ULTIMATE GRILLED CHEESE SANDWICH
I always make this sandwich after the holidays when I can get get ham right off the bone. Any other time of the year, I get thick cuts from my local deli. This is my daughter's favorite sandwich and I usually reserve it for special occasions. Enjoy :)

Steps:
- Stir together the apple, pecans, salad dressing, and sour cream; set aside. Place a slice of Colby cheese onto 4 of the bread slices, the add the ham, followed by the remaining slice of cheese and bread. Spread the margarine on the outside of the sandwiches.
- Place the sandwiches into a large skillet and cook over medium-high heat until the bread is golden brown on both sides and the cheese has melted, about 3 minutes per side. Spread the apple mixture into the middle of each sandwich before serving.

- Spread 1 side of each bread slice with about 1 teaspoon butter.
- Spread 1 tablespoon pizza sauce onto 1 bread slice, buttered-side down. Top with 1 slice cheese, 1/4 pepperoni, 1 1/2 teaspoons chopped basil leaves, 1/2 cup salad greens, 1 slice cheese and 1 bread slice, buttered-side up.
- Heat 12-inch skillet or griddle over medium heat.
- Place 2 sandwiches into skillet; cook, turning once, 6-8 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
- Place remaining pizza sauce in bowl. Microwave 10-30 seconds or until heated through. Slice each sandwich in half. Serve sandwiches with warm pizza sauce for dipping.

- Preheat oven 425. Place garlic toast on cookie sheet. Bake for 7 minutes or until toast is slightly toasted around edges.
- Spread 1 tablespoon of sauce on each of the 4 slices of garlic toast.
- Top each piece of garlic toast with 6 slices of pepperoni.
- Then, top each piece of garlic toast with 1 slice of cheese.
- Add another layer of pepperoni and cheese to each piece of garlic toast.

- Start building your sandwiches by placing four slices of sourdough bread on the counter Cover each slice of bread with a total of 2 cheese slices on each slice of bread.
- Place the pepperoni on top of the american cheese on each of the bottom slices of the sourdough.
- spread about 1 ounce of pizza sauce on top of the pepperoni on each sandwich
- Place half the mozzarella on top of the pizza sauce on each sandwich.
- Top the two finished sandwiches halves, with the other piece of sourdough that you have cheese already on, with the cheese facing the pepperoni.
- Melt the butter in a small pan over low heat, then using a pastry brush, brush one side of each of the sandwiches liberally with the melted butter
- Heat your pan on the stove top until it is hot enough to toast the bread.
- Place the buttered side down on the pan.
- Turn heat down to medium, and cover the sandwich with a pot lid to keep the heat in and help the cheese to melt. After about 3-4 minutes check the bread on the pan to see how the color is. It should be toasted a dark golden brown.
- Brush butter on the side that is up, then turn it over to repeat the process of toasting the bread. (Use the pot lid again to help melt the cheese) After 3-4 minutes check that side, to see how the color is.
- If the cheese is not fully melted, turn the heat down to low and keep the lid covering the sandwich until the cheese has melted. Just be careful not to burn the bread.
- Place sandwich on plate, cut in half, serve and enjoy!

Homemade Mayonnaise To be sure, there are some good store-bought mayo's on the market (my all-time favorite is Duke's) If you live in the South, you have probably seen it on the shelves of your local grocer; however, as you travel North, it becomes as scarce as hen's teeth. - 4. What about the cheese? I used a mix of mozzarella, provolone, and mild colby, you could use any combination you choose; however, because it is supposed to be a "pizza" grilled cheese I think one of the choices should be mozzarella, or provolone.
- 5. Gather your ingredients (mise en place).
- 6. Brush 1 tablespoon of the mayonnaise on a slice of bread and lay it mayo-side down into a cold pan. Then brush the top portion of the bread with 1 tablespoon of the pizza sauce, followed by the cheese and pepperonis.
- 7. Add the second tablespoon of pizza sauce on a side of the other slice of bread and place it, sauce-side down on top of the other slice, and brush the remaining mayo on top.
- 8. Set pan to medium, and as it cooks, flip it a few times until the cheese is gooey and melty, and the bread toasty brown, a few minutes on each side.
- 9. PLATE/PRESENT
- 10. Cut up and serve with some warm pizza sauce for dipping. Enjoy.
