SALTED DARK CHOCOLATE COCONUT ALMOND PROTEIN CANDY BARS
Protein packed almond coconut protein candy bars with a layer of dark chocolate. Delicious and satisfying -- better than a candy bar!

Steps:
- Heat almond butter, coconut oil, honey, vanilla and salt in a saucepan over low heat. Mix together until well combined and smooth, then remove from heat and transfer to a large bowl.
- Stir in protein powder and salt until smooth, then fold in chia seeds, and shredded coconut. Place in a 8x4 inch loaf pan lined with parchment paper.
- Add dark chocolate chunks and coconut oil in a small saucepan and place over low heat until melted. Spread over the tops of the bars, then sprinkle with sea salt, chopped almonds and shredded coconut.
- Place in fridge for 30 minutes-1 hour before removing from pan and cutting into 9 bars. Store bars in fridge tightly wrapped or in an airtight container for up to 2 weeks.

Steps:
- In a large bowl mix together coconut, sugar, salt, vanilla, and condensed milk. If the mixture is too dry add additional milk until it all just comes together.
- Roll the mixture into 1-inch (2.5 cm) balls and place on a wax paper lined baking sheet. Freeze for 15 minutes.
- Break apart chocolate bars and add to a microwave safe bowl. Microwave chocolate for 75 seconds, stopping every 30 seconds to check and stir.
- Remove the coconut balls from the freezer and individually roll in melted chocolate to coat. Place back on a wax paper lined tray and sprinkle with additional coconut and top with an almond (optional).

- Add almonds, coconut and salt (if using) to a large bowl. Stir until well mixed. Pour maple syrup over this mixture. Fold until well incorporated and fully coated.
- Pour this mixture into the prepared baking pan. Using a rubber spatula, smooth into an even, very tightly-packed layer. Bake for 30-40 minutes (mine took 35 mins). Bars must bake thoroughly, or they won’t hold together when cooled.

- In a large bowl combine oats, almonds, and coconut. Spread on a large baking sheet and bake for 10 minutes, stirring halfway through. Remove from oven and transfer to a large bowl.
- Add honey, coconut oil, almond butter, salt, cinnamon, and vanilla to a medium sauce pan and heat over medium-low heat until warm and coconut oil is melted.
- Add wet ingredients to dry ingredients and stir well to combine and coat the oat/almond/coconut mixture.

- Preheat oven to 350°F. Line an 8-inch square baking dish with parchment paper and spray with non-stick cooking spray. Set aside.
- In the bowl of an electric mixer, beat together the melted butter and brown sugar until smooth. Add the egg and vanilla and beat until well combined. On low speed, mix in the flour mixture until just combined. Stir in 1 cup coconut, 1/2 cup chopped almonds and 1/2 cup dark chocolate chips.
