Warning! Addictive! This is such a delicious version of traditional banana bread and is extremely popular whenever I make it that I had to share it on Allrecipes! I got it from an old Bed and Breakfast recipe from a place in Maryland and make it every year around the holidays! I don't use the walnuts, but I hear that it is really good for those that like them. This recipe has definitely become a new tradition!

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup butter
¾ cup white sugar
1 large egg
3 ripe bananas, mashed
¾ cup butterscotch chips
½ cup chopped walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 9x5-inch loaf pans. Set aside. Sift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. Set aside.
  • Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat in the egg, then stir in the mashed bananas. Pour in the flour mixture, mixing until just incorporated. Fold in the butterscotch chips and walnuts; mixing just enough to evenly combine. Pour the batter evenly into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 28 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

For the caramel:
1 cup sugar
2 tablespoons salted butter, cut into pieces and at room temperature
1/2 cup heavy cream, warmed
1 tablespoon bourbon
1 teaspoon fresh lemon juice
3/4 teaspoon kosher salt
For the bread pudding:
Salted butter, for the baking dish
1 1-pound loaf brioche, crusts removed, cut into 1/2-inch cubes (about 13 cups)
5 large eggs
3/4 cup sugar
1/2 teaspoon kosher salt
4 cups whole milk
1 cup heavy cream
1 tablespoon vanilla extract
3 bananas, halved lengthwise and sliced 1/2 inch thick
Sea salt, for sprinkling

Steps:

  • Make the caramel: Combine the sugar and 1/4 cup water in a medium saucepan over medium heat, stirring just until the sugar dissolves. Cook, gently swirling the pan but not stirring, until amber, about 10 minutes. Brush any sugar crystals off the side of the pan with a wet pastry brush. Remove from the heat and carefully whisk in the butter, heavy cream, bourbon, lemon juice and kosher salt (the mixture will bubble). Pour into a bowl and set aside.
  • Make the bread pudding: Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish. Spread the bread cubes on a rimmed baking sheet and bake until dry and golden, about 20 minutes. Let cool completely.
  • Whisk the eggs, sugar and kosher salt in a large bowl, then whisk in the milk, heavy cream and vanilla until smooth. Fold in the toasted bread and the banana slices. Transfer half of the mixture to the prepared baking dish and spread in an even layer. Drizzle with 1/2 cup of the caramel, then top with the remaining bread mixture. Cover with plastic wrap and refrigerate at least 1 hour or overnight. Cover and refrigerate the remaining caramel until ready to serve.
  • Preheat the oven to 350 degrees F. Sprinkle the bread pudding with sea salt and bake until golden brown and set, about 1 hour, 15 minutes. Warm the remaining caramel and drizzle on top.

BREAD PUDDING:
7 c chopped potato bread
2/3 c chopped macadamia nuts
1/2 c shredded coconut
1/2 c butterscotch chips
4 eggs
1 (12 oz.) can evaporated milk
1 (14 oz.) can sweetened condensed milk
2 Tbsp light brown sugar
1 tsp vanilla extract
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp salt
2 Tbsp butter, cut into small pieces
SALTED BUTTERSCOTCH SAUCE
1/2 c butter
1/2 c light brown sugar
1/4 c light corn syrup
1/2 c heavy cream
1/4 tsp kosher salt
CARAMELIZED BANANAS:
3 Tbsp butter, divided (as needed)
3 Tbsp light brown sugar, divided (as needed)
4 bananas (not too ripe), peeled, sliced
1 vanilla ice cream, if desired

Steps:

