Sand Tarts image

Buttery cookies coated with powdered sugar.

1 cup unsalted butter
½ cup confectioners' sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup chopped walnuts
¼ cup confectioners' sugar, or as needed

Steps:

  • Beat butter in large bowl until light. Beat in 1/2 cup confectioner's sugar and vanilla. Add flour and mix until just blended. Stir in nuts. Shape dough into a ball, then flatten into a disc. Wrap in plastic wrap and refrigerate until cold.
  • Preheat oven to 325 degrees F (170 degrees C). Line cookie sheets with parchment paper.
  • Shape dough into 1 inch balls. Place on prepared sheets, spacing evenly. Bake about 20 minutes, or until firm and lightly colored.
  • Sift 1/4 cup confectioners' sugar into a bowl. Transfer cookies to confectioners' sugar while still warm and roll gently to coat. Immediately transfer cookies to plastic bag and seal (this makes the cookies sweat and form an icing). Let stand 5 minutes in the bag. Transfer to rack and cool.

2 cups all-purpose flour
1 cup salt
1 cup cold water

Steps:

  • Mix flour and salt together in a bowl. Slowly mix water, a few tablespoons at a time, into flour mixture until dough is smooth and easy to handle. Knead dough for 10 minutes and let rest for 20 minutes.
  • Preheat oven to 250 degrees F (120 degrees C).
  • Form dough into desired shapes and arrange on a baking sheet.
  • Bake in the preheated oven until dry and hard, about 2 hours. Allow to cool completely.

2 cups cornstarch
3 cups hot water

Steps:

  • Shake sand through a flour sifter and mix with cornstarch and hot water in an old pot.
  • Cook over low heat, stirring with a wooden spoon.
  • When the mixture forms a dough that pulls away from the sides of the pot, spoon it out onto wax paper and let cool.
  • Knead well and store in a tightly covered container.
  • Cover the work area with wax paper and have the children pat out the sand dough.
  • Use cookie cutters to make different shapes.
  • Allow to air dry in the sun until hardened.
