Number Of Ingredients 18

2 cups all-purpose flour (255 grams, 5 oz)
1/2 cup unsweetened cocoa powder (50 grams, 1.3 oz)
1/4 teaspoon fine sea salt
1 1/4 teaspoon baking soda
1/2 cup unsalted butter (room temperature (113 grams, 4 oz))
1/2 cup brown sugar (100 grams, 3.5 oz)
1/2 cup granulated sugar (100 grams, 3.5 oz)
1 egg (room temperature)
1 teaspoon vanilla extract
1 cup + 2 tablespoons milk
1/3 cup salted caramel sauce store bought or homemade (recipe below)
1 1/2 - 2 cups powdered sugar
1/2 cup unsalted butter room temperature
1/4 teaspoon vanilla
1/2 cup sugar
3 tablespoons unsalted butter
1/4 cup heavy cream
1/2 teaspoon kosher salt

Steps:

  • Pre-heat the oven to 350F. Line a couple of baking sheets with parchment paper or silicon mat.
  • Sift dry ingredients (flour, salt, baking soda, cocoa powder) together. Set aside.
  • Cream butter for 1 minute with an electric mixer.
  • Add sugars a little at a time, and continue to cream for another minute, until light and fluffy.
  • Add the egg, mix to combine.
  • Add vanilla.
  • Slowly add half of the milk, while mixing.
  • Add half of sifted dry ingredients. Mix gently until combined.
  • Add the other half of the milk. Stir until combined.
  • Add the remaining dry ingredients. Fold until smooth. Batter should be thick.
  • Using a cookie scoop, drop spoonfuls of batter on top of the lined baking sheet. Space them about 3 inches away from each other.
  • Bake one cookie sheet at a time, for about 8-10 minutes. Rotate halfway.
  • Let pies cool down before filling them.
  • Sift powdered sugar. Set aside.
  • Place butter in the bowl of a mixer. Mix on medium high until creamy, for about 30 seconds.
  • With the mixer off, add 1 1/2 cups of the powdered sugar. Mix on low until incorporated.
  • Slowly add the caramel sauce, and start to raise speed to medium high. Cream for 1 minute until fluffy and smooth. Scrape the sides of the bowl. If necessary add more sugar, if the mixture is too runny.
  • Add vanilla. Place frosting in a piping bag.
  • Place sugar in a medium saucepan.
  • Bring to a boil over medium heat. Stir constantly to help the sugar melt evenly.
  • As soon as the sugar melts entirely, it will be amber color. At this point, remove it from the heat.
  • Add cream and salt. Be careful. The mixture is going to come to the top, so be careful not to get burnt. After a second, it will subside, and you can whisk mixture.
  • Whisk until combined.
  • Add butter. Again, mixture will bubble up, so be careful.
  • Whisk until combined.
  • Bring mixture to a quick boil, while constantly whisking.
  • Let it boil for a few seconds, remove from heat.
  • Wait a couple of minutes until caramel cools slightly.
  • Pour into a glass jar. Let it cool completely.
  • Pipe some of the salted caramel filling in one whoopie pie. Top with another pie. Drizzle some caramel frosting on top. Sprinkle sea salt if desired.
  • Pies should be stored in the fridge, for up to 4 days.

SALTED CARAMEL APPLE PIE

Salted Caramel Apple Pie image

This pie has everything you'd want out of an apple pie. The buttery, flaky crust, spiced apple filling, and sweet, salty caramel sauce are a perfect combination of flavors and textures in every bite. Serve a la mode with a side of vanilla bean ice cream.

