TUNA MELT
Steps:
- Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
- Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.
CANNED SALSA THAT TASTES LIKE FRESH SALSA
This recipe is for canned salsa that tastes just like fresh salsa. It is mild to medium in heat, but can be adjusted by adding more or less tomatoes and peppers to taste. Unlike most salsas, you do not need to simmer this salsa for hours before canning. So it tastes very fresh!

Steps:
- Prepare jars by sanitizing them in bleach water, or in a hot rinse cycle in the dishwasher.
- Wash vegetables.
- Chop Peppers and Onions with a food processor or blender. Dump in a very large mixing bowl.
- Add spices and vinegar to the mixing bowl.
- Add Lime Juice and chopped Cilantro (optional) to the mixing bowl.
- Core and chop Tomatoes with a food processor or blender. You can peel beforehand if you'd like, but I rarely peel my tomatoes for this salsa recipe.
- Strain the juice from the tomatoes before adding to the mixing bowl. I like to catch the tomato juice and can it to use in soups.
- Combine all ingredients. Taste with a torilla chip. Adjust the heat by adding more tomatoes (for milder taste) or more jalapenos (for a spicier taste).
- Fill jars with salsa. Wipe the rim clean, and top with a lid and ring.
- Process jars for 45 minutes. (adjust based on altitude)
SALSA TUNA MELTS
I felt like having tuna melts tonight, but didn't want just the same old stuff. (I usually just go for tuna, mayo and lots of black pepper.) This is what I came up with, and it was pretty darned tasty, if I do say so myself. Hope you like it too! (Note: Prep and Cooking times are approximate...I didn't time mine, so I had to guess.)

Steps:
- Toast your bread until it is light golden brown. (If it gets too dark during this step, the edges will burn when you put it in the oven/toaster oven later.).
- Drain excess liquid from the salsa if it is very juicy. Otherwise, the tuna mixture will be too runny, and the toast will become soggy.
- While the bread is toasting, mix the tuna, mayonnaise and salsa in a small bowl.
- Spread some of the tuna mixture on each piece of toast.
- Place slices on a foil-lined pan in the toaster oven and heat until tuna mixture is warmed through, about 3-5 minutes.
- Top each piece with a slice of cheese, and put back in oven until cheese is melted.
- Enjoy!

- Chop all the vegetables finely, and add to a bowl. Season with lime juice, cumin and sea salt. Jalapeños vary greatly in heat, so the amount you'll need will depend on both your peppers and how spicy you like your salsa. Keep in mind that the oils from jalapeños continue to come out into your salsa as it sits in the refrigerator, so if your peppers are spicy, make the salsa slightly less spicy than you'd like it to be.
- Add your salsa to a food processor, and "pulse" it until it's the desired texture. This step is optional, but will give you a more restaurant-style salsa. I prefer to chop my vegetables finely first because allowing the food processor to do it will result in a mushy salsa.
- Store covered in the refrigerator for up to 4 days. This salsa is best enjoyed the first couple of days after it's made.
