GRINDER BUNS... LIKE MANCINO'S ABM
I came up with this recipe when I needed a recipe for sturdy sub buns. So I combined a couple of recipes, and these came out just like Mancino's grinder buns. Slightly crisp on the outside, slightly soft on the inside and sturdy enough to hold up to the hardiest of fillings.

Steps:
- Put first 6 ingredients into bread machine in order that your machine calls for. Mine is water, lard,sugar, salt, flour then yeast.
- Set machine to dough setting and let run through.
- Spray a baking sheet with olive oil cooking spray then sprinkle very lightly with cornmeal.
- Divide dough into 4 equal parts. Take each part and roll it into a rope about 12 inches long. Set the rope down, then flatten to about 3 -4 inches wide and roughly square off the ends with your fingers. Should look like a flat rectangle.
- Place shaped dough onto prepared pan.
- Spray plastic wrap with olive oil spray and cover dough spray side down and let rise until doubled in size.
- Preheat oven to 375 degrees F.
- Remove plastic wrap from dough. Mix together 3 Tbs cold water and the cornstarch. Brush cornstarch mixture over the rolls then put in oven. Discard remaining cornstarch mixture.
- Bake until golden brown, about 20 minutes.
- Let cool completely.
- To slice in half for hoagies, place the bun flat on the counter. Place your hand on top of the bun, holding it flat down, while you slice through it with a long serrated bread knife.
- Fill with your fave fillings and enjoy!
HEAVENLY LIGHT DINNER ROLLS (ABM)

Steps:
- Add all ingredients to bread machine according to your manufacturer's directions.
- Set for dough cycle.
- When cycle is complete, remove dough and shape as desired.
- Place on lightly greased baking sheet and cover with plastic wrap.
- Let rise until doubled (this step is important - don't rush it).
- Bake at 375° for 12 to 15 minutes or until golden brown.
- To keep them soft, brush with melted butter immediately after removing from oven.
SANDWICH ROLLS (ABM)
I do not like to buy rolls from the store. They smell funny to me. This is a nice way to make them at home, in your bread maker. No fuss, No paying for junk at the store. They will taste wonderful, fresh out of the oven, whether you use them for sandwiches or not! I only have a copy of this recipe. I am not sure of the name of the book, but it might be: The Bread Machine Cookbook I.

AMERICAN SANDWICH BREAD - ABM OR OVEN
Entered for safe-keeping, adapted from Cook's Illustrated to use half bread flour and half whole wheat flour. This makes one 9-inch loaf, so I have loaded the ingredients in the order my Zo ABM would prefer, as I am usually lazy about bread. Note: 2 1/4 teaspoons is the amount of yeast in one envelope. I have included directions for use with standard mixer or food processor, which will of course have longer prep times.

