During high school, I spent a year in Brazil and fell in love with the culture and food. One of my favorite dishes was feijoada, a chili/stew served over white rice. I introduced this easy recipe to my family, and it has become one of our favorite comfort foods. -Andrea Romanczyk, Magna, Utah

1-1/2 cups dried black beans
1 pound smoked kielbasa or Polish sausage, sliced
1 pound boneless country-style pork ribs
1 package (12 ounces) fully cooked Spanish chorizo links, sliced
1 smoked ham hock
1 large onion, chopped
3 garlic cloves, minced
2 bay leaves
3/4 teaspoon salt
1/2 teaspoon pepper
5 cups water
Hot cooked rice

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse, discarding soaking liquid., In a 6-qt. slow cooker, combine beans with the next 9 ingredients. Add water; cook, covered, on low until meat and beans are tender, 7-9 hours., Remove pork ribs and ham hock. When cool enough to handle, remove meat from bones; discard bones and bay leaves. Shred meat with 2 forks; return to slow cooker. Serve with hot cooked rice. , Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

2 tablespoons vegetable oil
1 teaspoon minced garlic
1 large onion, chopped
1 (12 ounce) pork tenderloin, cut into 1/2 inch cubes
1 (19 ounce) can black beans, drained and rinsed
¼ cup water
1 ½ cups chicken stock
3 chorizo sausages, cut into 1/2 inch thick pieces
2 bay leaves
salt and pepper to taste

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium heat, stir in garlic and onion, and cook a few minutes until the onion softens and turns translucent. Remove the onion, and place into a saucepan. Pour the remaining 1 tablespoon vegetable oil into the skillet, and place over medium-high heat. Add cubed pork, and cook until well browned.
  • Meanwhile, pour 3/4 of the black beans along with 1/4 cup water into the bowl of a blender, and pulse until finely chopped, but not quite smooth. Pour whole beans and bean puree into saucepan along with pork cubes, chicken stock, chorizo, and bay leaves. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer 30 minutes. Season to taste with salt and pepper before serving.

2 tablespoons canola oil
1 beef eye round roast (2 to 3 pounds), cut into 1/2-inch cubes
2 medium onions, sliced
1 can (15 ounces) pinto beans, rinsed and drained
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 can (10 ounces) diced tomatoes with mild green chilies, undrained
2 cans (4 ounces each) chopped green chilies
1 cup water
1 medium green pepper, chopped
1 tablespoon sugar
1 to 2 teaspoons ground cumin
1 garlic clove, minced
Salt to taste
Shredded Monterey Jack cheese

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Brown beef on all sides. Stir in the remaining ingredients except cheese. , Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender. Sprinkle with cheese.

Pork Stew With Black Beans image

Number Of Ingredients 18

2 cups dried black beans
1 teaspoon salt, or more to taste
2 bay leaves
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
1 teaspoon whole cumin seed
6 jalapeño peppers, seeded and deveined
4 cloves garlic, peeled
2 onions, cut into rough chunks
2 tablespoons cayenne pepper
4 tablespoons sweet paprika, preferably Spanish or Hungarian
4 tablespoons cornmeal
4 tablespoons vegetable oil
3 pounds boneless pork shoulder, trimmed and cut into 1/2-inch cubes
4 tablespoons honey
2 teaspoons ground cumin
2 teaspoons cinnamon
Cooked rice for serving

Steps:

  • Wash and drain the beans several times. Place in a large pot with 8 cups water, 1 teaspoon salt and the bay leaves, oregano, pepper and cumin seed. Cover, but keep the lid slightly ajar, and boil until tender, about 2 hours, stirring occasionally and adding more water if needed to keep the beans covered. Drain beans and reserve cooking liquid.
  • Pulse the jalapeños and garlic in a food processor, add the onions and pulse again. Remove and set aside.
  • Add the cayenne, paprika and cornmeal to the food processor. While processing, pour in about 1 cup cooking liquid from the beans to make a smooth paste.
  • Heat the oil in a heavy 6-quart pot. Brown the pork cubes in 4 to 5 batches over medium-high heat, removing them as they brown. When the last batch is browned, add the other pork cubes and their juices and the honey, cumin and cinnamon. Stir to scrape up brown bits from the bottom of the pan.
  • Lower the heat and add the onion mixture. Cook, stirring, until heated through, then add the cornmeal paste and 4 cups bean cooking liquid (if there is not enough, add some water) and stir. Bring to a simmer, cover and simmer for 30 minutes, stirring frequently to keep the mixture from sticking. Add the beans and salt to taste, stir and simmer another 30 minutes. Serve over rice.

2 pounds ground beef
1 onion, chopped
2 (1 ounce) packets taco seasoning mix
2 (1 ounce) packets ranch dressing mix
2 (16 ounce) cans shoepeg corn
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (15 ounce) can red kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (14.5 ounce) can chicken broth
1 (14.5 ounce) can diced tomatoes

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir taco seasoning mix and ranch dressing mix into the ground beef; add shoepeg corn, diced tomatoes with green chile peppers, red kidney beans, black beans, pinto beans, chicken broth, and diced tomatoes. Bring the mixture to a simmer, stirring occasionally; cook until the tomatoes are softened, 30 to 60 minutes.

4 +lbs pork shoulder, trimmed of most fat, cut into 1 1/2" cubes
2 teaspoons salt
2 large onions, chopped
8 cloves garlic
3 jalapeños, seeded and deveined.
4 tablespoons cornmeal
1 1/2 teaspoons cinnamon
3 tsp ground cumin
2 tsp oregano
3/4 tsp cayenne
3 Tablespoons molasses
2-3 red peppers, diced
2 cups beef broth or chicken stock
2 15-oz cans black beens, lightly drained
more salt to taste
2 limes
cilantro for garnish

Steps:

  • 1. Sprinkle 2 teaspoons of salt over the pork and set aside while prepping other ingredients. 2. Heat 2 tablespoons of oil in a dutch oven on medium high heat and brown pork on all sides. Brown in batches. 3. Add onions to the pot and lower heat to medium. Cook until translucent. 4. As onions are cooking, place garlic and jalapeños into a food processor and pulse until minced. Then add oregano, cumin, cinnamon, cayenne, and cornmeal and pulse until all is ground. 5. Add pork back to pot and then spice mixture to pork and onions. Add the molasses, bell peppers, and broth/stock to the pot. Bring to a simmer and then lower heat to lowest setting. Cover and cook until pork very tender, about 1 1/2 hours. Stir occasionally and scrape bottom of pot. 6. When pork is tender, add the black beans and cook 20min or more on low. 7. Remove from heat, salt to taste, and add lime juice and serve garnished with cilantro.
