Time 30m

Number Of Ingredients 12

2 large chicken breasts (cut in half lengthwise)
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
Salt & pepper (to taste)
2 tablespoons olive oil
1/2 medium onion (chopped)
1 (10 fluid ounce) can Ro-tel diced tomatoes & green chilies (drained)
1 (14 fluid ounce) can black beans (drained & rinsed)
1 (12 fluid ounce) can corn (drained)
1/2 teaspoon smoked paprika
1 cup Tex-Mex cheese blend
Fresh cilantro (chopped (optional, to taste))

Steps:

  • Preheat the oven to 400F and move the rack to the middle position.
  • Cut the chicken breasts in half lengthwise so you have 4 thinner cutlets. Season both sides with the garlic powder, chili powder, and salt & pepper.
  • Add the oil to a skillet over medium-high heat. Once it's hot, add the chicken and cook for about 3-4 minutes/side until lightly golden. Take the chicken out of the pan.
  • Add the onion to the skillet and sauté for 5 minutes or until it's softened and lightly browned.
  • Stir in the Rotel tomatoes, beans, corn, and smoked paprika. Let it heat through for a couple of minutes, and be sure to scrape up the brown bits from the bottom of the pan.
  • Add the chicken back in and spoon some of the tomatoes/beans/corn onto the chicken. Sprinkle the cheese over top of everything (I concentrate it on the chicken).
  • Place the skillet in the oven for 5-7 minutes or until the chicken is cooked through (165F) and the cheese is nice and melty. You can broil the cheese for a few minutes at the end if you want it to be browned.
  • Top with fresh chopped cilantro and serve immediately.

Categories     Chicken

Time 2h19m

Number Of Ingredients 8

2 tablespoons chili powder
2 tablespoons cumin
1 tablespoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon packed light or dark brown sugar
2 tablespoons extra virgin olive oil
4-6 boneless skinless chicken breasts

Steps:

  • In a small bowl, combine all the spices and brown sugar. Stir in the olive oil and mix until a crumbly, moist paste forms.
  • Place the chicken in a single layer in a 9X13-inch or similar size baking pan. Rub the chicken generously with the spice mixture on all sides. Cover the baking dish with plastic wrap and refrigerate for at least 2 hours or up to 10 hours.
  • Grill the chicken over medium heat until cooked through, about 6-7 minutes per side, depending on the size and thickness of the chicken breasts. Let the chicken rest for 5 minutes. Cut into strips and serve. This chicken is delicious served as-is and is also wonderful served in soft tortillas with taco garnishes.

SANTA FE SEASONING BLEND

Santa Fe Seasoning Blend image

I have a recipe my dad makes (Chipotle Baste in JAP) that puts Santa Fe seasoning on one side of thick cut pork chops and the baste on the other. Since Santa Fe blend is only available for sale during BBQ season, this is the next best option.
