THE MANSION'S TORTILLA SOUP
Steps:
- Heat oil in a large saucepan over medium heat. Saute tortillas with garlic and epazote over medium heat until tortillas are soft.
- Add onion and fresh tomato puree and bring to a boil. Add cumin, chili powder, bay leaves, canned tomato puree and chicken stock. Bring to a boil again, then reduce heat to simmer. Add salt and cayenne pepper to taste, and cook stirring frequently for 30 minutes. Skim fat from surface, if necessary.
- Strain and pour into warm soup bowls. Garnish with an equal portion of chicken breast, avocado, shredded cheese and crisp tortilla strips. Serve Immediately.
MARRIOTT'S WORLD FAMOUS TORTILLA SOUP
This recipe was obtained from the Marriott Hotel on the world famous San Antonio RiverWalk, San Antonio,TX one year while at a conference. It is good and easy to make. The best part is it will not cost $10.95 a bowl when you cook and serve it at home.

- Bring the chicken to a boil in the chicken stock. Once the chicken is cooked, remove it from the chicken stock and add the tomatoes, onion, picante sauce, salt, pepper, and cumin. Let broth simmer for 10-15 minutes. Dice up the cooked chicken and add to broth. Simmer for another 10-15 minutes. One your tortilla soup is done put in bowls and top with Corn tortilla strips, guacamole and cheese. Serve and enjoy!
- Note: You can make corn tortilla strips like the Marriott's by cutting corn tortillas in strips and deep frying in olive oil until crispy, but I usually just use the store bought tortilla chips and crunch them up into the bowl.
SAN ANTONIO TORTILLA SOUP
On a business trip to San Antonio, I discovered this light, refreshing tortilla soup. It was so delicious I had to google search for the recipe when I got home. I have modified it a bit for my family's tastes.

Steps:
- Sauté bacon until lightly browned. Drain off excess grease. Add tomatoes and onions; cook until onions are tender. Add cilantro, white pepper and cumin; mix well.
- Meanwhile, combine beef and chicken stocks and bring to a boil. Add bacon mixture to stock; reduce heat and simmer for 10 minutes.
- Line bottoms of serving bowls with tortilla strips. Add soup, then top each serving with a sprinkling of cheese (about 2 tablespoons) and some guacamole (about 1 tablespoon). Serve immediately.
