Or I make it without pecans and fill with fruit filling such as lemon filling. I use soda crackers, saltines, graham crackers or buttery round crackers, finely crushed

- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, beat egg whites until stiff. Fold in sugar, baking powder, crackers, vanilla and pecans. Spoon mixture into a greased 9 inch pie pan.
- Bake for 25 to 30 minutes in the preheated oven. Cool and serve or fill with the fresh fruit of your choice.

- Preheat oven to 350 degrees.
- Place crackers in the bowl of a food processor and pulse until finely chopped. Add butter and sugar; pulse until combined. Firmly press into the bottom and up the sides of a 9-inch fluted tart pan with removable bottom. Bake until crust is golden brown, 18 to 20 minutes. Let cool on a wire rack.
- Meanwhile, whisk together condensed milk and egg yolks until thoroughly combined. Add citrus juice and whisk to combine. Pour filling into tart shell and bake until filling is set, 16 to 18 minutes. Let cool on a wire rack. Refrigerate until well chilled. Serve garnished with whipped cream and a sprinkling of sea salt.
NORTH CAROLINA LEMON PIE

- Crust: Preheat the oven to 350°. Grease (or spray) a 9" glass pie plate.
- Combine the saltines and salt in a food processor and pulse to coarse crumbs, about 15 pulses. Add the melted butter and corn syrup and pulse about 15 more times, until the crumbs are broken down into oatmeal-sized pieces.
- Pour the saltine mixture into the prepared pie plate. Using the bottom of a dry measuring 1/2 cup, press the crumbs into an even layer on the bottom and sides of the plate, using your fingers to keep the crumbs in as you're pressing the crumbs. Place the pie plate on a baking sheet and bake until light golden brown, 17 minutes. Remove from oven.
- Filling: While the crust bakes, whisk the condensed milk, egg yolks, cream, lemon zest and salt into a medium bowl until fully combined. Whisk in the lemon juice (it will thicken a bit at this point) until fully combined.
- Keep the pie crust on the baking sheet and pour the filling into the crust (crust doesn't need to be cool).
- Bake the pie (still at 350°) until edges are beginning to set but the center still jiggles just a bit when shaken, 15 to 17 minutes. It will firm up a little after it's taken from the oven and cooling. Cool completely on a wire rack, then place in the refrigerator until fully chilled, about 3-4 hours.
- Topping: In a medium bowl (or stand mixer), whisk and whip the cream, sugar, and vanilla on medium-low speed until foamy, about 30 seconds. Increase speed to high and whip until stiff peaks form, 1-2 minutes. Spread a thin layer of whipped cream over the top of the pie. Garnish with thin lemon slices if desired.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch pie pan.
- Crush saltine crackers either with your hands in a bowl or with a food processor. Add sugar and salt; mix. Mix in butter, followed by honey. Press crust into the prepared pie pan using a measuring cup.
- Bake in the preheated oven until golden and set, about 16 minutes. Remove from the oven and while crust is still fairly hot, use the measuring cup to re-form as crust will fall down while baking. Let cool before adding a filling of your choice.

I use this crust for chilled layered desserts. pie crusts, or sprinkled on top for extra taste and crunch on ice cream desserts. A good substitute for graham cracker or cookie crusts.

- In medium bowl add crushed crackers, brown sugar. Mix with hands.
- Add melted margarine and vanilla. Mix well.
- Preheat oven 375*.
- Spray pam in the cooking pan or pie pan.
- Use non-stick pans if you have.
- Press in the bottom of 9 X 9 pan or 9 inch pie pan.
- Bake from 9 to 12 minutes. When the bottom of the crust starts to turn light brown, watch carefully, take out of oven when it is a medium brown. Cool.
- Note: If you want to reserve 1/4 cup cooked or cooked crust, it is nice sprinkled on top of any filling.
- I use my "I Can't Believe It is Butter" margarine spread.

Southerners can whip up something special from thin air, and this pretty little pie pie is here to prove it. The Soda Cracker Pie comes from a long line of desperation pies, also known as "make-do pies," that were designed to cope with dwindling supplies and limited ingredients. You know them, you love them: Chess Pie, Southern Buttermilk Pie, Old-Fashioned Shoofly Pie, and Soda Cracker Pie. They first gained popularity during the Depression and World War II, but they've graced our tables ever since. This Soda Cracker Pie is built on a base of whipped egg whites and baking powder. Since this mixture forms the foundation of the pie and will give it much of its height, it's important to whip your egg whites until they reach completely stiff peaks. - 1. Dump saltine crackers and salt into a food processor. You may have to break the crackers up to get all of them to fit into your food processor. Pulse about 15 - 20 times.
- 2. Add the melted butter and corn syrup to the cracker mixture. Pulse about another 15 - 20 times. The mixture should resembled uncooked oatmeal in apppearance.
- 3. Take cracker dough mixture and press into the bottom and up the sides of a large pie pan. Add pie filling ingredients to pie shell. Can be baked or served as it is.

LEMON PIE WITH SALTINE CRUST

- Crush the crackers finely, but not to dust. You can use a food processor or your hands. Add the sugar, then knead in the butter until the crumbs hold together like dough. Press into an 8 inch pie pan. Chill for 15 minutes, then bake for 18 minutes or until the crust colors a little. While the crust is cooling (it doesn't need to be cold), beat the egg yolks into the milk, then beat in the citrus juice. It is important to completely combine these ingredients. Pour into the shell and bake for 16 minutes until the filling has set. The pie needs to be completely cold to be sliced. Serve with fresh whipped cream and a sprinkling of sea salt.