  • 1. To make bread pudding: Preheat oven to 350 F. Spray a 13x9 pan with nonstick cooking spray. Set aside. In a large bowl, toss together bread, nuts, coconut, and butter scotch chips. Spread on pan. In a medium bowl, whisk together eggs, evaporated milk, condensed milk, light brown sugar, vanilla extract, nutmeg, cinnamon, and salt. Pour over bread mixture in baking dish, making sure bread is completely soaked in egg mixture. Cover; let sit 30 minutes. Dot with small pieces of butter. Bake, uncovered, 45-55 minutes or until top is crisp and golden brown.
  • 2. To make butterscotch sauce: In a medium saucepan, over medium heat, melt butter. Stir in light brown sugar, and corn syrup. Bring to a simmer. Cook, stirring, until thick, syrupy and golden in color, about 10 minutes. Remove from heat; stir in cream and kosher salt. Cover to keep warm.
  • 3. To make caramelized bananas: In a large, nonstick skillet, over medium high heat, melt 2 tablespoons butter and 2 tablespoons light brown sugar. Once butter-sugar mixture becomes bubbly, add bananas. Cook, flipping once, about 2-3 minutes per side, or until caramelized on both sides. Remove to a plate. (May need to work in batches to avoid overcrowding bananas. If so, add 1 tablespoon butter and 1 tablespoon light brown sugar to skillet before adding second batch of bananas.)
  • 4. To serve, top bread pudding with bananas and spoon butterscotch sauce over top. Serve immediately. If desired (to make this an even more decadent dessert), serve with vanilla ice cream.

I've had this recipe for years...it's absolutely the best!!! No need for cream cheese or frosting...mmmmmm good! I keep butterscotch chips on hand just for this recipe. My boys love it when we have overripe bananas...they know what's coming!

2 ripe bananas
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2-1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup sugar
2 large eggs
1/4 cup butter, melted
1/4 cup milk
1 cup nuts, chopped (optional)
6 ounces butterscotch chips

Steps:

  • Mash the ripe bananas; set aside.
  • Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
  • Combine mashed bananas, sugar, eggs and melted butter. Blend well.
  • Alternately blend flour mixture and milk. Stir in nuts (if using) and butterscotch chips, but leaving a little behind to sprinkle on top.
  • Pour into greashed 9-1/2-inch loaf pan.
  • Sprinkle top with reserved nuts and chips.
  • Bake at 350° for 60 minutes (or shorter time for smaller loaves).
  • Cool.

1 1/2 cups All Purpose flour
1 1/4 tsp baking powder
1/2 tsp. baking soda
1/2 tsp ground cinnamon
1/8 tsp salt
2 slightly beaten egg whites
4 medium, overripe bananas
3/4 c. sugar
1 teaspoon vanilla
1/4 c. vegetable oil
3.4 ounces butterscotch pudding mix (dry)
1 c. semi sweet chocolate chips
2 cups butterscotch chips
3/4 cup creamy peanut butter

Steps:

  • Preheat oven to 350 degrees F.
  • Mash the bananas (I usually beat mine in my stand mixer using the paddle attachment) until mostly smooth.
  • Mix in the egg whites, sugar, vanilla, pudding mix, and oil, mix well.
  • Add the flour, baking powder, baking soda, cinnamon, and salt. Only mix until the batter forms. Fold in the chocolate chips using a rubber spatula.
  • Pour batter into a greased and parchment lined loaf pan. A standard loaf pan will need to bake for about 45 minutes. Baking time will vary depending on the size of the loaf pan. A toothpick should come out clean before the removing the bread from the oven.
  • Let cool for 10-20 minutes before removing from the pan.
  • Over low heat in a medium sauce pan, mix together the butterscotch chips and peanut butter until smooth and melted. Spread over the banana bread and let cool to set.

The sugar will seize and harden—don’t worry—it will melt back into the milk as it cooks. Add a generous pinch of salt and the vanilla bean and its seeds, and let the mixture simmer, scraping up any sugar bits at the bottom of the pan as you stir, for about 5 minutes.
  • In a small bowl, whisk together the cornstarch and the remaining ¼ cup milk. Pour this into the pot and bring the whole mixture up to a simmer. Cook gently for 2 minutes, stirring constantly, until the mixture has thickened and is the texture of a pureed soup or custard for ice cream.
  • Strain through a fine mesh sieve, then divide between 4 glasses, jars, or cocottes. Let cool to room temperature, then cover and place in the refrigerator for at least two hours to set.
  • To serve, sprinkle each pudding with a pinch of coarse sea salt and garnish with a dollop of freshly whipped cream.
