SANTA FE MAC AND CHEESE
I got this recipe from the Food section of the local newspaper. They credited it to Cacique. I posted it as written, but unless you're eating this as your main dish I think it's more like 6 servings.

Steps:
- Preheat oven to 400 degrees.
- In large bowl, mix pasta with butter. Add Crema Salvadorena, cheeses, garlic, chilies, onion, pepper and cilantro.
- Season to taste and pour into large casserole dish.
- Top with bread crumbs and bake 40 minutes or until golden and bubbly.
- Serve immediately.

- Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.

Stir in the pasta, contents of seasoning packet, salsa, water, chili powder, salt and cayenne., Bring to a boil. Reduce heat; cover and simmer until pasta is tender, about 15 minutes, adding more water if necessary. Stir in tomatoes; sprinkle with olives and cheese. Cover and simmer until heated through, 3-4 minutes. Serve with sour cream if desired.
