2 lbs sand dabs flounder, cleaned (flounder)
1 egg, beaten
1 -2 cup panko breadcrumbs or 1 -2 cup dried breadcrumbs
salt & pepper
butter (for frying)
lemon wedge

Steps:

  • Dip the sand dabs into the beaten egg;season with salt & pepper, roll in panko or bread crumbs.
  • Heat a large skillet, add butter and fry until golden brown and crisp.
  • Serve with lemon wedges or your favorite tarter sauce.

20 to 25 sand dab (flounder) fillets
4 cups cracker meal (seasoned with salt, pepper, and garlic powder)
Cooking oil, for frying
Salt and pepper
Chopped parsley leaves, for garnish
Lemon wedges

Steps:

  • Coat the fillets on both sides with seasoned cracker meal. Heat about 4 to 6 tablespoons of cooking oil in a large shallow pan. Add sand dabs and fry over medium heat for 1 to 2 minutes on each side. Remove the filets with a spatula and place on a warmed serving platter.
  • Use a little of the pan juices to pour over the fish. Keep them hot. Fry the remaining fillets, adding more oil if needed. Sprinkle with salt and pepper, to taste, and garnish with the parsley. Add lemon wedges and serve immediately.

1 cup butter
⅓ cup white sugar
2 teaspoons water
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
1 cup chopped pecans
3 tablespoons confectioners' sugar

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the water and vanilla. Stir in the flour and pecans until well blended. Cover dough and chill for at least four hours.
  • Preheat oven to 325 degrees F (165 degrees C). Shape dough into walnut sized balls or crescents. Place 2 inches apart onto unprepared cookie sheets.
  • Bake for 18 to 20 minutes in the preheated oven, until golden. Roll in confectioners' sugar while still warm.

2 to 6 teaspoons butter (1 to 2 teaspoons per sand dab filet)
salt to taste (fine sea salt)

Steps:

  • Gather the ingredients.
  • Preheat a broiler and set a cooking rack 3 to 4 inches below the broiler.
  • Rinse the sand dab filets and pat them dry. Place them, skin-side-down, on a baking sheet. Dot the filets with butter and sprinkle them with salt.
  • Place the baking sheet under the broiler and cook until the fish flakes easily and starts to brown on top, about 4 minutes.
  • Serve fish hot, with lemon wedges for spritzing.

1 1/2 pounds sand dabs (about 8 sand dabs)
1/2 cup Egyptian dukkah
2 tablespoons canola or grapeseed oil
Juice of 1 large lemon
2 tablespoons chopped fresh parsley

Steps:

  • Have all of your ingredients ready by the stove. Heat a heavy cast-iron or nonstick frying pan over medium-high heat. Season the fish fillets if desired. Place the dukkah on a baking sheet and lightly dredge the fish fillets in it. When the pan is very hot, add 1 tablespoon of the canola or grapeseed oil, and when it is rippling, just below smoking, add as many fish fillets as can comfortably fit into the pan without crowding it too much. Cook for 1 1/2 to 2 minutes, until browned, then turn over and cook another 1 1/2 to 2 minutes (depending on the size of the fish), or until the fish is nicely browned on both sides. Remove to a warm platter. Repeat with the next batch of fish, until all of it has been cooked. Douse with the lemon juice, sprinkle on the parsley and serve.

1-1/2 cups butter, softened
2/3 cup confectioners' sugar
3 tablespoons sugar
4 teaspoons almond extract
2-2/3 cups all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
Slivered almonds and cinnamon sugar

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in extract. Combine the flour and salt; gradually add to creamed mixture and mix well. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll., Preheat oven to 325°. Roll each portion of dough between waxed paper to 1/8-in. thickness. Cut with a 3-1/2-in. round cookie cutter dipped in flour. Using a floured spatula, place 1 in. apart on ungreased baking sheets. Brush with egg. Decorate with almonds to resemble sand dollars and sprinkle with cinnamon sugar. , Bake 12-16 minutes or until edges begin to brown. Cool for 2 minutes before removing to wire racks.

1 large egg, beaten
½ cup all-purpose flour
1 pinch salt and ground black pepper to taste
1 pound sand dab fillets
½ cup dry bread crumbs
¼ cup vegetable oil for frying
1 lemon, cut into wedges

Steps:

  • Beat milk and egg together in a bowl. Season flour with salt and pepper; dredge each fish fillet in flour mixture, then dip into the egg-milk mixture. Roll in bread crumbs until thoroughly coated.
  • Heat oil in a skillet over medium-high heat. Cook fillets in the hot oil until nicely golden brown, 3 to 4 minutes per side. Serve immediately, accompanied with lemon wedges.

1/2 cup confectioners' sugar, plus more for coating baked cookies

1 3/4 cups all-purpose flour, plus more for dusting hands
1 cup pecans, chopped into very small pieces

Steps:

  • Preheat the oven to 275 degrees F. Line cookies sheets with parchment paper. Using an electric mixer, cream the butter and sugar at low speed until it is smooth. Beat in the vanilla. At low speed gradually add the flour. Mix in the pecans with a spatula. With floured hands, take out about 1 tablespoon of dough and shape into a crescent. Continue to dust hands with flour as you make more cookies. Place onto prepared cookie sheets. Bake for 40 minutes. When cool enough to handle but still warm, roll in additional confectioners' sugar. Cool on wire racks.

  • Beat the milk and egg together in a bowl. Dredge each fish in the flour, then dip them into the egg-milk mixture then roll in the breadcrumbs until thoroughly coated. Heat the oil or butter in a skillet over medium-high heat. Cook over a lively but not smoking hot fire for three to four minutes on a side until nicely golden brown on both sides. Serve immediately, accompanied with lemon wedges. If properly trimmed (see Sand Dabs under seafood info) the fish can quickly be de-boned at the table. Insert two forks beneath the upper filet and lift the entire filet away, leaving the bottom filet and the bones in place. Then, remove the skeleton, which will remain in one piece, from the bottom filet. Repeat for each fish.
