SALT CRUSTED WHOLE FISH



Salt Crusted Whole Fish image

Number Of Ingredients 12

3 egg whites
2 cups sea salt
2 cups all-purpose flour
3 tablespoons chopped Italian parsley, divided
1/2 cup water
1 (2 1/2-pound) fresh whole white fish, such as striped bass
2 tablespoons julienned sun-dried tomatoes
1 tablespoon chopped kalamata olives
2 tablespoons chopped artichoke hearts
2 slices lemon, sliced in half, plus more for garnish
1 tablespoon minced garlic
1/2 teaspoon freshly cracked black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper, trimmed to extend 3-inches in diameter around outside of the fish.
  • In a medium bowl, combine the egg whites, sea salt, flour, 2 tablespoons of the parsley and 1/2 cup of water. Mix with your hands until a thick paste forms.
  • Fill the cavity of the fish with the sun-dried tomatoes, olives, artichoke hearts and lemon slices. Rub the exterior of the fish with the garlic, then sprinkle with the remaining 1 tablespoon of parsley and freshly ground black pepper
  • Put the fish on the parchment lined baking sheet. Mound the salt paste evenly over the entire fish. Press the mixture firmly down to the baking sheet, being careful to seal any cracks.
  • Bake the fish until the crust is golden brown and very firm, about 18 to 20 minutes.
  • Slide the parchment and fish onto serving platter or cutting board and crack the crust with a handle of a large knife. Slide a spoon under the top fillet, over the spine, and lift it to a serving platter. Turn over and repeat. Garnish with lemon slices and serve immediately.

1/2 cup best quality extra virgin olive oil
Juice from 1 large lemon
1/4 cup boiling water
2 cloves garlic, minced
1 teaspoon dried oregano
2 tablespoons minced fresh parsley
16 extra large shrimp in the shell (about 1 1/4 pounds)
3 tablespoons olive oil
3/4 cup medium grind sea salt or kosher salt

Steps:

  • Make the Dipping Sauce: Whisk together the oil, lemon juice and hot water. Stir in the garlic, oregano, and parsley. Let stand for at least 20 to 30 minutes to marry the flavors. Set aside.
  • Using a small sharp knife, make a slit about 1/4-inch deep down the backs of the shrimp and devein them but do not remove the shells. Place the shrimp in a large bowl and toss with the olive oil to coat lightly all over. Sprinkle the salt evenly over the shrimp and toss well to make sure each shrimp is thoroughly coated in a crust of salt.
  • Place the shrimp in the center of the cooking grate, 3 to 4 minutes per side or until the meat is opaque all the way through when cut into. Arrange 4 shrimp on each serving plate and accompany with a small ramekin of the dipping sauce. The shrimp may also be served on a communal platter with a bowl of the sauce in the center. Provide plenty of napkins and a small bowl for discarding the peeled shrimp shells.

Vegetable oil or peanut oil, for frying
1/2 cup flour
3 tablespoons cracker meal
12 medium shrimp, shells left on Coarse sea salt or kosher salt
Freshly ground black pepper

Steps:

  • Fill a deep saucepan with 2 inches of oil and heat to 350 degrees. In a bowl, combine flour and cracker meal. Dredge the shrimp thoroughly in the mixture. Shake off excess and drop into the oil. Fry until shrimp is curled and crisp, about 2 minutes. Drain on paper towels and season on both sides of the shrimp. Serve with tartar sauce on the side.

1/2 pound medium-large shrimp (about 12), feelers removed, shell slit along vein and deveined
1/2 teaspoon baking soda
3 cups water
1 tablespoon plus 1/2 teaspoon salt
2 tablespoons cornstarch
1 quart peanut oil
1 tablespoon minced fresh Thai chilies

Steps:

  • Place the shrimp and baking soda in a bowl and mix well to coat. Allow to rest for at least 20 minutes.
  • Place the water and 1 tablespoon salt in a pot, cover, and bring to a boil over high heat. Add the shrimp and water-blanch for 10 seconds. Remove the shrimp with a strainer and run cold water through them to cool. The water-blanching removes all of the liquid from the shrimp.
  • Place the shrimp in a dish, sprinkle with cornstarch to coat them lightly, and shake off excess. Heat a wok over high heat for 1 minute, add the peanut oil, and heat to 350 degrees F. Place the shrimp in a Chinese strainer, lower into the oil, and oil-blanch for 1 minute. Turn off the heat, remove with the strainer, and drain. Transfer the oil from the wok to a bowl.
  • Return 1 tablespoon of the reserved oil to the wok and heat over high heat for 20 seconds. Add the remaining 1/2 teaspoon salt and the chilies and cook, stirring, for 45 seconds. Add the shrimp and cook, stirring, making certain they are well coated, for 1 minute. They should be dry and crusted. Turn off the heat, transfer to a heated platter, and serve.

Found this gem on the Canadian Food Network. Christine Cushing is the author. It has become our favorite shrimp recipe. Use your imagination to season the flour. Do keep it simple so your don't overpower the crisp, clean flavor of the shrimp. I like to use 1 teaspoon of lemon pepper. This can be used as an appetizer, or a main dish served with your favorite rice recipe. Our rating system for keeper recipes is simple. "Make again", "Can I have seconds", and the very rarely used "Orgasm". This recipe rates a definate "Orgasm".

1 cup seasoned flour
3 large eggs
3 tablespoons milk
40 large shrimp
1 cup panko breadcrumbs
2 tablespoons parsley, chopped
1 cup plum sauce
2 tablespoons prepared horseradish
4 cups vegetable oil

Steps:

  • Add seasoned flour to a shallow baking dish for dredging.
  • In a bowl, beat together eggs, milk, and parsley.
  • Add panko to a second shallow baking dish.
  • Dredge shrimp in flour, then egg mixture, and coat with panko.
  • Pour oil in a heavy skillet and heat to medium high.
  • Place 6 to 8 shrimp in the hot oil and cook until golden brown, about 1 to 2 minutes.
  • Transfer to a plate lined with paper towels.
  • Repeat with remaining shrimp.
  • While shrimp is cooking, mix plum sauce and horseradish.
  • Serve shrimp with sauce on the side.
  • Prep time does not include de-veining and cleaning shrimp.