- **ABM METHOD**.
- Add ingredients in order recommended by your ABM manufacturer.
- Select Quick setting, and start.
- After 8 minutes of kneading, check the dough consistency. If too dry, and dough is not pulling in all of the flour, add a tablespoon of water, and check again. If too wet, and dough is visibly wet, add a tablespoon of all-purpose flour, and check again.
- Remove from ABM when done. Remove the bread from the pan, transfer to a wire rack, and cool to room temperature.
- Slice and serve.
- **OVEN METHOD**.
- Set one oven rack on lowest possible level. Set second rack in middle position. Preheat oven to 200 degrees F. Once the oven has reached 200 degrees, maintain the heat for 10 minutes, then turn off the oven.
- IF USING STANDING MIXER.
- Mix the flour and salt in the bowl of a standing mixer fitted with the dough hook.
- Mix the milk, water, butter, honey and yeast in a 2-cup liquid measuring cup.
- Turn the mixer to low and slowly add the liquid. When the dough comes together, increase the speed to medium and mix until the dough is smooth and satiny, stopping the mixer 2-3 times to scrape dough from the hook, if necessary, about 10 minutes. (After 5 minutes of kneading, if the dough is still sticking to the sides of the bowl, add up to 1/4 cup of flour, 1 tablespoon at a time, until the dough is no longer sticky.).
- Turn the dough onto a lightly floured work surface. Knead to form a smooth, round ball, about 15 seconds.
- Go to Step 20.
- IF USING FOOD PROCESSOR.
- Mix flour and salt in bowl of food processor fitted with the steel blade.
- Add liquid ingredients. Process until rough ball forms. Let dough rest 2 minutes.
- Process 35 seconds.
- Turn dough onto a lightly floured work surface. Knead dough by hand until dough is smooth and satiny, 4-5 minutes.
- Place the dough in a very lightly oiled large bowl, rubbing the dough around the bowl to coat lightly. Cover the bowl with plastic wrap and place in the warmed oven until the dough doubles in size, 40-50 minutes.
- Gently press the dough into an 8-inch square that measures 1-inch thick. Starting with the side farthest from you, roll the dough firmly into a cylinder, pressing with your fingers to make sure the dough sticks to itself.
- Turn the dough seam-side up and pinch it closed. Place the dough seam-side down in a greased 9x5-inch loaf pan and press it gently so it touches all 4 sides of the pan.
- Cover with plastic wrap. Set aside in a warm spot until the dough almost doubles in size, 20-30 minutes.
- Heat the oven to 350 degrees F. Boil 2 cups of water and pour into a baking pan, and place it on the bottom rack.
- If possible, place the loaf on a rack above the baking pan of water; otherwise, place the 2 pans side by side.
- Bake until an instant-read thermometer inserted at an angle from the short end just above the pan rim into the center of the loaf reads 195 degrees F, about 40-50 minutes.
- Remove the bread from the pan, transfer to a wire rack, and cool to room temperature.
- Slice and serve.
SANDWICH ROLLS
I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

Steps:
- Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
- Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
- Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
- Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
- Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
- Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
- With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
- Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

INCREDIBLE SOFT DINNER ROLLS (ABM)
Made these for our Thanksgiving dinner and they are awesome! Very light and tasty and the dough is so easy to handle.

- Divide dough into four parts, then cut each part into 5 pieces.
- Shape each piece into a ball and place 2" apart on cookie sheet.

- Heat oven to 375° and bake for 12 to 15 minutes or until golden brown.
- Remove from oven and brush tops with melted butter.
- Serve warm or cool on wire rack.
- Notes: Do not use delay cycle on your bread machine.
- For rolls with soft sides, place rolls close together on cookie sheet and let rise.
LIGHT AND SOFT DINNER ROLLS (ABM)
This makes fairly large rolls that can be served with dinner or as sandwiches. Easy recipe and leftover rolls can be frozen for later use.

- Add all ingredients EXCEPT melted butter to bread machine in order as directed by manufacturer.
- Set for dough cycle.
- Check dough after a few minutes and if needed add a little more milk or water to make a smooth dough.
- When dough cycle is complete, remove dough, punch down and let rest for ten minutes.
- Lightly grease 13 x 9 glass baking dish.
- Divide dough into 18 pieces and place in pan.
- Dough will be sticky, so don't try to roll smooth balls.
- The rolls will smooth out when they rise and are baked.
- Let rise in warm place for 30 to 40 minutes until doubled.
- Drizzle melted butter over top of rolls and bake at 400° for 10 to 15 minutes until golden brown.

ABM DINNER ROLLS
This recipe is so easy to make and they are so good! I usually make up a batch to keep in the freezer. It's nice to be able to pull out a few at a time and micro for a quick addition to any meal! Hope you like them, too!(Prep time does not include dough time in ABM)

- Add all but last 2 ingredients to machine in order reccommended by the manufacturer and select dough cycle.
- When complete, transfer dough to lightly floured surface and knead (if necessary) until easy to handle.
- Shape into rolls as desired (I keep dividing into halves until I have sixteen pieces and then I divide each into 3 pieces for cloverleaf rolls and put in a muffin tin).
- Cover and let rise until doubled; 20-30 minutes.
- Combine egg and sugar, brush on top.
- Bake at 375F for 12-14 minutes or until done.
- Enjoy!
