoking. Add pork and brown on all sides, approx. 8 minutes total. Add broth, onions, peppers and spices and simmer covered until pork is fork tender, approx. one hour. Remove pork and shred and return to pot. Add salt and pepper if necessary. Serve hot in bowls as meal entree or as appetizer course.