Provided by John Somerall

Time 5h25m

Yield 12

Number Of Ingredients 19

2 ⅓ cups all-purpose flour
2 ¼ teaspoons kosher salt
1 ½ cups cold unsalted butter, cut into 1/2-inch cubes
½ cup ice cold water, divided
1 cup white sugar
6 tablespoons salted butter, cut into 1/2-inch pieces, at room temperature
½ cup heavy cream, at room temperature
1 ½ teaspoons sea salt
10 medium Granny Smith apples - peeled, cored, and sliced
½ cup white sugar
¼ cup all-purpose flour
2 tablespoons fresh lemon juice
1 tablespoon cornstarch
1 ½ teaspoons ground cinnamon
¼ teaspoon kosher salt
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 large egg, beaten
1 tablespoon turbinado sugar

Steps:

  • Prepare the pie crust: Whisk flour and salt together in a large bowl. Add butter and toss until butter pieces are completely separated and coated with flour mixture. Using your hands, work butter into flour mixture until well combined and butter pieces are no larger than a pea. Add 1/4 cup cold water and gently stir with a spatula until completely absorbed. Add remaining 1/4 cup water, 1 tablespoon at a time, gently stirring between each addition, until dough begins to form into a ball. Depending on how humid it is in your kitchen or how hydrated your flour is, you might not need to use all of the water.
  • Transfer dough to a clean work surface and gently knead, being careful not to overwork it, until smooth and slightly tacky. Divide dough evenly into 2 pieces. Form each piece into a flat disk and wrap individually in plastic wrap. Chill dough in a refrigerator for at least 1 hour or up to 3 days. If chilled longer than 1 hour, let sit at room temperature at least 15 minutes before rolling.
  • While the dough is chilling, prepare the caramel sauce. Heat sugar in a small saucepan over medium heat, stirring occasionally, until sugar is completely melted and amber in color, 10 to 15 minutes. Add butter to melted sugar and cook, stirring constantly, until butter is melted and completely combined, about 1 minute.
  • Carefully add heavy cream to sugar mixture, stirring constantly, until bubbly, 15 to 30 seconds. Remove saucepan from heat and stir in sea salt. Set caramel sauce aside to cool slightly at room temperature until ready to use.
  • Prepare the filling: stir apples, sugar, flour, lemon juice, cornstarch, cinnamon, salt, cloves, and nutmeg together in a large bowl until well combined. Set apple mixture aside at room temperature, uncovered, for 30 minutes.
  • Pour apple mixture through a strainer into a large bowl. Set apple mixture aside, and transfer the liquid to a small saucepan. Bring liquid to a boil over medium heat, stirring occasionally, until thickened. Remove saucepan from heat and set aside at room temperature.
  • Preheat the oven to 400 degrees F (200 degrees C). Position oven rack in bottom third of oven.
  • Working with one dough disk at a time on a surface lightly dusted with flour, roll each disk into a 1/8-inch thick circle that measures 12 inches in diameter. Place one dough circle in a 9-inch pie pan and gently press dough into the corners and sides of the pan.
  • Stir together apples and reduced apple liquid in large bowl; arrange apple mixture in the pie crust, and drizzle with 1/2 cup of the caramel sauce. Place remaining dough circle over apple mixture and press into apple mixture and into edges of pan. Using your fingers, fold edges under and crimp to seal. Brush top and edges of dough with egg and sprinkle with turbinado sugar. Cut eight 1-inch slits in dough with a sharp paring knife to allow steam to escape. Place pie on a rimmed sheet pan.
  • Bake in the preheated oven until top is light golden in color, about 20 minutes. Without removing the pie, reduce oven temperature to 375 degrees F (190 degrees C), and continue baking until dough is deep golden brown and the filling is starting to bubble, about 25 minutes. Gently cover pie with aluminum foil, and continue baking until a knife inserted removes mostly clean, about 25 minutes.
  • Remove pie from oven and transfer to a wire rack to cool completely, about 2 hours. Serve pie with remaining caramel sauce, if desired.

SALTED CARAMEL PIE

Salted Caramel Pie image

This super easy caramel lovers' (non-chocolate) dream pie is from Simplethings Sandwich & Pie Shop in Los Angeles. The filling is sweetened condensed milk sprinkled lightly with sea salt and baked until thick and gooey, then chilled in a simple graham cracker crust. Chill time not included. To Make Ahead: The recipe can be prepared through Step 2 up to 5 days ahead. Refrigerate the crust and filling separately.

