SANTA FE BLUE CORN MUFFINS

- Preheat the oven to 375ºF. In the bowl of an electric mixer, cream together the butter and sugar. Add the eggs and chopped green chile. Add the corn, cheeses, flour, cornmeal, baking powder, salt, and milk, and mix just until blended.
- Divide the muffin dough into 12 pieces and place in a well-greased, 12-muffin pan. Bake in the oven for 35 to 40 minutes or until a cake tester comes out dry. Turn the muffins out onto a rack to cool.

TOMASITA'S GREEN CHILE

Steps:
- Put the New Mexico green chile in a large saucepan over medium heat. Do not let boil.
- Make a roux. Put the oil in a saucepan, over medium heat, heat up slightly, add the flour and stir constantly. The flour should get toasted and brown, but do not burn it, about 5 minutes.
- Drizzle the roux into the green chile and mix to combine. This will make it thicker and change the color slightly, but it should not get white in color. The chile and liquid should just look darker and less bright that the green chile without any roux. Add enough roux and water to get the chile to the right consistency, which should be like gravy. You may not use all the roux.
- Add the garlic and salt. Leave the chile in the pot to simmer for 20 minutes, stirring regularly. Do NOT bring it to a boil, as that may burn the flour in the roux. Add more salt and garlic if needed and serve.
CROCK POT SANTA FE STEW
This stew is wonderful on a cold day. Throw everything in the crock pot and enjoy a wonderful dinner when you get home. Great with cornbread.

- Brown ground beef with onion, green pepper and spices in a skillet on top of the stove. Add all ingredients to crockpot and mix in ground beef mixture. Cook on low 2 to 3 hours.
- This makes a 3 quart crock pot almost full to the top, approximately 10 to 12 servings. It is great served with cornbread.
SANTA FE CORN
I have not tried this recipe. I got this recipe from Ossg Recipes. Serve this with poached fish, grilled chicken or sauteed lean pork.

SANTA FE CORNBREAD
This is a family favorite that my grandmother clipped from a newspaper years ago. I add more jalapeno than the recipe calls for because I like it spicy. Also, I use pickled jalapenos rather than fresh because they give more flavor. This is definitely a better the next day dish. Trust me!

- Heat oven to 400.
- Grease 13x9x2 inch pan.
- In large bowl,combine all ingredients, mix well. Spread in pan.

SANTE FE CHRISTMAS TURKEY STUFFING
Steps:
- In a large heavy skillet cook the kielbasa over moderate heat, stirring, until it is browned and transfer it with a slotted spoon to a large bowl. In the fat remaining in the skillet cook the onions and the celery, stirring, until they are softened and add them to the bowl. In the skillet sauté the pecans in the remaining fat and the butter over moderately high heat, stirring, until they are golden and add the mixture to the bowl with the stuffing, the corn bread, the sage, the parsley, and the chilies. Add enough of the broth to moisten the stuffing to the desired consistency and let the stuffing cool completely. Makes about 14 cups, or enough to stuff a 12-to 16-pound turkey with plenty to cook separately for those who like their stuffing less sinfully rich.
- To Roast Peppers
- Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or boil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut off the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)
SANTA FE TRAIL CORNBREAD RECIPE

- Santa Fe Trail Cornbread 1 C. cornmeal, flour and Monterey Jack cheese or cheddar cheese, ea. 1 tab. Minced onion 1 tsp. Baking soda salt to taste 8 oz. Carton sour cream ½ C. water 4 oz. Can green chilies 1 egg, beaten Combine dry ingredients. Add remaining ingredients. Bake 35 to 40 minutes in 400 degrees.
