HOMEMADE SALTED CARAMEL RECIPE
Made from only 4 simple ingredients, this homemade caramel is salty, sweet, and irresistibly buttery. No candy thermometer required and the possibilities for serving are endless. (Though just a spoon is acceptable!) Use caution as the cooking caramel may splatter. Stand back and wear kitchen gloves if desired. Review recipe notes prior to beginning.

- Heat granulated sugar in a medium heavy-duty saucepan (avoid using non-stick) over medium heat, stirring constantly with a high heat resistant rubber spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn it.
- Once sugar is completely melted, immediately stir in the butter until melted and combined. Be careful in this step because the caramel will bubble rapidly when the butter is added. If you notice the butter separating or if the sugar clumps up, remove from heat and vigorously whisk to combine it again. (If you're nervous for splatter, wear kitchen gloves. Keep whisking until it comes back together, even if it takes 3-4 minutes. It will eventually- just keep whisking. Return to heat when it's combined again.)
- After the butter has melted and combined with the caramelized sugar, stir constantly as you very slowly pour in the heavy cream. Since the heavy cream is colder than the hot caramel, the mixture will rapidly bubble when added. After all the heavy cream has been added, stop stirring and allow to boil for 1 minute. It will rise in the pan as it boils.
- Remove from heat and stir in the salt. Allow to slightly cool down before using. Caramel thickens as it cools.
- Cover tightly and store for up to 1 month in the refrigerator. Caramel solidifies in the refrigerator. Reheat in the microwave or on the stove to desired consistency. See "What is the Texture of This Salted Caramel?" above.

It may be blasphemy to say that hot fudge isn't the ultimate warm ice cream topping, but after tasting this amazing salted caramel sauce, that's exactly what I'm suggesting.

- Place sugar in a heavy-bottomed saucepan set over medium-high heat. Stir continuously until sugar begins to melt. Continue stirring until the sugar melts completely, begins to darken and all the chunks are dissolved, about 10 minutes. Stop stirring and continue to cook until the sugar begins to smoke and turns a dark shade of amber, 3 to 8 minutes. Remove from heat and wait 30 seconds.
- Whisk in butter until melted and combined. Slowly pour in 1/2 cup plus 1 tablespoon cream, taking care because it can bubble over. Sprinkle in salt and stir to combine. Transfer sauce to a jar and cool completely before refrigerating.

- Line a baking sheet with parchment paper and set aside.
- Using a double boiler, slowly melt chocolate over medium-low heat:
- You can also melt the chocolate in a microwave in 30-second increments, stirring each time until melted. Be careful not to burn the chocolate!
- Using completely dried strawberries, dip each strawberry, one by one, into the melted chocolate:
- Coat the strawberries, but do not completely immerse the berries in the chocolate. Lay each chocolate coated berry onto the prepared pan after dipping.
- In a medium saucepan combine caramel and heavy cream and melt over low heat, stirring constantly.
- Once melted, using a fork dip into the caramel sauce and drizzle in a zig zag pattern over the chocolate covered strawberries.
- Do not completely coat the strawberries in caramel, just a drizzle will do. You don't want to lose any teeth on these babies.
- Sprinkle salt over the caramel covered strawberries.
- Chill strawberries until ready to serve. Remove them from the refrigerator 30 minutes prior to serving for caramel to soften a little.

Found this one in a back issue of Southern Living then looked it up on Southern Living's website. It got the best of ratings and reviews. Hope it lives up to its standards. I would imagine this perfect for afternoon tea, brunch or shower.

- To prepare strawberries do not remove green caps before washing. Water will seep into the berry, softening the texture and weakening the flavor. Wash strawberries just before using then patting dry with paper towels. (Caramel mixture will not stick to wet strawberries.).
- Microwave caramels, 3 tablespoons whipping cream and 1/4 teaspoon salt in a 1-quart microwave-safe bowl at MEDIUM (50% power) for 3 1/2 minutes or until smooth, stirring at 1-minute intervals.
- Dip each strawberry halfway into caramel mixture. Roll in nuts and place on lightly greased wax paper. Let stand for 15 minutes. Serve immediately or cover and chill up to 8 hours.

- To make the crepes place the flour, sugar, cinnamon and salt in a large bowl and whisk to combine. Make a well in the centre. Add the eggs and begin to whisk them into the flour slowly, incorporating the milk as you go to make a smooth batter. The batter will be quite liquid. Set aside to rest for about 10 minutes.
- Meanwhile, take ½ cup of the salted caramel sauce (recipe can be found here) in a saucepan. Bring it to a simmer. Add honey and milk. Stir to combine. It should not be thick or too thin. Take off heat and set aside.
- Cook the crepes in a large, shallow non-stick frying pan. Apply oil very lightly with a pastry brush on the bottom of the frying pan. To cook the crepes, wait until the pan gets fairly hot, then ladle in enough batter to form a thin layer, swirling the pan around to spread the batter. Leave until the top of the crepe looks dry and then carefully flip it with a spatula. Leave for another 20 seconds and remove.
- Continue until all the batter is used up. Each crepe should use about 1/3 to 1/2 cup of batter. My frying pan took about ½ cup batter and made around 7 crepes. If the crepe cracks, don’t worry. Just move it to the bottom layer so it isn’t visible.
