ENGLISH STICKY TOFFEE SAUCE
Luxuriously rich with a deep caramelized flavor, drizzle this English toffee sauce over your cakes, ice cream, fresh fruit, add it to your fruit crumbles and crisps, or a dollop to your waffles or anything else your heart desires!

- Place the heavy cream, brown sugar, salt and butter in a medium sauce pan over medium heat and let the brown sugar dissolve completely, stirring as little as possible to avoid the sugar granules from splashing up the sides of the pan (this will result in a grainy toffee sauce). Once it's dissolved increase the temperature to medium high. Avoid stirring too much during the initial stages until the sauce begins to turn color. Increase the frequency of stirring as the sauce gets browner to prevent burning. Continue until the sauce is thickened and a dark amber. Remove from heat and stir in the vanilla extract.If the sauce thickens too much or if leftovers are too thick, add a little extra butter and/or heavy cream and reheat.
- Makes about 1 3/4 cups. Store in the refrigerator for up to a month.
WAFFLES WITH SALTED CARAMEL SAUCE
These waffles with salted caramel sauce are made with sugar, cream, salt, and waffles. Superb as breakfast or dessert.

- In a small saucepan over medium-low heat, warm the cream until bubbles form around the sides of the pan. Do not allow the cream to boil. Remove from the heat and cover to keep warm.
- Place the sugar and cold water in a high-sided saucepan. Cook over medium heat, stirring, until the sugar dissolves. Stop stirring and let the syrup slowly boil, brushing any sugar down from the sides of the pan with a wet pastry brush. Cook, still without stirring, watching carefully, until the syrup turns light brown, 10 to 15 minutes. Once it starts to change color, it can burn easily. Remove the caramel from the heat.
- Working quickly and whisking the caramel constantly, add the warm cream. Be careful as the mixture will bubble up furiously. Return the pan of caramel to low heat and cook, whisking, until completely smooth, 2 to 3 minutes. Remove the pan from the heat and add the vanilla and salt to taste. (The salted caramel can be covered and refrigerated for up to 2 weeks. Reheat gently over low heat prior to serving.)
- In a medium bowl, whisk together the eggs, milk, butter, and vanilla.
- In a large bowl, mix together the flour, sugar, baking powder, and salt. Make a well in the center of the dry ingredients, then pour in the egg mixture. Whisk until mostly smooth, with just a few lumps. The batter will be quite thin.
- Preheat a waffle maker.
- Ladle the batter into the waffle maker, using 1/2 to 3/4 cup batter and spreading it so that it almost reaches the edges of the waffle maker. Cook until the waffles are crisp and browned, 3 to 4 minutes.
- Using a spatula, remove the waffles from the waffle maker and serve right away or place on a baking sheet in a single layer in a 200°F (95°C) oven to keep warm for up to 20 minutes.
- Top the warm waffles with whipped cream and gobs of that warm salted caramel sauce.

- Place sugar in a heavy-bottomed saucepan set over medium-high heat. Stir continuously until sugar begins to melt. Continue stirring until the sugar melts completely, begins to darken and all the chunks are dissolved, about 10 minutes. Stop stirring and continue to cook until the sugar begins to smoke and turns a dark shade of amber, 3 to 8 minutes. Remove from heat and wait 30 seconds.

HOMEMADE SALTED CARAMEL RECIPE

- Heat granulated sugar in a medium heavy-duty saucepan (avoid using non-stick) over medium heat, stirring constantly with a high heat resistant rubber spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn it.
- Once sugar is completely melted, immediately stir in the butter until melted and combined. Be careful in this step because the caramel will bubble rapidly when the butter is added. If you notice the butter separating or if the sugar clumps up, remove from heat and vigorously whisk to combine it again. (If you're nervous for splatter, wear kitchen gloves. Keep whisking until it comes back together, even if it takes 3-4 minutes. It will eventually- just keep whisking. Return to heat when it's combined again.)
- After the butter has melted and combined with the caramelized sugar, stir constantly as you very slowly pour in the heavy cream. Since the heavy cream is colder than the hot caramel, the mixture will rapidly bubble when added. After all the heavy cream has been added, stop stirring and allow to boil for 1 minute. It will rise in the pan as it boils.
- Remove from heat and stir in the salt. Allow to slightly cool down before using. Caramel thickens as it cools.
- Cover tightly and store for up to 1 month in the refrigerator. Caramel solidifies in the refrigerator. Reheat in the microwave or on the stove to desired consistency. See "What is the Texture of This Salted Caramel?" above.

EASY CARAMEL SAUCE MADE WITH MILK

- Gather the ingredients.
- Combine the sugar and water in a small saucepan. Put the saucepan over medium-high heat and cover the pan with a lid.
- Once the water has come to a rolling boil, remove the lid. Do not stir the caramel after this point. If your caramel is cooking unevenly, you can gently swirl the pot to even out the sauce.
- Cook the caramel until it is a golden-brown color. Once it is a dark amber, remove from the heat and slowly add the milk while whisking. Be careful: The milk can boil up quickly when it hits the hot caramel. The caramel can also separate because the temperature changed too quickly.
- Once the milk has been added, gently warm the mixture over medium heat. Whisk the mixture together and boil for 1 minute until the sauce thickens slightly. Add the salt and stir the mixture until it is well combined and liquid.
- Once the milk has combined with the sugar and becomes completely incorporated, turn off the heat. Add the butter and whisk to combine.
- Allow your caramel to cool before serving.

This Salted Caramel Cheesecake is the best you'll ever have! The caramel sauce is my favorite and you'll find that it isn't simply drizzled on top, but it's actually layered inside the cheesecake as well! It's smooth, creamy and delicious!

- To make the caramel sauce, pour the sugar into an even layer in a large saucier pan.
- 2. Heat on medium-high heat, whisking the sugar until melted. The sugar will clump up first, but will eventually completely melt. This should take about 10 minutes.
- 3. Once the sugar has melted, stop whisking and allow to cook until the sugar has turned to a little darker amber color. You may notice a nutty aroma. The change in color will happen quickly, so don't let it go too long or get too dark or it'll burn. Remove the caramel from the heat. 4.
- Add the butter and whisk until combined. The mixture will bubble up quite a bit, but keep whisking until all the butter has melted and combined. 5.