Provided by gailanng

Categories     Pie

Time 3h

Yield 8-10 serving(s)

Number Of Ingredients 7

1 1/4 cups graham cracker crumbs (about 5 ounces)
4 tablespoons unsalted butter, melted
1/4 cup light brown sugar
2 (14 ounce) cans sweetened condensed milk
fleur de sel
2 cups heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees.
  • In a food processor, pulse the graham cracker crumbs with the melted butter and light brown sugar until the crumbs are moistened. Press the crumbs evenly into a 9-inch glass or metal pie plate. Bake for about 10 minutes, just until lightly browned. Let cool. Increase the oven temperature to 425 degrees.
  • Scrape the condensed milk into a 9-by-13-inch glass baking dish and sprinkle with a scant 1/2 teaspoon of fleur de sel. Cover the dish with foil and place it in a roasting pan. Add enough hot water to the pan to reach one-third of the way up the side of the baking dish. Bake, lifting the foil to stir 2 or 3 times, until the condensed milk is golden and thickened, about 2 hours; add more water to the roasting pan as necessary (watch water level carefully). The consistency of the caramel should be like dulce de leche. Don't worry if it is lumpy; it will smooth out as it chills. (You may have many lumps, but it will work out.)
  • Scrape the caramel filling into the pie crust, smoothing the top. Spray a sheet of plastic wrap with vegetable oil spray and cover the pie. Refrigerate until the filling is chilled and set, at least 4 hours.
  • In a bowl, using an electric mixer, beat the cream with the confectioners' sugar until very firm peaks form. Remove the plastic. Mound the whipped cream on top of the pie and sprinkle with fleur de sel. Cut into wedges and serve.

SALTED CARAMEL APPLE PIE

Salted Caramel Apple Pie image

To showcase the very best in cozy fall flavors, this decadent apple pie uses a mix of different varieties such as McIntosh, Cortland, and Granny Smith. A buttery homemade caramel and delicate lattice top crust puts it in the running to be a blue ribbon winner. The pie will need about four hours to chill, so it's best to make this pie the day before or the morning that you need it.

Time 2h30m

Number Of Ingredients 14

1 cup sugar such as Sugar In The Raw
4 tablespoons unsalted butter
1/4 cup heavy cream
1 1/4 teaspoons coarse salt
3 pounds (6 to 7) baking apples, peeled, cored, and cut into 1/2-inch slices
1/2 cup sugar
2 tablespoons lemon juice (from 1 lemon)
3/4 teaspoon coarse salt, plus more for top
Test Kitchen's Favorite Pâte Brisée
1/4 cup all-purpose flour, plus more for dusting
1 large egg, beaten
Fine sanding sugar, for sprinkling, optional
Vanilla ice cream, for serving
Flaky sea salt, for serving, optional

Steps:

  • Preheat oven to 375°F with a rack in center and a large sheet of foil on rack below. Bring 1 cup sugar and 1/4 cup water to a boil in a medium saucepan, stirring and brushing down sides with a wet pastry brush to prevent sugar crystals from forming, until sugar dissolves. Cook, swirling occasionally, until mixture is deep golden brown. Remove from heat. Stir in butter, then heavy cream (it will bubble up) and salt. You will have about 1 cup. Let cool while preparing pie.
  • In a large bowl, combine apples, sugar, lemon juice, flour and salt. Add 3/4 cup cooled caramel, and toss to combine.
  • On a lightly floured surface, roll out one disk of dough to a 13-inch round, about 1/8-inch thick. Fit into a 9-inch pie dish. Pour filling into shell. Roll remaining disk of dough to a 1/8-inch thickness on a lightly floured surface. Cut into at least 16 1/2-inch-wide strips using a fluted pastry cutter.
  • Lay 8 strips across pie. Fold back every other strip, and lay a horizontal strip across the center of the pie. Unfold folded strips, then fold back remaining strips. Lay another horizontal strip across pie. Repeat folding and unfolding strips to weave a lattice pattern. Repeat on remaining side. Brush with egg and sprinkle with sugar, and salt, if desired. Freeze 20 minutes.
  • Bake until crust is golden on bottom and juices are bubbling in center, 1 hour and 20 minutes to 1 hour and 30 minutes. If browning too quickly, tent top or edges with foil. Let cool completely on a wire rack, about 4 hours. Serve slices with vanilla ice cream drizzled with remaining caramel (reheated in pan over low heat or in microwave) and sprinkled with flaky salt.

SALTED CARAMEL PECAN PIE

Salted Caramel Pecan Pie image

There is no better duo than caramel and salt. Add those flavors to this year's pecan pie and you've got a dessert that's sure to be a hit!

Categories     dessert     pie

Time 1h45m

Yield 10-12 servings

Number Of Ingredients 8

1 1/2 c. sugar
3/4 c. cream
2 tsp. pure vanilla extract
1 tsp. kosher salt
1 (9-inch) unbaked pie shell, chilled
3 c. (about 12 oz.) Fisher Pecan Halves
3 large eggs
Flaky sea salt, for garnish

Steps:

  • Make the salted caramel: Combine the sugar and 1/2 cup water in a large saucepan. Set over high heat and stir gently until the sugar dissolves. Stop stirring when the mixture begins to boil. Brush away any sugar crystals that form on the sides of the pan with a wet pastry brush. Cook until the mixture is the color of maple syrup, about 20 minutes. Off heat, slowly whisk in the cream, vanilla, and kosher salt. The mixture will bubble vigorously; be careful: It is extremely hot. Pour into a large heatproof bowl and set aside until cool.
  • Preheat the oven to 375° with a rack in the center of the oven. Fill the pie shell with the pecans and set on a rimmed baking sheet. Whisk the eggs into the caramel mixture and pour over the pecans.
  • Bake until the filling has puffed and the crust is golden brown, about 1 hour and 15 minutes, tenting the edges of the pie with foil if they darken too quickly. Transfer to a wire rack to cool completely before serving. Sprinkle with flaky sea salt.

  • Prepare the sugar-free caramel sauce according to the instructions here. Add sea salt to taste at the end. (You need to triple the recipe - just enter 36 in the number of servings on the recipe card. It will take longer to thicken when tripling the recipe - you'll need to simmer the second step for at least 30 minutes. A large saucepan works best.)
  • Meanwhile, prepare the almond flour pie crust according to the instructions here. Let the crust cool on the counter while you finish making the caramel.
  • Pour the caramel filling into the pie crust and smooth the top with a spatula. (Reserve 1/4 cup (32 g) caramel filling for topping later.)
  • Cool on the counter for 15 minutes. Cover with plastic wrap, flush against the caramel surface. Refrigerate for at least 2 hours, or overnight, until firm. (You can refrigerate the reserved 1/4 cup (32 g) for topping in a separate container.)

Pour the caramel over the Oreo crust, then return to freezer for about 30-45 minutes until just chilled and set. (You don’t want the caramel to fully freeze.)
  • Place chocolate chips in a glass bowl. In a saucepan, bring 1 cup heavy whipping cream to a simmer over medium-high heat. Pour the cream over the chocolate chips and let sit for 5 minutes, then whisk until completely smooth. Pour the chocolate over the caramel and freeze for a final 30 minutes, until just chilled and set. OR refrigerate, covered, until ready to serve. Before serving, sprinkle the top with a flaky sea salt like kosher salt or Fleur De Sel.

  • Unwrap the caramels into a medium size, microwave safe bowl. Add the cream and salt to the caramels and microwave in 30 second increments, stirring each time.
  • When the caramel is melted together and smooth, pour it into the Oreo pie crust and let it cool completely at room temperature. (I let mine cool overnight).
  • Once the caramel has set you can make the ganache. In a microwave safe bowl add the 1/2 c. heavy cream and microwave on high for about 1 and 1/2 minutes, or until the cream just begins to boil on the edges of the bowl.
  • Remove and immediately add the chocolate chips. Stir until the chocolate chips completely melt and are all stirred in- leaving a creamy chocolate.
